From Betty's Soul Food Collection... The kids love this one, because it's sweet and fun to eat. Moms love it too-with stacks of fresh fruit, healthy yogurt and low-fat granola-all ready to enjoy in only 10 minutes!

2 cups low-fat granola cereal
2 medium unpeeled apples, cut into chunks
2 small bananas, cut into chunks
1 cup fresh pineapple chunks or other fruit as desired
2 containers (6 oz each) Yoplait® Original yogurt (any fruit flavor)

Steps:

  • Place granola in shallow bowl. Insert toothpick into each piece of fruit.
  • Dip fruit into yogurt, coating all sides. Roll in granola, coating completely.

Number Of Ingredients 10

1 medium tart apple, cut into 1-inch chunks
1 medium pear, cut into 1-inch chunks
1 tablespoon lemon juice
1 can (8 ounces) unsweetened pineapple chunks, drained
24 grapes (about 1/4 pound)
24 fresh strawberries
COCONUT DIP:
1-1/2 cups fat-free vanilla yogurt
4-1/2 teaspoons sweetened shredded coconut
4-1/2 teaspoons reduced-sugar orange marmalade

Steps:

  • Toss apple and pear with lemon juice. Divide fruit into 12 portions and thread onto wooden skewers. Combine dip ingredients in a small bowl; serve with the kabobs.

Number Of Ingredients 14

5 cups old-fashioned oats
1 cup sliced almonds
1/2 cup sunflower kernels
1/2 cup ground flaxseed
1/2 cup packed brown sugar
1/4 cup maple syrup
1/4 cup honey
2 tablespoons canola oil
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cranberries
1/2 cup dried banana chips
1/2 cup dried apricots, halved

Steps:

  • In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. Cook and stir over medium heat for 2-3 minutes or until brown sugar is dissolved and mixture is heated through. Remove from the heat; stir in vanilla. Pour over oat mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until golden brown, stirring every 8 minutes. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container.
