1 cup rolled oats
1/2 cup butter
1 cup packed brown sugar
1 cup sugar
2 large eggs
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 cup brown sugar (, packed)
1/2 cup sugar
1 cup flaked coconut
6 tablespoons butter (, melted)
1/4 teaspoon vanilla extract
1/4 cup cream

Steps:

  • Preheat oven to 350 degrees. Grease and flour 13x9 inch baking pan.
  • In a small bowl, pour boiling water over oats, mix well and leave soaking until cooled.
  • In a large bowl, combine butter, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt.
  • Fold in cooled oatmeal mixture until just combined.
  • Pour batter into pan and bake for 35 minutes. Prepare frosting while cake is baking.

Vegetable shortening, for greasing pans
1 ¼ cups boiling water
1 cup uncooked old-fashioned regular rolled oats
1 ½ cups (about 6 ⅜ oz.) all-purpose flour, plus more for pan
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon kosher salt
½ cup (4 oz.) salted butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
2 teaspoons vanilla extract
2 large eggs, at room temperature
6 tablespoons (3 oz.) salted butter
1 cup packed light brown sugar
6 tablespoons canned evaporated milk
1 ½ cups sweetened flaked coconut
¾ cup toasted chopped pecans

Steps:

  • Prepare the Cake: Preheat oven to 350°F. Grease (with shortening) and flour a 13- x 9-inch broiler-safe baking pan.
  • Stir together boiling water and rolled oats in a small heatproof bowl; let stand until room temperature, about 30 minutes, stirring occasionally to soften oats.
  • Meanwhile, whisk together flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl. Beat butter, granulated sugar, brown sugar, and vanilla in bowl of a stand mixer fitted with a paddle attachment on high speed until light and fluffy, 3 to 4 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour mixture in 2 additions, beating on low speed until just combined. Beat in oatmeal mixture on low speed until just combined.
  • Scrape bowl, and stir well with a rubber spatula. Pour batter into prepared pan. Bake in preheated oven until a wooden pick inserted into center comes out clean, 30 to 35 minutes. Cool in pan on a wire rack 10 minutes. (The cake should be warm, but not hot when topping is added.) Increase oven temperature to broil.
  • While the cake cools, prepare the Topping: Bring butter, brown sugar, and milk to a simmer in a medium saucepan over medium-high, stirring to melt butter. Cook, stirring constantly, 1 minute. Remove from heat, and stir in coconut and nuts.
  • Immediately spread topping over warm cake. Broil on center rack in preheated oven until topping bubbles and begins to brown, 2 to 3 minutes. (Watch cake carefully to avoid scorching.) Cool cake to room temperature, about 1 hour. Store at room temperature an airtight container or wrapped in plastic wrap up to 4 days.

COOKED CARMEL FROSTING
1 1/2 c brown sugar
2 Tbsp butter
3/4 c milk or cream

  • 1. Pour water over oats and cover and let stand 20 minutes. Beat butter til creamy,gradually add sugar and beat til fluffy. Blend in eggs,vanilla and oats and mix well.
  • 2. Add flour, baking soda,salt,cinnamon and nutmeg to creamy mixture. Mix well. Pour into greased and floured 9" pan. Bake at 350 degrees F for 50-55 minutes
  • 3. CARMEL FROSTING: Cook sugar and cream until it forms a soft ball. Add vanilla and butter. Cool. Beat til consistency to spread.

1/2 cup half-and-half cream

Steps:

  • In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. 1 teaspoon baking powder

2/3 cup packed brown sugar

2 tablespoons milk
1/2 cup coconut flakes

Steps:

  • Preheat oven to 350°F.
  • Beat eggs in mixing bowl until frothy; beat in sugar in 4 or 5 separate additions; stir in vanilla.
  • Next, stir in flour, baking powder and salt.
  • Heat milk and butter together in small saucepan just until hot; add to batter, stirring slowly and carefully.
  • Scrape into a greased 9-inch square cake pan and bake for about 25 minutes, or until cake tests done with a toothpick.
  • Make topping-- combine last 4 ingredients together in a small saucepan; heat and stir until hot and sugar is dissolved.

3 cups dried white pea beans or 3 cups dried navy beans, cleaned
1 large onion
1/2 lb salt pork
1/2 cup sugar, a little under
2 tablespoons brown sugar
2 tablespoons molasses
2 teaspoons dry mustard
1/2 teaspoon pepper
1 teaspoon salt, if salt pork has mostly meat in it or 1 tablespoon salt, if salt pork has mostly fat in it

Steps:

  • Clean beans of pebbles and rocks.
  • Put cleaned beans in pot. Set aside.
  • Mix sugars, molasses, and mustard. Add salt and pepper. Mix into beans.
  • Add enough water to cover beans.
  • Place salt pork down into beans. You can opt to cut it up, or leave it whole, like my gram used to do.
  • You can also put the onions in whole, or opt to chop them up. She used to keep them whole, so us kids could fight over them lol.
  • Bake in bean pot, at 200 degrees, all night or 8 hours If not done, finish in the morning.
  • When beans are ready to be eaten, turn oven up to 450 until beans start to boil, then turn back to 200, until ready to serve.
  • Note: If beans look like they are drying out, just add water as you are cooking.

1 teaspoon baking powder
3/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup milk
1 tablespoon butter
1 teaspoon vanilla
5 tablespoons brown sugar
3 tablespoons milk
3 tablespoons butter
1/2 cup coconut
1/2 cup chopped walnuts

Steps:

  • Beat eggs and add sugar until fluffy.
  • Sift flour, salt and baking powder.
  • Add to egg mixture and mix until well combined.
  • Heat milk and butter to boiling point, add to batter and add vailla.
  • Beat slightly.
  • Pour into a greased 8x8 pan. Bake at 350 for 30 minutes.
  • When done add topping right away.
  • Topping.
  • Mix brown sugar, milk, butter, coconut and nuts in a pot on stove until suagr has dissolved.
  • Put on cake.
  • Put back in the oven on broil until very light brown on the top.
  • Remove from oven and cool completely before serving.
