- Place the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender. Drain; place potatoes in a large bowl. Add the cream cheese, sour cream, milk, onion, garlic salt and salt; beat until blended., Transfer to a greased 2-qt. baking dish. Drizzle with butter; sprinkle with paprika. Cover and bake at 350° for 30-35 minutes or until heated through.

- Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
- Drain potatoes; reserve water for mashing, if necessary. Add sour cream, cream cheese, onion salt, garlic powder, and pepper; beat until creamy. Pour into the prepared dish. Cover with Cheddar cheese, parsley, and paprika.
- Bake, uncovered, until cheese is bubbly, about 35 minutes.

GOURMET MASHED POTATO CASSEROLE
This recipe was given to me years ago by a very good friend who was an excellent cook. I have made it over and over again. My husband loves it! I have never had it with mashed potatoes, only riced!! Great to make ahead, refrigerate, bring to room temperature and cook when needed!!

Steps:
- Boil potatoes in salted water to cover until tender.
- Mash or rice potatoes.
- Whiles still hot, add sour cream, cottage cheese, onion, butter or margarine, pepper and salt, and mix well.
- Place in casserole.
- Sprinkle parmesan on top.
- Bake in preheated 325 degree oven for 30 minutes.
- Recipe easily doubled.

MASHED POTATO CASSEROLE
Steps:
- 1. Adjust oven rack to upper-middle position and heat oven to 375 degrees. Bring potatoes and water to cover by 1 inch to boil in large pot over high heat. Reduce heat to medium and simmer until potatoes are tender, about 20 minutes. 2. Heat half-and-half, broth, butter, garlic, mustard, and salt in saucepan over medium-low heat until smooth, about 5 minutes. Keep warm. 3. Drain potatoes and transfer to large bowl. With electric mixer on medium-low speed, beat potatoes, slowly adding half-and-half mixture, until smooth and creamy, about 1 minute. Scrape down bowl; beat in eggs 1 at a time until incorporated, about 1 minute. Fold in chives. 4. Transfer potato mixture to greased 2-quart baking dish. Bake until potatoes rise and begin to brown, about 35 minutes.
MASHED POTATO CASSEROLE
Steps:
- Mash cooked potatoes, add cream cheese and butter. Beat till melted and mixed well. Mix in sour cream. Mix together eggs, onion, and milk and add to potatoes along with salt and pepper. Beat with electric mixer till light and fluffy. Place in a greased 9" casserole and refrigerate. Bake at 350 for 45 min. till lightly brown.

- Peel, chop, and boil (about 20-25 minutes) the potatoes. Drain.
- Mix (preferably with a hand mixer) with cream cheese, sour cream, and seasonings.
- Mix in two handfuls of shredded cheese.
- Pour into a greased pan and top with more shredded cheese.
- Cook at 350F until heated (about 30 minutes).

This is a dish my sister-in-law used to make, when she cooked years ago. It is not for those that are watching their weight. Very good and easy to make.

- Pre-heat oven to 350 degrees.
- Cook and mash the potatoes.
- Add the cream cheese, 1/2& 1/2, butter, onion salt, seasoned salt, regular salt& pepper to taste.
- Beat together till fluffy.
- Place in 9x13 inch casserole.
- Brush top with butter and sprinkle with paprika.
- Bake in oven at 350 degrees for about 35 to 45 minutes or until heated through.
