BEST Sweet Chili Sauce image

This homemade sweet chili sauce is guaranteed to become a favorite staple in your home! It's versatile, is quick and easy to make, is free of additives, and tastes WAY better than the store-bought stuff!

1/3 cup rice vinegar
1/3 cup water
1/3 cup + 2 tablespoons cane sugar
diabetic alternative: use granular sweetener of choice (e.g. erythritol)
1 tablespoon rice wine ((can substitute dry sherry))
1 tablespoon sambal oelek ((use more or less according to taste))
OR 1-2 teaspoons dried red chili flakes ((these are very hot, start with less and add more if desired))
1 1/2 teaspoons finely minced garlic
1 teaspoon finely minced ginger
1 teaspoon tamari or soy sauce ((use tamari for gluten free))
2 teaspoons cornstarch dissolved in 1 tablespoon water ((the sauce will thicken more once cooled))
1-2 drops natural red food coloring ((optional))

Steps:

  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

Number Of Ingredients 5

20 red chillies , stems removed, deseeded for a milder sauce
1 finger sized piece of ginger , peeled and roughly chopped
5 garlic cloves , roughly chopped
100ml white wine or cider vinegar
200g white caster sugar

Steps:

  • Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
  • Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.

Mom's Sweet Chili Sauce image

Thick, spicy and sweet, this chili sauce is more like a chutney than the usual chili sauce. Delicious with any meat and great slathered on just about any sandwich instead of mayo or ketchup. This recipe has been a family favourite for more than 50 years.

6 quarts ripe tomatoes, peeled and quartered
4 cups vinegar
6 cups sugar
1 tablespoon salt
1/2 teaspoon cayenne pepper
1 teaspoon whole cloves
1 teaspoon whole allspice
2 cinnamon sticks

Steps:

  • Put the tomatoes in a large non-reactive container or canning kettle. Add 2 cups of the vinegar, stir gently, cover and let stand at room temperature overnight. In the morning drain well and discard the liquid.
  • In a canning kettle combine the drained tomatoes with the remaining 2 cups of vinegar, sugar, salt and cayenne pepper.
  • In a large square of cheesecloth tie together the cloves, allspice and broken cinnamon sticks. Add the spice bag to the tomato mixture.
  • Bring mixture to a boil, then simmer gently until thickened, about 2-1/2 hours. Watch closely and stir frequently to avoid scorching.
  • Bottle in hot sterilized jars.
  • Process in a hot water bath: 10 minutes for 8-ounce jars or 15 minutes for pint jars.

1 lb ground beef, not lean
1/4 cup flour, plus
1 1/4 cups flour
1 1/3 cups beef broth
4 cups water
3 teaspoons chili powder
2 tablespoons grated then chopped fine carrots
1 tablespoon white vinegar
2 tablespoons dried onion flakes
2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon paprika
1/4 teaspoon garlic powder

Steps:

  • In a large saucepan brown meat over medium heat, crumbling as you cook.
  • Pour meat in to a strainer over a bowl.
  • Reserve 1/2 cup fat and return meat to saucepan.
  • In a medium saucepan heat fat over medium heat.
  • When hot whisk in the 1/4 cup flour.
  • Reduce heat to medium low, and continue to cook until a rich caramel color is reached, around 15 minutes.
  • Add beef broth and whisk well.
  • Remove from heat.
  • In the meat saucepan add water to the cooked beef.
  • Whisk in remaining flour.
  • Add the roux/broth and remaining ingredients.
  • Heat to medium high stirring often.
  • Once a gentle boil is reached, reduce to medium low and simmer for 20 minutes, again, stirring often.
  • Remove from heat and let stand 30 minutes to thicken.

Thai Sweet Chili Garlic Sauce which I made with the Recipe #506416. It cost quite a bit to ship; arrived when they were not home; and had to be delivered a second time. Since I only used a scant 1/4 cup relish, I was afraid it would not be hot enough, and I did not want to taste it to check the flavor. It took forever to get there. I was afraid that the Sauce was not worth the effort, so I asked Tom, knowing he would be straightforward with me. This is what he said... Yes it had the right amount of heat; Thank You; it as worth it. Supa and I love it; it was fantastic; it is worth making because it has a different flavor.

1 cup white vinegar
1 cup water
1 1/2 cups sugar
2 teaspoons kosher salt
2 teaspoons cornstarch
1/4 cup relish (Thai Demon Relish)

Steps:

  • In a heavy saucepan, bring vinegar, water, sugar, salt, and corn starch to a rolling boil, reduce heat and simmer for about 30 minutes, or until mixture thickens.
  • When mixture is thick, stir in relish, bring up to rolling boil, and boil until mixture reaches 230°F about 2 minutes.
  • Stir sauce and pour into hot sterilized jar. Jar will seal.
  • Refrigerate after opening. Keeps well for at least a year.
