GREEN ENCHILADAS

Green Enchiladas are such a delicious dinner option. Made with simple ingredients, and full of flavor, your family will love this recipe.

Number Of Ingredients 10

2 tablespoon olive oil
1 small yellow onion (diced)
2 garlic cloves (minced)
20 ounces green enchilada sauce
8 ounces Monterey Jack cheese (shredded)
2 cups cooked chicken breast meat ((about 2/3 pound before cooking))
15 ounces diced tomatoes (drained)
2 teaspoons cumin
4 ounces diced green chiles (drained)
12 10 inch corn tortillas

Steps:

  • Preheat your oven to 400 degrees. Spray a 9 by 13 inch baking dish with cooking spray and set aside.
  • Heat the olive oil in a small skillet over medium heat. Add the onions and garlic and cook until the onion is translucent about 3 to 5 minutes. Remove from heat.
  • In a large bowl, combine 3/4 cup of the shredded cheese, the cooked shredded chicken, diced tomatoes, cumin, green chiles, and sautéed onion and garlic.
  • In the same pan you sautéed the onion in, heat the enchilada sauce. Bring to a simmer, and then reduce the heat.
  • Pour a 1/4 cup of the warm enchilada sauce in the bottom of the baking dish.
  • Dip the tortillas in the warm enchilada sauce. Fill with 1/3 cup of the chicken mixture. Roll the tortilla and place seam side down in the baking dish. Continue until all of the tortillas are rolled.
  • Pour the remaining sauce over the enchiladas. Top with the remaining cheese.
  • Bake uncovered for 20 minutes or until the sauce begins to boil at the edges.

1 pound skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese, softened
1 (8 ounce) jar mayonnaise
1 (8 ounce) package shredded Cheddar cheese
1 (4 ounce) can diced green chile peppers
1 jalapeno pepper, finely diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet.
  • Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.
  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.

2 tablespoons butter
3 large onions, sliced (about 6 cups)
2 cups shredded cheddar cheese, divided
1 cup sour cream
1/3 cup salsa
2 tablespoons reduced-sodium taco seasoning
12 flour tortillas (6 inches)
2 cans (10 ounces each) green enchilada sauce
Minced fresh cilantro, optional

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onions; cook and stir under tender and golden brown, 8-10 minutes. Cool slightly., Meanwhile, in a large bowl, combine 1 cup cheese, sour cream, salsa and taco seasoning. Stir in cooled onions., Place 2 tablespoons mixture off center on each tortilla. Roll up and place in a well-greased 13x9-in. baking dish, seam side down. Top with sauce; sprinkle with remaining cheese., Bake, uncovered, until heated through and cheese is melted, 20-25 minutes. Sprinkle with cilantro, if desired.

I found this in a Texas county cookbook years ago. It stated that it was the most popular recipe at a local pie kitchen. My family has always loved it, hope you do too!

SAUCE:
1 can(s) rotel tomatoes and green chilis
2 can(s) cream of chicken soup
1 c chicken broth
1 c velveeta cheese cubed
1 pkg green onion dip mix (dry)
FILLING:
1 1/2 lb lean ground beef
1 medium onion chopped
1 c cheddar cheese, shredded
MORE:
2 pkg corn tortillas (12 pk)

Steps:

  • 1. Combine all sauce ingredients in sauce pan over low heat until cheese melts; simmer over low heat an additional 20 mintues; set aside.
  • 2. In skillet, brown beef and onion; add cheese; stir until melted; set aside.
  • 3. Soften 2 packages of corn tortillas in hot oil; fill each tortilla with small amount of beef mixture and roll. Place in a 9x13 pyrex dish. Pour sauce over rolled enchiladas until covered. (you may have left over sauce}
  • 4. Bake at 450 degrees for 10-15 minutes until hot and bubbly.

  • Move the oven rack to the middle position and preheat the oven to 350 degrees F. Spray a 9x13x3-inch pan with nonstick cooking spray, and set aside.
  • In a skillet over medium-high heat add the olive oil. Once shimmering add the onion and sauté, while stirring constantly, until translucent and the sides of the onion begin to brown, about 5-6 minutes. Add the garlic and cook until fragrant, about 1 minute.
  • Pour the onion mixture into a large mixing bowl along with the shredded chicken, cream soups, green chile sauce, cumin, salt and pepper; stir to combine.
  • Lay 4 corn tortillas into the bottom of the prepared pan. Spread 1/3 of the chicken mixture over the tortillas, followed by 1 cup of the cheese, and 1/3 of the tomatoes and green onion. Continue this layering of tortillas, chicken mixture, cheese, tomatoes and green onion 2 more times, but on the last layer DO NOT ADD THE CHEESE! Instead, just layer the tomatoes and green onions on top of the chicken mixture.

  • Prep the green chiles. You need to roast your green chiles. I use New Mexican, Hatch-style chiles. This makes for a zippy sauce. You can make it milder by using milder chiles. If you've never roasted chiles before, here is a tutorial.
  • Make the chile sauce. Heat the lard over medium-high heat and cook the onions until soft, but not brown, about 5 minutes. Add the garlic and cook another minute. Add the flour and cook, stirring often, for 5 minutes. Add the remaining ingredients, stir well and simmer gently for 20 minutes. Puree in a blender.
  • Make the filling. Dice the meat and salt well. Mix with about 1/4 cup of the green chile sauce as well as about 2 ounces of cheese and the onion.
  • Prep the tortillas. Heat the tortillas on a comal or other heavy skillet until they blacken and puff up a little. Then put them in a tortilla warmer, or stack on a plate and put a bowl over them. Let them steam a few minutes before building the enchiladas. Or, you can dip them in hot oil for a few seconds, or dip them in the hot green chile sauce. Either way, shake off the excess oil or sauce.
