BUTTERNUT CAKE WITH BUTTER PECAN FROSTING



Butternut Cake With Butter Pecan Frosting image

No special occasion needed to whip up this classic Southern cake. This recipe calls for self-rising flour, sugar, eggs, milk, butternut extract, cream cheese and pecans. Your beautiful butternut flavored cake will become a family favorite!

Number Of Ingredients 9

3 cups plus more for dusting cake pans self rising flour
3 sticks at room temperature, divided butter
2 cups granulated sugar
4 large eggs
1 cup milk
3 tablespoons plus 1 teaspoon butternut extract
1 cup chopped, plus 1/2 cup unchopped pecans
4 cups confectioner's sugar
1 (8 oz) package at room temperature cream cheese

Steps:

  • For the cake: Preheat the oven to 350 °F. Adjust the racks to the middle of the oven. Spray three 9-inch cake pans with nonstick spray and dust lightly with flour.
  • Using a stand mixer, cream 2 sticks of butter until fluffy. Add the granulated sugar and continue to cream well for 6 to 8 minutes.
  • Add the eggs, one at a time, beating well after each addition. Add the flour and milk alternately to the creamed mixture, beginning and ending with the flour. Add 3 tablespoons extract and continue to beat until just mixed. Then fold in 1 cup chopped pecans. Divide the batter equally among the prepared pans. Level the batter in each pan by holding pan 3 or 4 inches above the counter and dropping it flat onto the counter.
  • Bake until golden brown, 30 to 35 minutes. Cool the cakes completely before frosting.
  • For the frosting: Add the confectioners' sugar to a bowl and whisk to make sure there are no lumps. Set aside.
  • In a large bowl, blend together the cream cheese and 1 stick butter with an electric hand mixer. Gradually add the confectioners' sugar and beat until light and fluffy. Beat in 1 teaspoon extract. Stir in 1/2 cup pecans (or reserve them to sprinkle over the frosted cake). Fill and frost the cake when the layers are completely cool.

My Grandma was a great baker. She made the most delicious frosting for her cakes. I could never quite get why my frosting never tasted like hers. Years later I found this recipe in her handwriting and it had coffee in it. I'm not a coffee drinker, but boy was this frosting delicious. The recipe is actually for 3 variations: white, chocolate or mocha.

1/4 lb butter, softened
1 1/2-2 cups powdered sugar
2 -3 tablespoons milk or 2 -3 tablespoons cold coffee
1 teaspoon vanilla extract
1 tablespoon cocoa powder (optional)

Steps:

  • Cream butter and sugar together. Slowly add enough milk to make the frosting spreadable. Add the vanilla. Adjust milk and powdered sugar until desired consistency.
  • For chocolate icing, add the cocoa powder.
  • For mocha icing, delete the milk and add cocoa and cold coffee.

This recipe is a little on the sweet side but it was one that my grandmother made for my mother when she was a little girl so I had to post it! It's an old recipe, so I had to guess as to how many servings it makes.

1/3 cup peanut butter
1/3 teaspoon salt
2 1/4 cups powdered sugar, sifted
1/2 cup strong coffee (brewed)

Steps:

  • Add together margarine, peanut butter and salt and stir until well mixed.
  • Add in powdered sugar and coffee, blend well.
  • Frost over cake or cupcakes.
  • Enjoy!

After failing to find the perfect recipe for buttercream icing, I found one that worked for me and then added my own two cents.

½ cup unsalted butter, softened
1 ½ teaspoons vanilla extract
2 cups confectioners' sugar, sifted
2 tablespoons milk
3 drops food coloring, or as needed

Steps:

  • Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
  • Pour in milk and beat for an additional 3 to 4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

This frosting recipe was the one my Grandma used on top of her oatmeal cake, spice cake, and banana nut cake. I also like it on a yellow or white cake. You do have to use at once because this does stiffen as it cools.

2 cups packed brown sugar
½ cup milk
6 cups sifted confectioners' sugar
1 pinch salt

Steps:

  • Melt butter in a 2-quart saucepan over medium heat; stir in brown sugar. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Let cool for 5 minutes.
  • Whisk milk into the saucepan until mixture is smooth.
  • Beat 3 cups confectioners' sugar and salt into the butter mixture with an electric mixer on low speed. Add remaining confectioners' sugar 1 cup at a time, beating until smooth.

My grandmother is the most amazing cook I know and this is one of my favorite cakes that she makes. It simply melts in your mouth. She usually cuts up some fresh berries to put on top of the cake which makes it the perfect southern dessert!

1 cup Butter Flavor Crisco
1 cup milk
2 cups sugar
5 eggs
1/2 cup self rising flour
2 1/2 cups cake flour
2 tablespoons butternut flavoring

Steps:

  • Cream Crisco, sugar and eggs together.
  • Beat on high speed for 5 minutes.
  • Then add milk and flour on low speed until mixed well.
  • Add butternut flavoring and bake in tube or bundt pan for 1 hour and 15 minutes at 300 degrees F.
  • Frost with Butternut frosting if desired.
