Grandmother's Macaroni and Cheese image

This is my grandmother's macaroni and cheese. It is best when cooked in a clay baking dish at 425 degrees F (220 degrees C) for 1 hour.

1 cup elbow macaroni
1 ½ cups shredded Cheddar cheese
⅔ cup milk
1 egg, beaten
1 tablespoon prepared mustard
1 dash hot pepper sauce (such as Tabasco®)
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.
  • Stir macaroni, Cheddar cheese, milk, egg, mustard, hot pepper sauce, salt, and pepper together in a bowl; pour into a baking dish.
  • Bake in the preheated oven until brown and thickened, about 45 minutes.

This is my Grandmothers recipe for macaroni and cheese. Serves about 8 comfortably, more if its served as a side dish. I had to guess at the serving size as she says "depends on how many are eating and how hungry they are". Very tasty! This is creamy, cheesy kid pleasing (and adults love it too)!

3 cups uncooked macaroni (cook to your liking)
3 tablespoons butter
3 tablespoons flour
1 1/2 teaspoons salt
3 3/4 cups milk
4 cups cheddar cheese (shredded, packed)

Steps:

  • In saucepan, melt butter.
  • Remove from heat; blend in flour & salt.
  • Add milk; heat, stirring constantly until sauce thickens a little and is smooth.
  • Add 3 C cheese, heat until melted.
  • Combine macaroni & sauce in casserole pan.
  • Top with remaining cheese.
  • Bake in oven at 350 degrees for 30 minutes or until top of casserole is golden brown.

1/4 teaspoon ground mustard

1 1/3 cups 2% low-fat milk
2/3 cup cheddar cheese, shredded
2/3 cup monterey jack cheese, shredded
1/4 teaspoon Worcestershire sauce
1 1/2 cups cooked elbow macaroni

Steps:

  • In a saucepan, melt butter.
  • Stir in the flour, salt, mustard and pepper until smooth; gradually add milk.
  • Bring to a boil; cook and stir for 1 minute or until thickened.
  • Reduce heat. Add the cheeses and Worcestershire sauce; stir until cheese is melted.
  • Fold in macaroni.
  • Pour into a 1-quart baking dish coated with nonstick cooking spray.
  • Bake, uncovered, at 350 degrees Fahrenheit for 10-15 minutes or until bubbly.

1 tablespoon unsalted butter
6 (6 ounce) thick slices bacon, cut into 1/2-inch dice
1 medium onion, minced
2 bay leaves
1 tablespoon sweet paprika
1/2 teaspoon cayenne pepper
1/3 cup all-purpose flour
6 cups whole milk
1 lb elbow macaroni
1 lb extra-sharp cheddar cheese, shredded (5 cups)

Steps:

  • Preheat the oven to 350 degrees.
  • Butter a 9X13" baking dish. In a large saucepan, melt the butter. Add the bacon and cook over moderate heat until crisp, about 7 minutes. With a slotted spoon, transfer the bacon to a plate.
  • Add the onion and bay leaves to the saucepan and cook over moderate heat, stirring occasionally, until the onion is softened, about 5 minutes. Add the paprika and cayenne and cook, stirring, until fragrant. Stir in the flour until blended. Gradually whisk in the milk until the sauce is smooth. Bring to a boil over high heat, whisking constantly, and cook until thickened. Reduce the heat to low and simmer the sauce gently for 30 minutes, whisking frequently. Discard the bay leaves.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the macaroni and boil over high heat. Add the macaroni and boil about 4 minutes. Drain the macaroni and return it to the pot.
  • Stir 4 cups of the cheddar into the hot sauce; add the bacon and season with salt. Add the sauce to the macaroni and mix well. Spread the mac and cheese in the baking dish and scatter the remaining 1 cup of cheddar on top.
  • Bake for about 30 minutes until golden brown. Let stand for 10 minutes before serving.
  • The assembled mac and cheese can be refrigerated overnight. Bring to room temperature before baking.

2 teaspoons butter
1/2 cup seasoned bread crumbs
2 cups dried macaroni
2 1/2 cups evaporated milk
2 eggs
1/2 teaspoon dried white pepper
1 teaspoon Worcestershire sauce
2 teaspoons corn oil
2 teaspoons Lawry's Seasoned Salt
1/2 cup grated extra-sharp cheddar cheese
4 ounces Velveeta cheese, cut into small cubes

Steps:

  • In a small skillet heat and melt 1 T.
  • of butter.
  • Add bread crumbs and sauté until they sizzle and are tender, this whole process should take no more than 5 minutes.
  • Cover and set aside.
  • In a large mixing bowl, whisk together eggs, evaporated milk, corn oil, white pepper, seasoned salt and Worcestershire sauce until all incorporated.
  • In a large, buttered oblong baking dish, put a layer of macaroni on the bottom and slowly pour only enough egg mixture to cover this layer.
  • Then add the cheeses on top of that.
  • Repeat this whole process until you used up all the cheese and macaroni in layers and finish with a top layer of egg mixture.
  • Cover with a lid or foil and bake for 30-35 minutes in a pre-heated 425 oven.
  • During the last 5-7 minutes of cooking, add the bread crumbs over the top and cook uncovered.
  • Let stand and cool for at least 5 minutes.

1 1/2 tablespoons kosher salt
6 ounces dry elbow macaroni, about 1¼ cups
2 ounces Grana Padano cheese, grated, or Parmesan
2 ounces Jarlsberg cheese, grated, or Gruyère
6 ounces white Cheddar, grated
2 cups heavy cream
Sea salt

Steps:

  • Preheat broiler. In a medium saucepan over high heat, bring 2 quarts water and kosher salt to a boil. Add macaroni and return water to a boil; cook until barely al dente, about 5 minutes. Meanwhile, in a large bowl, stir the grated Grana Padano, Jarlsberg, and Cheddar cheeses to combine. Set aside. Taste a macaroni for doneness: it should be chewy yet firm. Strain macaroni in a colander and set aside.
  • Add heavy cream and a pinch of sea salt to an oven-safe skillet; turn heat to medium-high and bring to a simmer. When cream is simmering, fold in the macaroni. Continue to simmer to reduce and thicken, about 1½-2 minutes. Stir in ¼ of the cheese mixture to combine with noodles. Turn off the heat and stir in another ¼ of the cheese. Place remaining cheese over the top in an even layer (do not stir).
  • Set rack in the oven about 4 inches from the broiler. Place skillet under the broiler until cheese melts and caramelizes into a golden brown crust, 3-5 minutes (keeping an eye on it so it doesn't burn). Remove gratin from oven and let rest 5 minutes before serving.
