GRILLED CAULIFLOWER WEDGES RECIPE
These hearty cauliflower wedges can serve 4 as a side dish or 2 as a main, with the addition of sauces and toppings. They're especially good with salsa verde, mole, zhoug, hummus, or guacamole and a sprinkle of fresh herbs, sliced chilis, or nuts or seeds. - Prepare an outdoor grill for direct grilling over medium-high heat.
- Trim the stem end off the cauliflower, cutting off only any browned parts and leaving the leaves intact. Place the cauliflower upright on the cutting board and cut in quarters to form wedges. Place the wedges in a large microwave-safe bowl and season with salt. Add enough water to come ½ inch up the sides of the bowl. Cover with plastic wrap and poke a hole in the top. Microwave until it starts to turn translucent and a paring knife slides through with some resistance, 3 to 5 minutes. Uncover and drain the water from the bowl.
- Drizzle the oil over the cauliflower, rubbing it on to evenly coat. Sprinkle all over with salt and pepper. Place the wedges cut side down on the hot grill grate. Grill until grill marks appear and the wedges release easily from the grate, 6 to 7 minutes. Flip to the other cut side and grill until tender inside, 5 to 7 minutes. A paring knife should slide through easily. You can char the floret side too for a few minutes. Transfer to a serving platter and serve hot, warm or room temperature.
GRILLED CAULIFLOWER WEDGES WITH HERB TARATOR
Cauliflower's versatility extends all the way to the grill, where it takes on complex flavor and a range of textures. While the exterior becomes burnished and crisp, the interior turns sweet and nutty, offering deep meaty smokiness that can satisfy vegetarians and carnivores. And although a whole grilled cauliflower looks impressive, it is far easier to cut it into wedges to reduce the cook time and to provide more surface area to get charred and caramelized. Pair with an earthy Lebanese-style tarator for an easy weeknight dinner. Tarator is a Middle Eastern tahini sauce that is brightened with a heavy dose of lemon. Eaten throughout Eastern Europe and the Middle East, tarator can either be a cold cucumber soup, a yogurt-based dip, or a sauce. Sometimes walnuts or stale bread are added. I learned this version of tarator from my friend Elham Abi-Ghanem, who is of Lebanese heritage.

- Tarator
- Toast almonds in a dry small skillet over medium heat, tossing occasionally, until golden brown, about 5 minutes. Transfer to a small bowl and let cool. Set aside for serving.
- Blend garlic, dill, mint, tahini, and ⅓ cup water in a blender or food processor until a thick paste forms. Add lemon juice and blend again, adding an additional 1-2 Tbsp. water if sauce is too thick. It should be easily spreadable but not runny. Season with salt and lots of pepper.
- Cauliflower and assembly
- Remove outer leaves and trim stem from cauliflower so it sits flat. Cut cauliflower into 4 wedges.
- Whisk oil, coriander, cumin, turmeric, and a big pinch of salt in a large bowl to combine. Add cauliflower and coat in oil. The cauliflower can fall apart easily, so handle with care and use your fingers to work oil into the uneven surface.
- Prepare a grill for medium-high heat (if using a charcoal grill, bank most of the coals on one side of the grill). Place cauliflower, cut side down, on grate over hottest part of grill and grill, undisturbed, until char marks form, about 3 minutes (you can carefully lift to check, but try not to move too much). Turn over onto other cut side and grill, undisturbed, until grill marks form, about 3 minutes. Turn onto uneven floret side and slide over to cooler part of grill or reduce heat to low and cover with lid. Grill until tender (if a bamboo skewer easily slides through the thickest part, it's done), 10-15 minutes. (And if you don't have a grill, you can do this in a grill pan over high. Once pan is very hot, add cauliflower, reduce heat to medium-high, and cook both cut sides as above. When you turn cauliflower over onto uneven floret side, reduce heat to low and cover pan with foil to finish cooking.)
- To serve, spread some tarator onto individual plates or a platter. Arrange cauliflower wedges on top and dollop remaining tarator over. Scatter mixed tender herbs and almonds on top.

GRILLED TANDOORI CAULIFLOWER WRAPS
If Maneet Chauhan could grill only one thing for the rest of her life, it wouldn't be steak or chicken - it would be cauliflower. "Our diet is predominantly vegetarian at home because that's how my husband and I grew up," says the chef and Tournament of Champions star. "So cauliflower is a staple." Although a tandoor is the best way to get that great charred flavor on vegetables (the cylindrical clay ovens get super hot), you don't need one for this dish. Maneet mimics the flavor of tandoori dishes by using a yogurt-based marinade, then she matches the oven's signature char by cranking her grill to the highest temperature. Try the recipe, and don't skip the homemade naan. "It's a version of what we serve in my restaurants," Maneet says. "I make it at home all the time!"

- Marinate the cauliflower: Combine the yogurt and vegetable oil in a large bowl. Stir in the ginger-garlic paste, tandoori masala, fenugreek, turmeric and garam masala and season with salt and pepper. Add the cauliflower and stir to coat thoroughly. Cover and refrigerate 2 hours or overnight.
- Meanwhile, make the raita: Combine the yogurt, cucumber, chaat masala, sugar and 1/2 teaspoon salt in a small bowl. Refrigerate until ready to serve.
- Make the mango slaw: Preheat a grill to medium high and oil the grates. Grill the mango and bell pepper, turning occasionally, until softened and charred, 6 to 8 minutes for the mango and 8 to 12 minutes for the bell pepper. Remove from the grill and thinly slice into matchsticks.
- Combine the jalapeño paste, curry leaves, ginger, cilantro, lime juice, sugar and 1/4 teaspoon salt in a medium bowl. Add the mango and bell pepper and toss to combine.
- Increase the grill heat to high. Place the cauliflower florets on the hot grill, cover and cook 5 minutes. Uncover and cook, turning occasionally, until the cauliflower is tender and well marked, 5 to 8 more minutes. Remove the cauliflower from the grill and sprinkle with lemon juice and chaat masala.
- Serve the cauliflower on the naan. Top with the raita and mango slaw. Serve with lime wedges, if desired.
- Whisk the flour, baking powder, baking soda, salt and sugar in a large bowl. Stir in the yogurt and melted butter with your hands or a wooden spoon until combined. If the dough is too dry, add water, about 1 tablespoon at a time, until the dough comes together (you may need up to 1/2 cup water).
- Knead the dough in the bowl until it bounces back when you press it, about 2 minutes. Divide the dough into 4 balls and let rest, covered, 30 minutes.
- Preheat a grill to medium high. Roll out each ball of dough until 1/8 inch thick. Generously oil the grill grates. Grill the naan until dry around the edges and charred, 30 seconds to 1 minute per side.
