GRAPE FRUIT LEATHER

Number Of Ingredients 3

10 cups green, red or black seedless California grapes, stemmed and rinsed (about 3¼ lbs)
¼ cup sugar
2 tablespoons lemon juice

Steps:

  • Puree the grapes in a blender or food processor, in batches if necessary, until very smooth. Pour the puree into a fine sieve and press hard with a spatula to extract as much juice as possible. Puree the grapes again and put them back into the sieve. Press again and reserve the juice for another recipe. There should be about 2 cups of grape puree.
  • Pour the puree into a small saucepan with the sugar and lemon juice and bring to a boil. Simmer, stirring often and scraping the sides, until the puree turns glossy and darkens slightly, about 30 to 45 minutes.
  • Preheat the oven to 200°F using convection mode if available. Line a large-rimmed baking sheet with a silicon baking sheet. Pour the puree onto the mat and spread into an 1/8-inch thickness using an offset spatula, leaving a 1-inch border of space around the edge. Bake 1½ to 3 hours, rotating the tray halfway through, until the puree is tacky and not quite dried in the center. Let stand at room temperature until fruit leather peels easily from the tray, 24 hours to 48 hours.
  • Place a piece of parchment paper over the fruit leather and invert. Peel off the silicon baking sheet and starting at the long end, roll up the fruit leather and parchment. Using scissors or a sharp knife, cut the fruit leather roll into 1-inch segments. Store in a resealable plastic bag for up to 1 week at room temperature or 2 to 3 months in the freezer.

  • Sort and wash grapes; remove stems. Place grapes in a steamer basket; place in a large saucepan over 1 in. of water. Strain grapes through a food mill into a small bowl; discard skin. Stir in sugar and lemon juice., Line a 15x10x1-in. baking pan with parchment paper. Cool completely., Transfer fruit leather to a new 15x10-in. sheet of parchment paper. Roll up leather in parchment paper jelly-roll style, starting with a short side (do not unroll). Cut into six 1-1/2-in. pieces. Store in an airtight container in a cool, dry place up to 1 month.,

Fresh fruit (apricots, peaches, plums, berries, apples, pears, grapes)
Water
Lemon juice
Sugar (if needed)
Spices such as cinnamon and nutmeg (optional)

Steps:

  • Clean and prep the fruit: Rinse the fruit. If you're working with stone fruit, take out the pits. Chop the fruit. If you're working with apples or pears, peel and core them, then chop. If working with grapes, de-stem them. Taste the fruit before proceeding. Note how sweet the fruit is. If very sweet (ripe Concord grapes, for example) you won't need to add any sugar. If still a little tart, you may need to add some sugar in the next step.
  • Boil the fruit with water, then mash: Place the fruit in a large saucepan. Add 1/2 cup of water for every 4 cups of chopped fruit. Bring to a simmer, cover, and let cook on a low heat for 10 to 15 minutes, or until the fruit is cooked through. Uncover and stir. Use a potato masher to mash up the fruit in the pan.
  • Season with sugar and spices, if desired: Taste the fruit and determine how much sugar, lemon juice, or spices to add. If needed, add the sugar in small amounts (1 tablespoon at a time), to your desired level of sweetness. Add lemon juice 1 teaspoon at a time to help brighten the flavor of the fruit. Add a pinch or two of cinnamon, nutmeg, or other spices to augment the flavor, if you'd like. Continue to simmer and stir until any added sugar is completely dissolved and the fruit purée has thickened, another 5 or 10 (or more) minutes.
  • Purée the cooked fruit: Put the mashed fruit through a food mill or chinoise. Alternatively, purée the fruit thoroughly in a blender or food processor. The purée should be very smooth. Taste again and adjust the sugar/lemon/spices, if necessary.

4 cups frozen blueberry
1 cup Welch's Grape Juice
3 tablespoons lemon juice

Steps:

  • Preheat the oven to 150ºF (125ºF for convection ovens).
  • Line two 14x10-inch (35x25 cm) rimmed baking sheets with parchment paper, making sure the paper is a little bit bigger than the pans.
  • In a small saucepan, bring the blueberries and Welch's grape juice to a low boil.
  • Add the lemon juice, stir, and simmer for 10-15 minutes or until mixture thickens. Let cool slightly.
  • Place all the ingredients in a blender and blend until smooth, about 20 seconds. Carefully remove the lid from the blender as contents will be hot.
  • Pour the mixture evenly over the two parchment paper-lined sheet trays and use a rubber spatula to make sure it is spread evenly.
  • Place the pans in the oven for 4-5 hours. The desired texture should be smooth to the touch and not sticky.
  • Cool for 20 minutes. Cut into 2-inch (5 cm) strips, and roll up.
