GREEK SESAME HONEY CANDY (PASTELI)

Something of an ancient Greek version of a power bar, pasteli has been made with the same two ingredients for millennia: honey and sesame seeds.

1 1/3 cups honey
3 cups white sesame seeds (hulled)
Optional: 1 strip lemon peel (about 1/4 x 1 inch)

Steps:

  • Gather the ingredients.
  • Bring the honey and lemon peel (if using) to a boil in a saucepan. Add the sesame seeds, stirring continuously. Continue to cook while stirring to mix completely and thoroughly.
  • When the seeds are fully mixed in and the mixture has boiled again, remove the pan from the heat. Remove the lemon peel and discard it.
  • Place a piece of baking parchment on a cool work surface and spread out the hot mixture thinly and evenly (about 1/4-inch deep).
  • Cool the pasteli to room temperature before refrigerating it on the parchment paper (it doesn't need to be covered). Chill for at least 2 to 3 hours.
  • Using kitchen shears , cut the pasteli together with parchment paper into small pieces, and serve.
  • Peel off the parchment paper to eat. Store in the refrigerator in an airtight container. You can enjoy pasteli as a natural energy bar. Sesame seeds are high in protein, but also contain healthy oils and antioxidants. If you've become dependent on store-bought energy bars, these will have no additives, and you can ensure they are gluten free if that is a concern. One variation you might try is adding some crushed nuts to the mixture, such as pistachios. Or lightly toast some of the sesame seeds to add a roasted flavor.

While in Greece I saw this "candy" that I loved from childhood...little bites of sesame and honey that were soft because they did not have any sugar. Inspired, I set out to see if I could buy them in the US but found instead that they are incredibly easy to make! So here is a recipe adapted from one found on www.globalgourmet.com. Each bar is 30 grams, which is a typical food bar you would get in the health food store.

1 1/3 cups honey
3/4 cup water
3 1/2 cups hulled sesame seeds
1 1/2 teaspoons lemon zest, chopped finely

Steps:

  • In a heavy pan, bring the honey and water to "firm ball stage" (130 degrees C/250 degrees F).
  • Take off the heat and stir in the sesame seeds and lemon zest.
  • On a flat marble surface (or metal trays moistened with water, or a layer of parchment) spread the mixture evenly with a spatula or knife (or try a rolling pin) to 1 cm (1/4 inch) thickness.
  • Before it cools, cut into squares (try a pizza cutter).
  • When it is completely cool, wrap the squares in waxed paper and store in a covered container.

Pasteli is a traditional Greek candy made from plenty of honey and sesame seeds. Nuts, sultanas & other ingredients can also be added. Traditionally, these small wrapped pieces of pasteli are given at baptisms. If you have a candy thermometer you can use it - pasteli should be cooked until 250°F -- "firm ball stage". Cooling time not included in prep. time.

3 cups of hulled white sesame seeds
1/4 cup chopped blanched almonds or 1/4 cup chopped peanuts
1 strip lemon peel
rose water
1 cup sesame seeds
oil

Steps:

  • In a saucepan, bring honey and lemon peel to a boil. Add sesame seeds stirring continuously and continue to cook while stirring to mix completely and thoroughly. When the seeds are fully mixed in and the mixture has boiled again, remove from heat. Remove and discard lemon peel.
  • Place a large sheet of parchment on a flat work surface.
  • Carefully pour the honey mixture onto the paper to form a square or rectangle about 1/2" thick. Lightly sprinkle the paper with rose water & cover with half of the sesame seeds.
  • Dip a spatula into rose water or oil and press down the pasteli then. Cover the surface with the remaining sesame seeds and press them into the pasteli with the spatula.
  • (Instead of pouring straight onto the paper you can use a lightly oiled jelly / jam roll tin, then follow the rest of the instructions.).
  • Allow to cool slightly - do not leave too long or it will become impossible to cut!. Once firm, cut into squares or diamonds and allow to cool properly.
  • Wrap each piece individually in small pieces of waxed paper and store in an airtight container.

1 cup honey
2 ⅓ cups toasted sesame seeds
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground coriander
1 (2x1-ft) sheet of parchment or wax paper, folded in half

Steps:

  • Bring honey to a boil in a heavy saucepan or Dutch oven over medium heat, stirring with wooden spoon. Add sesame seeds, lemon juice, cinnamon, cardamom, and coriander, tossing to combine until light and golden.
  • Turn the dough onto a cookie sheet lined with half of the parchment or wax paper and fold the other half over the dough. Roll out dough between papers to a 1/4 inch thinness. Allow to cool.
  • Using a ruler and a pizza cutter or sharp knife, cut the dough through the papers into bars or squares of your favorite size. To serve, peel papers off and enjoy your sesame bar!

  • Toast the sesame seeds. You can spread them in a pan and put them in the oven at 325 degrees Fahrenheit or you can toast them in a pan. You want them to get a bit of color but not too brown.
  • Pour the honey in medium sauce pan and heat the honey until it starts to bubble. Let it boil for 4-5 minutes. If you have a food thermometer, you boil until honey reaches a temperature of 250 F (125 C).
  • Pour the toasted sesame seeds, lower the heat and stir. Making sure all ingredients are moxed well together. Heat the mixture for 2-3 minutes more (the more it cooks the crunchier it will be-but be careful of scorching). To check if it is ready, take a small amount and drop it in a glass with water, it should stay in a ball, if it spreads out it still needs to be heated.
  • Line a pan with slight greased (I spray or brush with olive oil) wax paper or parchment paper and pour the sesame mixture, place another sheet of wax paper on top (also greased) and spread out the sesame-honey mix with a rolling pin. I prefer to do this step directly on the table instead of using a pan, that way I can spread as thin as I like (mine are rolled out to ¼ inch thick).
