IngredientsMakes enough for two 16" pizzas 1 tbsp olive oil1 tbsp unsalted butter2 garlic cloves, grated (minced)1 tsp dried oregano½ tsp salt28oz (794g) tinned, whole, peeled San Marzano tomatoes2 stems fresh basil with leaves on1 tsp onion powder1 tsp sugarMethodIn a medium saucepan over a medium heat, melt the butter with the olive oil. Once the butter is completely melted, add the garlic, oregano and salt and stir until fragrant or for about 1 minute. In a bowl, add the tomatoes and crush using your hands to break them up a little. Add the tomatoes, basil stems, onion powder and sugar to the saucepan. Bring the mixture to a bubble, reduce the heat to low, and simmer for 45 minutes to 1 hour, until the sauce has reduced by about half. Remove the basil stems from the sauce, and season the sauce with more salt if needed.Allow the sauce to cool, then store in an airtight container in the fridge. Be sure to remove the sauce from the fridge in advance of using it on a pizza, so that the sauce can come up to room temperature.

This pizza recipe is the one Dad always made in my home, growing up. Of course, he didn't use a recipe, but I think I've figured it out pretty well. It tastes exactly like his.

1 Tbsp olive oil, extra virgin
2-3 tsp fresh garlic, minced
1 can (28) oz crushed tomatoes
1 tsp salt
1 tsp dried oregano
1/2 tsp dried basil
1/8 tsp red pepper flakes (optional)

Steps:

  • 1. Lightly sauté the minced garlic in olive oil, being careful not to burn the garlic (it will get bitter). Add the crushed tomatoes, salt, oregano & basil. Add the red pepper if you like it spicy.
  • 2. Cook on low (bubbles should barely break the surface) for about 20 minutes or until oil comes to the top. Stir it occasionally so it doesn't burn on the bottom.
  • 3. Use it immediately or store in the refrigerator or freezer.

1 1/2 teaspoons active dry yeast
1 1/2 cups warm water (about 110˚)
2 cups bread flour
1 3/4 cups all-purpose flour, plus more for kneading
2 teaspoons sugar
2 teaspoons kosher salt
2 tablespoons extra-virgin olive oil, plus more for the bowl
1 15-ounce can crushed tomatoes
1 small clove garlic, grated
1 teaspoon extra-virgin olive oil
1/4 teaspoon dried oregano
Pinch of sugar, plus more if needed
Kosher salt and freshly ground pepper
All-purpose flour or cornmeal, for dusting
2 tablespoons grated Parmesan cheese
2 ounces fresh mozzarella cheese, torn
1 heaping cup freshly grated low-moisture mozzarella cheese

Steps:

  • Make the dough: Sprinkle the yeast over the hot water in a small bowl. Let stand until dissolved and slightly foamy, 5 to 10 minutes.
  • Meanwhile, whisk the bread flour, all-purpose flour, sugar and salt in a large bowl and make a well in the center. Pour the yeast mixture into the well and add the olive oil. Stir with a wooden spoon until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface, dust the dough with flour and knead, dusting with more flour as needed, until very smooth and elastic but still slightly tacky, 3 to 5 minutes.
  • Transfer the dough to an oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours. Divide the dough into two 1-pound balls; wrap one ball in plastic and refrigerate for up to 2 days or freeze for up to 3 months. Bring to room temperature before using.
  • Make the pizza sauce: Combine the tomatoes, garlic, olive oil, dried oregano, sugar and a pinch each of salt and pepper in a medium bowl; season with more salt and sugar if needed. (Makes about 1 1/2 cups.)
  • Make the pizza: Preheat the oven to 500˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet in the lower third of the oven. Working on a lightly floured or cornmeal-dusted piece of parchment, gently stretch and press the other ball of dough into a 12- to 13-inch round. Cover the dough with 1/2 cup pizza sauce, the Parmesan, torn mozzarella and grated mozzarella, leaving a 3/4-inch border.
  • Transfer the pizza (on the parchment) to the hot stone and bake until the crust is set, about 5 minutes. Slide out the parchment from under the pizza; continue to bake until the crust is golden brown and the cheese is melted, 5 to 10 minutes. Slide the pizza onto a cutting board.

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
2 cloves garlic, finely minced
1 1/2 teaspoons oregano
1/8 teaspoon red pepper flakes
1/4 teaspoon Kosher salt, or to taste
1 medium yellow onion, peeled and split in half
1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • Push tomatoes and their juices through a food mill or pulse in a food processor until pulverized into a chunky puree. Set aside.
  • In a medium saucepan over medium-low heat, combine 2 tablespoons of butter and 1 tablespoon of olive oil, until butter is melted. Add 2 cloves of garlic, 1 1/2 teaspoons of oregano, 1/8 teaspoon of red pepper flakes, and 1/4 teaspoon salt and cook, stirring, for about 3 minutes.
  • Add tomatoes, onion, and 1 teaspoon of sugar. Bring to a simmer, reduce heat to the lowest setting and cook, stirring occasionally, for about 1 hour. Add more salt if necessary. Remove and discard onion.
  • Let cool and store unused portion in a container in the refrigerator for up to two weeks, or pour into zip-top bags and freeze.

14 1/2 ounces hunts whole canned tomatoes
2 garlic cloves, minced in food processor
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/4 teaspoon salt
1/4 teaspoon Lawry's Seasoned Pepper or 1/4 teaspoon ground black pepper
1/4 teaspoon brown sugar
1/4 teaspoon onion powder
1/8 teaspoon mccormick crushed red pepper flakes

Steps:

  • In a bowl, blend the garlic, the tomatoes and all other ingredients and crush the tomatoes by hand. Place the minced garlic, tomatoes and all other ingredients in a food processor and process until tomatoes are crushed, but not pureed.
  • Spread evenly on pizza dough and top with cheese, pepperoni, etc. Makes enough sauce for 2 - 12"-inch pizza.

1 (28 ounce) can whole canned tomatoes
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 medium garlic cloves, grated on microplane grater (about 2 teaspoons)
1 teaspoon dried oregano
1 pinch red pepper flakes
kosher salt
2 sprigs fresh basil, with leaves attached
1 medium yellow onion, peeled and chopped fine
1 teaspoon sugar

Steps:

  • Process tomatoes and their juice through food mill, pulse in food processor until pureed, or puree with hand blender. Puree should not be completely smooth, but should have no chunks larger than 1/16 of an inch. Set tomatoes aside.
  • Combine butter and oil in medium saucepan and heat over medium-low heat until butter is melted. Add garlic, oregano, pepper flakes, and large pinch salt and cook, stirring frequently, until fragrant but not browned, about 3 minutes. Add tomatoes, basil sprigs, onion halves, and sugar. Bring to a simmer, reduce heat to lowest setting (bubbles should barely be breaking the surface), and cook, stirring occasionally, until reduced by 1/2, about 1 hour. Season to taste with salt. Allow to cool and store in covered container in the refrigerator for up to 2 weeks.

2/3 cup warm water (110° to 115°)
2 tablespoons olive oil
1 teaspoon salt
1-3/4 to 2-1/4 cups all-purpose flour
1 can (8 ounces) tomato sauce
2 cups shredded mozzarella cheese
1/2 cup grated Romano cheese
1/4 cup chopped fresh basil
2 teaspoons dried oregano
1 teaspoon crushed red pepper flakes

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine oil, salt, yeast mixture and 1 cup flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., Preheat oven to 475°. Grease a 14-in. pizza pan. Roll dough to fit pan. Pinch edge to form a rim. Cover and let rest 10 minutes. Spread with tomato sauce; top with cheeses, basil, oregano and pepper flakes.
