This green apple cabbage summer coleslaw recipe is just the new recipe you need to shake up your summer coleslaw routine! It's sweet and tart all at the same time and it's the perfect addition to a smoky and spicy BBQ sandwich!

Ingredients

2 large Granny Smith apples
¼ head green cabbage
½ head Napa cabbage
¼ cup fresh parsley
½ cup plain Greek Yogurt
3 teaspoons Apple Cider vinegar
3 Tablespoons brown sugar
4 Tablespoons pineapple juice
1 teaspoon salt

Steps:

Chop up cabbage, Napa cabbage, parsley, and apples into small pieces. I like to chop the apples into very thin matchstick slices.
Mix all dressing ingredients together in a separate bowl and whisk together.
Pour dressing over apple/cabbage mixture and stir and mix until desired coverage is reached. I tend to go very light on the dressing.
Store in an airtight container in the refrigerator. This is best made the day before (or at least 2 hours before) it is needed so everything can mesh together in flavor.

1 small head cabbage, cored and finely chopped
1 Granny Smith apple, cut into matchstick-size pieces
5 green onions, thinly sliced
½ cup apple cider vinegar
½ cup white sugar
3 tablespoons olive oil
3 tablespoons vegetable oil
1 tablespoon Dijon mustard
¼ teaspoon red pepper flakes

Steps:

Toss cabbage, apple, and onions together in a large bowl.
Whisk vinegar, sugar, olive oil, vegetable oil, Dijon mustard, and red pepper flakes together in a saucepan over medium heat; bring dressing to a simmer. Pour hot dressing over cabbage mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate until flavors blend and slaw is cold, at least 1 hour.

1 seeded and finely chopped fresh red chile
1 tablespoon cider vinegar
1 tablespoon minced fresh ginger
1 teaspoon toasted black mustard seeds
1 teaspoon coarse salt
1/2 teaspoon toasted cumin seeds
3 cups shredded cabbage
2 Granny Smith apples, cut into matchsticks

Steps:

Whisk together yogurt, chile, vinegar, ginger, mustard seeds, salt, and cumin seeds. Stir in cabbage and apples. Refrigerate for 30 minutes.
