Ingredients

1 8 oz package soft cream cheese
1/2 cup mayonnaise
9 oz (or so) green olives with pimentos, chopped.(Look for the Olives from Spain logo to ensure high quality)

Steps:

With a fork mix the cream cheese and mayo together.
Stir in olives and any other ingredients.
Chill for at least 1 hour.

1 pound ground beef
1 medium sweet red pepper, chopped
1 small onion, chopped
1 can (16 ounces) refried beans
1 jar (16 ounces) mild salsa
2 cups shredded part-skim mozzarella cheese
2 cups shredded cheddar cheese
1 jar (5-3/4 ounces) sliced green olives with pimientos, drained
Tortilla chips

Steps:

In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink, 5-7 minutes, crumble meat; drain. Transfer to a greased 3-qt. slow cooker. Add the beans, salsa, cheeses and olives. Cover and cook on low 3-4 hours or until cheese is melted, stirring occasionally. Serve with chips.

I make this every New Years Eve to serve with crackers. It is simple, 3 ingredients and I always get compliments. Is one of those dips that people like to munch on with a cocktail. This is the consistency of a cheeseball more than a dip.

2 8 oz cream cheese at room temperature
1 jar(s) stuffed green olives (chopped) drained, reserve 1 tablespoon liquid
1/2 small onion, diced fine

Steps:

1. In a large bowl combine all ingredients including reserved liquid, with an electric mixer
2. Store in a covered dish in refrigerator until serving time
3. serve with crackers or melba toast rounds

1 pint (2 cups) mascarpone, at room temperature
3/4 cup grated Parmesan
3 to 4 tablespoons pitted hot pepper green olives, chopped fine*
Squeeze lemon juice
Red and green bell peppers, squared bottoms
Purple cabbage, ruffled leaves and hollowed out
Radicchio, ruffled leaves and hollowed out
Green cabbage, ruffled leaves and hollowed out
Mini carrots
Icicle radishes
Treviso leaves
Cucumber spears
Cherry tomatoes and green cocktail olives each on sticks
Focaccia strips
Bread sticks (bakery)
Bagel chips, for dip

Steps:

Squeeze as much water as possible out of the defrosted spinach. In a medium bowl, stir all the ingredients together until evenly combined.
*We found the olives in our store to be very hot. Taste as you add this ingredient.
