GRANDMA'S EGG CUSTARD PIE
This is the 1999 American Pie Council's National Pie Championship's first place winner in the Custard Pie Category.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops yellow food coloring.
- Line pie pan with pastry, and brush inside bottom and sides of shell with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
- Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Cool on rack.

GRANDMA HALLIE'S CUSTARD OR CUSTARD PIE
Grandma Hallie was a true "Depression Cook." She was an 18 year old wife, then her baby son was born 6 weeks before the Stock Market Crash of 1929. They had to move back to the family farm just to survive. And nothing on the farm was wasted. Custard was the "old" way to use up any extra eggs and milk before there was refrigeration. Honey or molasses could be used as the sweetener back then, so no vanilla was needed, if it wasn't available. Folks "made do." This dessert was my late father's favorite. Here's to you, Dad & Grandma. I miss you every day. =^..^=

- Preheat the oven to 350 degrees F.
- In a medium bowl, add the eggs, milk, sugar, vanilla, and salt. Mix with an egg beater or a mixer (on low speed) until evenly blended.
- Pour egg mixture into an ungreased medium casserole dish.
- Sprinkle with nutmeg, if desired.
- To make the water bath, set the casserole dish into a 13 x 9" pan. Carefully pour HOT water into the 13 x 9" pan, not getting ANY water into your custard! (Don't ask me how I know.) =^..^=
- Continue pouring the hot water to a depth of 1 inch.
- Carefully set the water bath with the casserole dish into the preheated oven.
- Bake for 45 minutes, then check to see if a knife blade slipped into the center of the custard comes out pretty clean. When it does, remove everything from the oven, then the casserole dish out of the water bath to stop the cooking. DO NOT OVERBAKE!
- Cool, then refrigerate the custard until ready to eat. (OK, I admit that I like mine warm.) =^..^=
- OPTION: This custard can also be baked in individual ramekins. Fill 6 ramekins with the custard, place the ramekins in a 13 x 9" pan, and carefully add the 1" of HOT water. Bake at 325 degrees F (note the temp change!) for 20-30 mins., using the knife test to check for doneness.
- FOR CUSTARD PIE: OK, Grandma didn't use a Marie Callendar deep-dish pie shell, but she MIGHT have since it's a great tasty product! I'm totally available for commercial work, if the MC people want to contact me. =^..^= Anyway, if you want to make a custard pie, simply make the custard as directed above, then pour it into an unbaked deep-dish pie shell. Bake at 350 degrees F for about 35-40 minutes or until the top is set when you jiggle it and it looks done. Cool, then chill before slicing.
CUSTARD PIE
Bring back memories of Grandma's kitchen with this traditional custard pie in a homemade pastry crust.

Steps:
- In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
- Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
- Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths and place in pie plate; unfold pastry and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with edge of plate; flute.
- Carefully line pastry with a double thickness of foil, gently pressing foil to bottom and side of pastry. Let foil extend over edge to prevent excessive browning. Bake 10 minutes; carefully remove foil. Bake 2 to 4 minutes longer or until pastry just begins to brown and has become set. If crust bubbles, gently push bubbles down with back of spoon.
- Reduce oven temperature to 400°F. In medium bowl, beat eggs slightly with wire whisk. Add sugar, 1/4 teaspoon salt, the nutmeg and vanilla; mix well. Gradually blend in hot milk. Pour filling into hot crust (to prevent spilling the filling, place pie plate on oven rack before pouring filling into crust).
- Cover edge of pie crust with pie crust shield ring or 2- to 3-inch strip of foil to prevent excessive browning; remove shield or foil during last 15 minutes of baking. Bake 25 to 30 minutes or until knife inserted halfway between center and edge comes out clean. Cool on cooling rack 1 hour. Serve slightly warm or cold. Store loosely covered in refrigerator.

OLD-FASHIONED CUSTARD PIE
This recipe came from the best cook in West Virginia-my mother! I just added a little to her ingredients. I'm a widow, and my grown children live in another state. So mostly I make my custard pie for church and club functions. It's the most different pie of all the ones in my collection.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 10-15 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., In a large bowl, whisk eggs. Whisk in remaining ingredients until blended. Pour into crust. Cover edge with foil. Bake at 400° until a knife inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

- Mix sugar, flour, and cocoa powder together in a bowl until well combined.
- Mix milk, egg yolks, and vanilla extract together in a separate large bowl. Add flour mixture and blend custard until smooth.
- Pour custard into a cast iron skillet over medium heat. Cook, stirring continually, until slightly boiling but not popping, about 5 minutes. Cook just until reasonably thickened, 3 to 5 minutes more, and remove from heat immediately. Stir hot custard to smooth out any lumps and pour into the pre-baked pie shell.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Beat egg whites, sugar, and vanilla extract together in a small bowl until peaks start to form. Spread the thick meringue mixture on top of the custard.
- Cook under the preheated broiler just until the peaks start to turn light brown, 1 to 2 minutes, being very careful not to let the meringue burn.
- Place the custard pie in the fridge or on Grandma's porch on a cool night until the custard congeals, about 2 hours.

GRANDMA'S CUSTARD PIE (YELLOW PIE)
My grandma made the most wonderful custard pie. When I got to stay the night or weekend with her, she would always have this for me. Of course I could never ever make this like I remembered until I finally asked her for the recipe. One thing I cannot replicate is the use of fresh whole milk, but have come up with a pretty close substitution. THIS is comfort food at its' finest.

- Preheat oven to 400 degrees F.
- Scald milk (I use 1 cup half and half mixed with 1-1/2 cups whole milk). Set aside.
- In large mixing bowl slightly beat eggs, blend in sugar, salt, vanilla and almond extract.
- Gradually stir in scalded milk. Do not overbeat as this will create an unwanted foam. Pour into prepared pie shell and lightly sprinkle freshly grated nutmeg over the top.
- Bake 30-35 minutes or until knife inserted in center of pie comes out clean. Remove from oven and let cool 30-60 minutes before slicing and serving.
