GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
GREEN MONSTER JELL-O MOLD
Steps:
- Boil 3 cups water for Jell-O. Stir in Jell-O and 2 1/2 cups of cold water and let cool. Mix Jell-O and cream cheese in the blender.
- Spray Jell-O mold with cooking spray. After Jell-O and cream cheese are blended well, spread out the can of fruit cocktail around the mold with syrup included. Pour in Jell-O and top with pecans or chopped almonds.
- Chill for 3 hours.

CHERRY-LEMON CREAM JELL-O MOLD
This jiggly, layered mold holds a base of clear crimson (sweet cherry) and a topping of ivory white (tangy lemon mixed with sour cream). If you have extra time, you could make it into four layers, producing red and ivory stripes. Garnished with shiny green leaves like bay or holly, it looks especially festive, and is also quite delicious. Swapping out some of the water in the Jell-O formula for ingredients like sour cream and cherry juice gives this dessert its bright taste.

- Pour lemon mix into a medium bowl and add 2 cups boiling water. Stir until dissolved, then let cool until warm but not steaming hot, about 10 minutes. Gradually whisk in sour cream until smooth.
- Spray a 10- or 12-cup mold or Bundt pan, preferably nonstick, very lightly with neutral cooking spray. Blot any extra oil with paper towels. Pour in lemon-sour cream mixture and refrigerate until set, about 1 hour.
- About 15 minutes before lemon-sour cream mixture has set, pour cherry mix into a large bowl and add 2 cups boiling water. Stir until dissolved, then stir in cherry or cranberry juice. Make sure mixture has cooled to lukewarm at most before proceeding.
- When lemon-sour cream mixture is set, gently ladle the cherry mixture over it. Don't pour it on top, as the mixture breaks easily. Refrigerate again until completely set, at least 3 hours or overnight. (If you want to create multiple thinner layers of Jell-O, as seen in the picture here, instead of just one layer of each flavor, see Note.)
- When ready to unmold, run the tip of a sharp knife around the edge of the pan to break the seal. Dip the bottom half of the mold in warm (not hot) water for 15 seconds. Place a serving plate over the top and flip to unmold. (If the mold doesn't come out immediately, don't shake it; try the warm water treatment again, 15 seconds at a time, until it comes out. If you leave the mold in the water for a longer time, it may start to melt.)
- Just before serving, garnish, then slice, using a sharp knife and wiping the blade between slices.

- Add boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Stir in cold water and vinegar. Reserve 2-3/4 cups gelatin at room temperature. Refrigerate remaining gelatin 1 hour or until thickened.
- Stir carrots into thickened gelatin; pour into 6-cup mold sprayed with cooking spray. Refrigerate 15 min. or until gelatin is set but not firm.
- Add 1 cup of the reserved gelatin to mayo in medium bowl; whisk until blended. Spoon over gelatin layer in mold. Refrigerate 30 min. or until gelatin is set but not firm. Stir zucchini and onions into remaining reserved gelatin; spoon over gelatin layers in mold.
- Refrigerate gelatin 3 hours or until firm. Unmold onto plate before serving.

- Trim a corner from one short end of each marshmallow. Attach the marshmallows, cut side down, on top of the cupcakes with a dot of frosting., Spoon 2 tablespoons of vanilla frosting into a small resealable bag; set aside., Tint the remaining vanilla frosting neon green with the food coloring. Spoon the neon green frosting into a resealable 2-qt. freezer bag. Snip a very small corner (1/8 in.) from bag. Pipe dots of frosting along the outer edge of the cupcake with a pipe-stop-and-pull action to create spikes of frosting. Continue piping all over the cupcakes to completely cover all but the flat side of the marshmallow. Repeat with the remaining cupcakes and frosting., Snip a very small corner (1/16 in.) from the bag with the vanilla frosting. Pipe a dot of vanilla frosting in the center of each marshmallow and attach the chocolate-coated mint. Pipe a small line to add as the sparkle in the eye.
