Colorful swirled frosting atop lollipop-inspired cupcakes are a sweet treat for friends and family or an adorable party favor. You can assemble and refrigerate the cupcakes a day or two ahead.

3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon fine salt
4 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1 large egg, at room temperature
1 1/2 teaspoons pure vanilla extract
1/3 cup whole milk, at room temperature
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
3 cups confectioners' sugar, sifted
Pinch fine salt
1 teaspoon pure vanilla extract
1 to 2 tablespoons whole milk, at room temperature
5 drops bright yellow gel food coloring
4 to 5 drops leaf green gel food coloring
4 to 5 drops sky blue gel food coloring
2 to 3 drops violet gel food coloring
4 drops neon pink gel food coloring
24 spice drops or gumdrops

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line two 12-cup mini muffin pans with paper liners.
  • Whisk the flour, baking powder and salt together in a small bowl. Set aside.
  • Beat the butter and granulated sugar together in a stand mixer fitted with a paddle attachment on medium-high speed until light and fluffy, scraping down the sides of the bowl as needed, about 4 minutes.
  • Beat in the egg, scraping down the sides of the bowl as needed. Beat in the vanilla. Reduce the speed to medium low; beat in half the flour mixture, then all of the milk, then the remaining flour mixture until just combined, scraping down the sides of the bowl as needed.
  • Divide the batter evenly among the muffin cups, filling each about three-quarters full. Bake until a toothpick inserted in the center of the cupcakes comes out clean, 10 to 12 minutes, rotating the pans halfway through the baking time. Transfer the pans to a cooling rack and cool for 5 minutes. Remove the cupcakes from the pans and let them cool completely on the rack.
  • For the buttercream: Combine the butter, confectioners' sugar and salt in the bowl of a stand mixer fitted with a paddle attachment. Mix on low speed until smooth, about 2 minutes. Add the vanilla and increase the speed to medium-high. Mix until light and fluffy, scraping down the sides of the bowl as needed, about 2 minutes more. Add 1 tablespoon of milk and mix to combine. Add more milk a 1/2 tablespoon at a time until the buttercream is firm but spreadable.
  • Divide the buttercream evenly among 5 bowls, about a heaping 1/3 cup in each. Add the yellow gel food coloring to one bowl and mix until no streaks remain. Repeat with the remaining bowls of buttercream and the green, blue, violet and pink food colors. Scoop each color into a separate disposable piping bag with no tip; then snip off the tip of each bag so there is a hole about the size of a penny.
  • Prepare a sixth piping bag fitted with a medium-sized round piping tip; this will be your decorating bag.
  • Holding the decorating bag in one hand and the yellow buttercream bag in the other, pipe the yellow buttercream into the decorating bag making in a vertical stripe about 1 inch thick. Repeat with the remaining colors, working around the edge of the decorating bag to create stripes of each color and leaving at least 5 inches at the top so you can seal the bag. Be sure not to overfill the bag; you can repeat piping in the colored stripes if necessary.
  • Once the cupcakes are completely cool, attach them to the lollipop sticks by poking small holes just big enough to fit a lollipop sticks in the bottom of each cupcake with the tip of a paring knife, poking through the paper liners.
  • Slice 1/8 inch off the bottom (flat side) of each spice drop with a paring knife. Insert a lollipop stick through the domed top of a spice drops and slide it down so there is about 3/4 inch of the stick above the spice drop. This is where the cupcake will sit.
  • Next, poke the lollipop stick into the hole in the bottom of a cupcake and slide the bottom of the cupcake down so it rests on the flat, sticky side of the spice drop. The lollipop stick should not poke through the top of the cupcake; if the cupcake seems wobbly, slide the gumdrop down a bit further and press the cupcake onto the stick a bit more. Anchor the assembled lollipop cupcakes in a Styrofoam board or stick them in tall containers filled with sugar or sprinkles. Repeat with the remaining lollipop sticks, spice drops and cupcakes.
  • Holding a cupcake in one hand and the decorating bag in the other, starting in the center of the cupcake, pipe the frosting in a swirl over the top of the cupcake. Stick the frosted cupcake back into the Styrofoam to hold it upright. Repeat with the remaining cupcakes.
  • Serve immediately or refrigerate for up to 2 days; remove from the refrigerator 1 hour before serving.

  • Using an offset spatula, spread buttercream on cupcakes, smoothing into dome shapes. Place sprinkles in a small bowl. Gently press each frosted cupcake into sprinkles, rolling it around so entire surface is coated. Insert a lollipop into the center of each cupcake. Using a paring knife or kitchen shears, cut leaf shapes out of green taffy strips. Press one leaf into each cupcake, next to the lollipop. Refrigerate 30 minutes to allow frosting to set.

9-by-13-inch Chocolate Cake for Cupcake Pops
2 cups Cream Cheese Buttercream Frosting
1 package chocolate coating bark
1 package white coating bark or pink candy melts
Sprinkles, for garnish
Candy-coated chocolates, such as M&M's, for garnish

Steps:

  • Line a baking sheet with parchment paper; set aside. Trim about 1/2 inch from the perimeter of the cake. Working in batches, crumble cake into the bowl of a food processor; process until fine crumbs form. Transfer to a large bowl and add frosting; blend together using the back of a spoon, until well combined, 5 to 10 minutes.
  • Roll mixture into 1 1/4- to 1 1/2-inch balls; transfer to prepared baking sheet. Cover with parchment-paper-lined aluminum foil. Transfer to refrigerator until chilled, about 2 hours or to a freezer for about 10 minutes.
  • Begin to shape balls into cupcakes by rolling balls first into logs. Fit logs into a 1 1/4-by-3/4-inch flower-shaped cookie cutter. Push cake mixture into the cutter halfway so that some of the cake mixture extends beyond the top of the cutter. Shape extended cake mixture into a cupcake-shaped top. Push cake from cutter to remove. Transfer to a parchment paper-lined baking sheet. Transfer to freezer until chilled, 5 to 10 minutes.
  • Meanwhile, melt chocolate in heatproof bowl set over (but not touching) simmering water. Line another baking sheet with parchment paper; set aside. Remove cupcakes from freezer and dip the bottom of each cupcake into the chocolate; transfer, bottom-side up, to prepared baking sheet. To make lollipops, insert a lollipop stick into the bottom of each cupcake. Let chocolate set, 15 to 20 minutes.
  • Melt white chocolate or pink candy melts in heatproof bowl set over (but not touching) simmering water. Dip the tops of the cupcakes into the chocolate and place right-side up on prepared baking sheet or stick lollipop sticks into a Styrofoam square. Place a candy-coated chocolate in the center of each and top with sprinkles. Let dry completely.

Steps:

  • Tint 2 cups frosting light green, and tint the remainder dark green; chill at least 3 hours. Place bottom layer on cake round; use small offset spatula to spread 1 1/2 cups dark-green frosting over top. Add second layer; spread 1 1/2 cups dark-green frosting in a thin layer over entire cake. Refrigerate 40 minutes until frosting is firm.
  • Place cake on rotating cake stand; spread another layer of dark-green frosting over cake. Fill a pastry bag, fitted with a #113 tip, with light-green frosting. Place tip at base of cake; pipe elongated varying sizes of leaves up sides of cake. Chill at least one hour before serving.
  • Just before serving, insert lollipop sticks in cake.

2 boxes Betty Crocker™ Super Moist™ yellow or devil's food cake mix
Water, vegetable oil and eggs called for on cake mix boxes
Food colors (green, blue and yellow)
2 containers Betty Crocker™ Whipped or Rich & Creamy vanilla frosting
8 round vanilla wafer cookies
5 large and 2 small red gumdrops
1 small (1-inch) chewy chocolate candy, unwrapped
3 round chewy caramels in milk chocolate, unwrapped
1/4 cup chocolate chips, melted
1/2 cup white vanilla baking chips, melted
Candy rocks
Small and large flower-shaped candy sprinkles

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray 2 (8-inch) round cake pans. Place paper baking cup in each of 24 regular-size muffin cups. Make, bake and cool 1 box cake mix as directed for 2 (8-inch) rounds. Make, bake and cool other box as directed for cupcakes. Reserve 3 cupcakes; save remaining cupcakes for another use. For easier handling, refrigerate or freeze cakes 30 minutes or until firm.
  • Stir green food color into 1 container frosting to make light green. On plate, place 1 cake layer, rounded side down. Spread with 1/2 cup light green frosting. Top with second cake layer, rounded side up. Spread thin layer light green frosting over cake to seal crumbs. Refrigerate or freeze 30 minutes.
  • Spread another layer light green frosting on cake; smooth with spatula. Stir green food color into 1/3 cup frosting to make dark green. Spoon into small plastic bag. Cut 1/4 inch off corner, and squeeze gently to draw grass, flower stems and bushes on cake.
  • Stir blue food color into 1/3 cup frosting to make blue. Spoon into small plastic bag. Cut 1/4 inch off corner, and squeeze gently to draw pond and river on cake.
  • Stir yellow food color into 3/4 cup frosting to make yellow. Remove baking cups from 2 cupcakes. Place 1 cupcake, rounded side down, on cake for fairy cottage. Spread 2 teaspoons yellow frosting on cupcake; top with another cupcake, rounded side up. Spread yellow frosting on top and sides of cupcake stack. Place 3 cookies on rounded top of cupcake, using remaining yellow frosting to stick them together. Place remaining cookies on cake as shown.
  • Press 2 large gumdrops together; on sugared surface, roll gumdrops with rolling pin to flatten. Cut out large circle for roof; place on top of cottage.
  • Spoon melted chocolate into small plastic bag. Cut 1/4 inch off corner; squeeze gently to draw door and windows on cottage.
  • To make gumdrop mushrooms, use melted white chips to attach 3 large gumdrops to round chewy caramels. Cut chewy chocolate candy in half crosswise; use white chips to stick 1 to base of each small gumdrop. Use melted white chips to draw dots on gumdrops and roof. Place on cake.
  • Decorate with candy rocks and sprinkles as shown. Spread remaining frosting on last reserved cupcake.

1 cup golden raisins
1 cup walnut pieces
1/2 cup unsweetened applesauce
Juice and zest of 1 lemon
1 1/2 cups all-purpose flour
1 1/4 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground allspice
3/4 cup vegetable oil
4 large eggs

Steps:

  • Heat oven to 350 degrees. Butter 2 eight-by-two-inch round cake pans. Line bottoms with parchment; butter, and dust with flour. Grate carrots in food processor; measure 2 cups, and transfer to medium bowl. Add raisins, walnuts, applesauce, and lemon juice and zest to carrots.
  • Wipe food processor bowl; fit with blade. Add flour, sugar, baking powder, baking soda, salt, cinnamon, and allspice; pulse to mix. With motor running, pour in oil and eggs; process until smooth, scraping sides. Add carrot mixture; pulse. Pour into pans; bake about 40 minutes, until tester inserted in middle comes out clean.
  • Cool in pans on rack for 20 minutes. Remove; cool completely, right side up.

1 cup sugar
1 vanilla bean, seeds scraped
2 large eggs, plus 2 large egg yolks, room temperature
1 cup buttermilk, room temperature
5 large egg whites
1 1/4 cups sugar
Pinch of kosher salt
4 sticks (2 cups) unsalted butter, room temperature, cut into tablespoons
1 teaspoon pure vanilla extract
Yellow gel food color
1/2 cup brown chocolate-covered sunflower seeds, for decorating

Steps:

  • Cupcakes:Preheat oven to 350 degrees with rack in center. Line two standard muffin tins with 18 cupcake liners. In a medium bowl, whisk together flours, baking powder, baking soda, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and sugar on medium speed until fluffy. Beat in vanilla seeds. Add eggs and yolks, one at a time, beating until each is fully incorporated before adding the next. Reduce speed to low; gradually add flour mixture in three batches, alternating with buttermilk, beginning and ending with flour mixture and beating until combined after each addition.
  • Using an ice cream scoop or large spoon, divide batter evenly among muffin cups, filling each two-thirds full. Bake, rotating pans halfway through, until cupcakes spring back when lightly pressed and a tester inserted into centers comes out clean, about 16 minutes. Transfer to a wire rack and let cool completely.
  • Buttercream:Combine egg whites, sugar, and salt in the heatproof bowl of a mixer set over (not in) a pot of simmering water. Whisk constantly until sugar is dissolved, and mixture is warm to the touch and feels completely smooth when rubbed between fingertips.
  • Transfer bowl to mixer fitted with the whisk attachment. Starting on low speed and gradually increasing to medium-high, whisk until stiff (but not dry) peaks form. Continue whisking until mixture is fluffy and glossy, and completely cool (test by touching the bottom of the bowl), 6 to 8 minutes.
  • Reduce speed to medium-low and add butter a few tablespoons at a time, whisking well after each addition. Whisk in vanilla. Switch to paddle attachment and beat on low speed until all air bubbles are eliminated, about 2 minutes. Scrape down sides of bowl with a flexible spatula; continue beating until frosting is completely smooth. Keep buttercream at room temperature if using same day. If not, transfer to an airtight container and refrigerate up to 3 days or freeze up to 1 month. Before using, bring to room temperature and beat with paddle attachment on low speed until smooth again, about 5 minutes.
  • Reserve 1/2 cup buttercream. Tint remaining buttercream yellow, adding food color a drop at a time until desired color is reached. If necessary, use reserved buttercream to lighten color.
  • Transfer buttercream to a pastry bag fitted with a small leaf tip (such as Wilton #70). Pipe a row of slightly overlapping petals around the edge of a cupcake. Pipe a second row of petals, overlapping previous petals. Repeat piping process, overlapping petals slightly and creating 2 to 3 more rows of petals. Pipe a small amount of frosting in center of cupcake; cover with sunflower seeds. Repeat with remaining cupcakes. Decorated cupcakes can be refrigerated in an airtight container up to 6 hours; bring to room temperature before serving.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Line two 12-cup muffin tins with paper liners.
  • Combine sifted flour, sugar, baking powder, and salt in a bowl. Whisk eggs together in a second bowl for 1 to 2 minutes.
  • Beat milk, oil, and vanilla extract together in another large bowl with an electric mixer on low speed until incorporated. Add the flour mixture in increments, making sure it mixes in well. Fold in eggs. Scoop batter into the prepared muffin cups.
  • Bake in the preheated oven until a cake tester inserted into the center comes out clean, about 20 to 25 minutes. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
