As a turkey lover who can't get enough during fall and winter, I was inspired to come up with a restaurant-worthy sandwich. I love it with a soft, rich cheese like Brie. -Grace Voltolina, Westport, Connecticut

- Preheat broiler. In a large skillet, heat 1 tablespoon butter over medium heat; saute apple with sugar and cinnamon until crisp-tender, 3-4 minutes. Remove from pan., In same pan, melt remaining butter over medium heat; saute onion until lightly browned, 3-4 minutes. Remove from heat; stir in sauteed apple., Spread cranberry sauce onto cut side of bottom portion of rolls; layer with turkey, apple mixture and cheese. Place on a baking sheet alongside roll tops, cut side up., Broil 3-4 in. from heat until cheese begins to melt and roll tops are golden brown, 45-60 seconds. Add arugula; close sandwiches.

- Heat broiler. On a baking sheet, toss turkey cutlets with olive oil, salt, and pepper. Broil until cooked through, 6 to 8 minutes. Transfer to a plate; wipe sheet with paper towels.
- In a bowl, combine chutney and mustard. Place bread slices on sheet. Layer 4 slices with chutney mixture, turkey, Havarti cheese, and apple.
- Broil until cheese melts and bread is toasted, 5 minutes. Top with lettuce and remaining toast.

- Measure ground mustard into a small bowl. Stir to break up lumps. Add honey and mayonnaise. Stir until smooth.
- Spread 1 side of each bread slice with 1-2 tablespons Honey Mustard Sauce. Top 4 bread slices with apple then turkey and cheese.
- Broil until cheese melts. Top with remaining bread slices. Serve warm.
- TIP: If you prefer a milder mustard flavor, or if you are making the Honey Mustard Sauce ahead of time, use 2 teaspoons ground mustard since the mustard flavor strength increases as it stands.

- Cut bacon in half and cook over medium heat on the stove until cooked but not overly crispy (too crispy will fall apart on your sandwich). Remove 4 half-pieces of bacon to a paper towel to drain.
- Meanwhile, toast the ciabatta roll or sourdough bread under the oven broiler or in a toaster oven until golden brown, about 2-3 minutes.
- Cut about five quarter-inch half-moon slices out of the Granny Smith apple, and a 1/3-inch slice or two of brie cheese (however much is needed to cover the surface area of your bun).
