I have not tried this recipe from The James Beard Cook Book, a book I bought at a yard sale. But a previous owner of the book sure did; the book often opens automatically onto this spattered page.

2 lbs cabbage
1 cup mayonnaise
1/2 cup sour cream
1 lemon, juice of
1 tablespoon horseradish (or to taste)
1 tablespoon sugar (or to taste)
1 teaspoon dry mustard
salt and pepper

Steps:

  • Shred cabbage, and soak in cold salted water for one hour.
  • To prepare dressing, combine all remaining ingredients together.
  • When ready to prepare salad, drain cabbage well and toss with dressing.

If you are a horseradish lover then you will love this coleslaw --- plan ahead this needs to chill for a minimum of 8 hours or overnight and all ingredients may be adjusted to taste --- this is *very* good!

2 tablespoons rice vinegar
2 tablespoons fresh lemon juice
3/4 cup mayonnaise (do not use salad dressing!)
2 -3 tablespoons prepared horseradish (or to taste)
2 -3 teaspoons dried basil
1 head cabbage, shredded
2 large carrots, grated
3 green onions, finely chopped (or to taste)
1 tablespoon seasoning salt (can use less)
black pepper

Steps:

  • In a large bowl combine the first 5 ingredients; add in the shredded cabbage, carrots and green onions (if using) toss well to combine.
  • Season with seasoning salt and black pepper.
  • Cover and chill for a minimum of 8 hours or overnight.

1 head green cabbage (about 2 lb)
2 cups mayonnaise or salad dressing
2 tablespoons prepared horseradish
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar (omit if using salad dressing)
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon freshly ground pepper
1 clove garlic, finely chopped
3 medium carrots, shredded (1 1/4 cups)

Steps:

  • Use sharp knife to cut cabbage head into quarters and remove core. Place 1 quarter, flat side down, on cutting board. Slice cabbage thinly with knife. Cut slices several times to make smaller pieces. Repeat with remaining quarters. You will need about 10 cups shredded cabbage.
  • In large bowl, mix mayonnaise, horseradish, vinegar, mustard, sugar, salt, celery seed, pepper and garlic. Add carrots and cabbage. Stir well to combine. Serve immediately or refrigerate up to 3 hours.

1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup whole-grain mustard
1/4 cup milk
2 tablespoons prepared white horseradish
2 tablespoons sugar
1 teaspoon celery seed
2 dashes hot sauce
Kosher salt and freshly ground black pepper
1 cup shredded carrots
2 apples, peeled and finely diced
1 medium jicama, shredded
1 red onion, thinly sliced
1/2 head green cabbage, finely sliced
1/2 head red cabbage, finely sliced
Fresh cilantro leaves, for garnish

Steps:

  • In a large bowl, whisk together the mayonnaise, sour cream, mustard, milk, horseradish, sugar, celery seed, hot sauce and some salt and pepper. Taste and adjust the seasoning.
  • In a separate large bowl, add the carrots, apples, jicama, onions and cabbage. Add half the dressing and toss to coat. Add more dressing if needed. Garnish with cilantro and serve.

2 (16 ounce) bags coleslaw mix (don't use dressing they provide)
1/2 cup scallion
2 granny smith apples, peeled and diced
1/2 fresh lemon
1/2 cup cider vinegar
1/4 cup sugar
1 1/2 teaspoons salt
1 teaspoon ground pepper
3 tablespoons horseradish
1 cup mayonnaise
1/4 cup sour cream
1 tablespoon stone ground mustard

Steps:

  • In small bowl, pour lemon juice over apples.
  • In another bowl, combine slaw mix with green onions.
  • Toss these together.
  • In a separate bowl, combine vinegar, sugar salt and pepper. Make sure sugar is dissolved.
  • Pour vinegar mixture over apples and cabbage mixture, cover and refrigerate for 30 minute.
  • In another bowl, combine, mayo, sour cream, horseradish and mustard.
  • After 30 minutes, toss with cabbage mixture.
  • Refrigerate before serving.

2 10-inch-diameter flour tortillas or one 4 1/2-ounce sheet soft lavash bread, trimmed to 20-inch length
8 ounces thinly sliced roast beef
1 7-ounce jar roasted red peppers, drained, sliced
1/2 cup chopped green onions

Steps:

  • Heat large skillet over medium heat. Add 1 tortilla to skillet and heat until soft, about 1 minute per side; transfer to work surface. Repeat with second tortilla. Alternatively, open lavash on work surface. Spread half of coleslaw mixture on each tortilla or all of coleslaw on lavash, leaving 1/2-inch border at edges. Arrange beef, roasted peppers and green onions over coleslaw mixture. Starting at edge of tortillas or at 1 long side of lavash, roll up, enclosing fillings. Cut tortillas in half or lavash into 4 pieces.

Steps:

  • In a large mixing bowl, combine the green and red cabbages, carrots, and green onions. In a small bowl, toss the cubed apples with the lemon juice and add to the cabbage mixture.
  • In a small mixing bowl, combine the sugar, vinegar, salt, and pepper and whisk until the sugar is dissolved. Pour the seasoned vinegar mixture over the cabbage mixture and toss to thoroughly combine. Cover with plastic wrap and refrigerate for 20 to 30 minutes.
