SPINACH SALAD IN A PARMESAN FRICO CUP

1 1/2 cups grated Parmesan
1/4 cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon orange juice
1/2 teaspoon lemon zest
1/2 teaspoon orange zest
1 teaspoon honey
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 ounces baby spinach leaves (about 6 cups)
1 orange, cut into segments
1/3 cup sliced almonds, toasted
1/2 red onion, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • For the Parmesan Frico Cups:
  • Place a silpat mat on a baking sheet. Place 6 (1/4-cup) mounds of Parmesan cheese on the mat and gently tap down until each mound is flat and 4 1/2 to 5 inches in diameter. Bake for 8 to 10 minutes, until golden and bubbly. Working quickly, use a thin spatula to transfer the Parmesan Frico to a muffin tin. Gently place a small drinking glass on top of the Parmesan Frico to mold it into the shape 1 of the muffin cups. Let cool until firm, about 5 minutes. Continue with the remaining Parmesan cheese.
  • For the Citrus Vinaigrette:
  • Combine all the ingredients in a jar or a tight-sealing plastic container. Shake to blend.
  • For the Spinach Salad:
  • In a large bowl, combine all the ingredients. Drizzle with vinaigrette and toss to combine. Divide the salad among the Parmesan Frico Cups and serve immediately.

1 tablespoon all-purpose flour
4 oz soft mild goat cheese (1/3 cup) at room temperature
3 tablespoons heavy cream
1 1/2 teaspoons finely chopped fresh chives
1 1/2 teaspoons finely chopped fresh flat-leaf parsley
1/8 teaspoon salt
1/8 teaspoon black pepper
Garnish: tiny mesclun leaves such as baby romaine, arugula, and red mustard
Special Equipment
a flexible heatproof plastic spatula; a mini-muffin pan with 12 (1 3/4-inch) cups; a pastry bag fitted with 1/2-inch plain tip (optional)

Steps:

  • Stir together parmesan and flour with a fork. Heat an 8- to 10-inch nonstick skillet over moderately low heat until hot. Sprinkle 2 teaspoons parmesan mixture into a 2 1/2-inch free-form round in skillet and cook until cheese is set, about 10 seconds. Loosen edge of frico with plastic spatula, then turn over and cook 5 seconds more. Immediately transfer frico to a muffin cup, lightly pressing it in, and remove from cup once crisp, about 30 seconds. Make more frico cups in same manner.
  • Stir together goat cheese, cream, chives, parsley, salt, and pepper and transfer to pastry bag (if using). Tuck a mesclun leaf inside each cup, then pipe (or spoon) in herbed goat cheese to fill two thirds of each cup.

These are cute little Parmesan cheese cups in your choice of Tiropita or Spanakopita (with spinach) fashion. You can make both varieties for more selection at the table to go wonderfully as an appetizer or with your best pasta or antipasta dish.

4 ounces feta cheese
4 ounces neufchatel cheese, softened or 4 ounces cream cheese
3 ounces frozen chopped spinach, drained and squeezed of all liquid (optional)
1 green onion, chopped
1 teaspoon fresh dill weed, chopped
1 cup low-sodium parmesan cheese, shredded
1 tablespoon all purpose Greek seasoning or 1 tablespoon italian seasoning
1 teaspoon butter

Steps:

  • FILLING: Mix filling ingredients in a medium bowl. Microwave on high, 30 second at a time, stirring between intervals, until cheese is melted and the filling is warm throughout. Set aside.
  • FRICO CUPS: Mix parmesan cheese and seasoning in a small bowl. In a large non-stick skillet on medium heat, melt the butter (or use non-stick cooking spray) to just coat the bottom of the pan.
  • Sprinkle 3 thin circles of cheese in a 3" circular pattern each into the pan. Cook until they have melted and formed a light golden crust, about 3 minutes. (NOTE: If you are new to making frico cups, you may want to use a small skillet, and make one at a time).
  • Carefully lift and turn the layer of cheese with a spatula and cook until lightly golden on the 2nd side, about 1/2 a minute.
  • Immediately remove the frico from the pan and shape it by laying it over an inverted mini muffin tin.
  • Allow to cool slightly before filling. Fill with the cheese filling and serve immediately.

16 tablespoons finely grated Parmesan or Grana Padano cheese

Steps:

  • Preheat oven to 375°F. Line a large rimmed baking sheet with silicone mat.
  • Working in 2 batches, scoop 8 mounds of finely grated Parmesan or Grana Padano cheese (1 tablespoon per mound) onto mat, spreading each mound about 3" wide and spacing at least 1" apart.
  • Bake cheese until light brown and melted, 5-6 minutes (check occasionally while baking so it won't turn too brown). Remove sheet from oven and let frico cool completely. (To shape frico, leave baking sheet in oven with door open; use a small offset spatula to remove frico one at a time, working quickly to shape. To form tuile-like shapes, gently roll warm frico around the handle of a wooden spoon. To form cups, press onto the bottom and up the sides of a mini muffin pan. Keep frico warm until ready to mold; it hardens quickly as it cools.)

1 (3-oz) piece Parmigiano-Reggiano
1 tablespoon all-purpose flour
1/4 teaspoon black pepper
Special Equipment
a nonstick bakeware liner such as a Silpat pad

Steps:

  • Preheat oven to 375°F.
  • Using largest holes on a 4-sided grater, coarsely shred enough cheese to measure 1 cup.
  • Line a large baking sheet with nonstick liner. Stir together cheese, flour, and pepper. Arrange tablespoons of cheese 4 inches apart on liner, stirring cheese in bowl between tablespoons to keep flour evenly distributed. Flatten each mound slightly with a metal spatula to form a 3-inch round.
  • Bake frico in middle of oven until golden, about 10 minutes. Cool 2 minutes on sheet on a rack, then carefully transfer each crisp (they are very delicate) with metal spatula to rack to cool completely.

1 (8 ounce) package cream cheese
1/2 lb feta cheese
2 cups large curd cottage cheese
3 egg yolks
2 tablespoons minced parsley
1 cup butter or 1 cup margarine, melted
24 sheets phyllo dough (about 2/3 of a 1 lb pkg)

Steps:

  • Beat together cheeses, egg yolks, and parsley until well blended and creamy.
  • Lay out 3 sheets of phyllo (keeping remaining phyllo covered with plastic wrap), and lightly brush one sheet with butter using a wide pastry brush.
  • Lay the second sheet on top of the first and brush with butter, and repeat with the third on top of the second.
  • Spoon a 1/2 inch wide ribbon of cheese mixture along one of the long sides of the dough, and starting from that side, roll up jelly roll style, tucking in the ends as you go to encase the filling.
  • Place seam side down on an ungreased baking sheet.
  • Repeat, making 7 more rolls and placing them about an inch apart.
  • Bake uncovered at 375°F for 15 minutes or until puffed and lightly browned.
  • Let cool 15 minutes; then slice through each roll on the diagonal about 2 1/4 inches apart, making diamond shaped pieces.
  • Serve immediately.
