4 tablespoons vegetable oil
1 onion, finely chopped
3 cloves garlic, crushed
1 cup finely chopped carrot
1 cup finely chopped green beans
1 cup fresh pineapple chunks or 1 cup canned pineapple chunk, drained
3 cups cold cooked rice (preferably medium grain)
1 tablespoon ketchup (or tomato puree)
1 teaspoon salt
1 cucumber, thinly sliced
4 tablespoons chopped green onions
4 tablespoons chopped fresh cilantro

Steps:

  • In a wok, heat oil over medium heat and stir-fry onion and garlic until golden brown.
  • Add the carrots and green beans and stir-fry 2 minutes.
  • Add pineapple, rice, ketchup, and salt, mixing well and stir-frying for 3 minutes.
  • Garnish with green onion and cilantro before serving.
  • Serve with soy sauce, if desired.

This is a thai dish with a lot of the flavor coming from the pineapple and coconut. I prefer to use thai jasmine rice but you can use regular white rice too. I used a can of pineapples instead of a fresh one since that was what I had on hand. Be sure to make just what you need, I couldn't stop picking at the leftovers!

2 -3 tablespoons vegetable oil
4 cups freshly cooked rice
1/2 cup roasted cashews
1/2 pineapple
1/2-1 cup Chinese barbecue pork or 1/2-1 cup other leftover cooked meat, cut into bite size pieces (optional)
2 tablespoons chopped coriander roots
1/2 teaspoon white pepper
1/4 cup sugar
1/4 cup fish sauce
1 1/2 cups coconut milk
coarsely chopped green onion, for garnish

Steps:

  • Cut half of the pineapple into cubes.
  • Prepare all remaining ingredients and have at hand.
  • In a small saucepan, heat the coconut milk to a boil.
  • Add the coriander root, white pepper, sugar and fish sauce.
  • Reduce heat and simmer the sauce for 3-5 minutes, then strain.
  • Preheat a wok over medium high heat and add the oil, to coat the sides of the wok.
  • When the oil is hot, add the meat, pineapple, cashews and rice.
  • Stir and toss to combine well.
  • Slowly pur the seasoned coconut milk over the rice, 1/4 cup at a time until the rice is just moistened.
  • You will have more than enough seasoned coconut milk, any leftovers can be frozen for future use.
  • Continue stif frying until the rice is heated through.
  • If desired, fill the empty pineapple half with the rice mixture.
  • Garnish and serve.

2 1/2 cups bell peppers, cut into short strips or 2 1/2 cups bean sprouts, blanched for 5 seconds, cooled and drained
1/4 cup vegetable oil
1/2 tablespoon fresh gingerroot, minced
2 tablespoons garlic cloves, minced
6 cups cooked rice (short grain)
2 eggs, lightly beaten
1 cup fresh tomato, chopped
2 tablespoons thai sriraja chili sauce (or other hot chili paste)
2 tablespoons light soy sauce
1/2 lime, juice of
1/2 lime, cut into thin wedges
scallion, cut on diagonal

Steps:

  • Choose and prepare vegetables. Select a combination with a variety of colors.
  • In a wok, heat the oil and stir fry the ginger and garlic until golden.
  • Remove them with a slotted spoon and save for later.
  • In the same oil, stir-fry the vegetables until just cooked. Add the harder ones (like carrots) first, and the tender ones (like sprouts) last.
  • Remove the vegetables from the wok and set aside.
  • Add the rice to the wok and heat thoroughly.
  • With your stirring spoon, make a hole in the center of the rice, down to the wok and put in the eggs.
  • Stir until they are pretty well set before you mix them into the rice. The more you cook the eggs before stirring them into the rice, the drier the dish will be.
  • Add the tomatoes, the reserved ginger and garlic and the stir-fried vegetables.
  • Finally, mix in the chili sauce, soy sauce and lime juice.
  • For serving, top each serving with thin slices of scallions. Put thin slices of lime on the side.

  • In a wok or large skillet, heat the oil on medium–high. When the oil is hot, add the prawns and fry for 3 or 4 minutes or until fully cooked. Prawns are done when their flesh is fully opaque and orange. Scoop out the prawns, transfer to a plate and set aside.
  • Adjust the heat to medium–low. Add the garlic and onion to the pan and cook for several seconds or until aromatic. Add the curry powder and cook briefly, stirring constantly, until fragrant.
  • Add the cooked rice to the pan and pat it down with a spatula, then fold the rice over. Do these two steps a few times until the rice grains have separated and the rice is fully coated with the curry powder. Add the raisins, pineapple, cashews and tomatoes and mix everything well. Return half of the cooked prawns to the wok. Season the mixture with the fish sauce, oyster sauce, sugar and salt. Stir to mix well. Taste and adjust the seasoning, if needed.
  • Transfer to a serving plate and garnish with the remaining prawns and green onions. You can also serve this inside a hollowed-out fresh pineapple, if you like.
