WORLD'S BEST FRIED ZUCCHINI
I have loved this ever since I was a little girl. It takes a while to make but it's really easy and totally worth it. Cooked zucchini is the best!! **However, I must mention that I use garden zucchinis for this recipe that tend to be quite a bit larger than those purchased in a grocery store. If you are using smaller zucchinis, you will need less of the coating mixture.

Steps:
- Heat electric fry pan to 250°F.
- Mix eggs and milk in bowl.
- Soak handful of zucchini slices in mixture.
- Lightly shake them off and coat them with flour.
- Place each slice in the fry pan with plenty of butter.
- Repeat until all slices are in the pan.
- Cook until each side is dark brown.
- Salt and pepper slices to taste.
- Enjoy!
NEELY'S FRIED ZUCCHINI

Steps:
- Preheat oil in a deep-fryer to 350 degrees F.
- Measure flour into a pie plate. In another pie plate combine panko, Parmesan, parsley, red pepper flakes and salt and pepper, to taste. In a third plate add eggs and water. Dredge the zucchini in the flour, followed by the egg and finally in the panko.
- Working in batches, place the breaded zucchini slices in the hot oil and fry until golden brown, 3 to 4 minutes. Drain on a paper towel lined sheet tray and immediately season with salt and pepper. Serve alongside the zucchini.
- For the sauce:
- Add all the ingredients into a serving bowl and mix until incorporated. Cover with plastic wrap and let flavors marinate for at least 1 hour.
FRIED ZUCCHINI
First let me say this recipe is not for the person who is on a diet! It is loaded with fat and is a comfort food. Sometimes I add a can of mushrooms to the recipe. You can also sprinkle parmesean cheese over the top of vegetables at the end of cooking time. You can use larger zucchini but depending on the size of the zucchini you might want to cut the slices in quarters. I have been making this for my family for years and they love it!

- Melt butter in frying pan over a medium high heat.
- Add zucchini and Natures Seasoning Blend and stir to mix well.
- Cover pan and turn heat down to medium or lower depending on your burner.
- Keep and eye on vegetables and stir often making sure not to burn vegetables.
- This should take about 10 minutes.

OLD FASHIONED FRIED ZUCCHINI STRIPS
My mom used to make fried zucchini and I think my grandma (her mom) did too out of all of those great fresh garden picks in Pennsylvania. I love this flavor but wanted to make it my way, with a dipping sauce.

- Make the sauce by mixing together all sauce ingredients. Season with salt and pepper to taste.
- Whisk together Buttermilk and eggs in a shallow bowl.
- In a separate shallow bowl, mix together flower, corn meal, salt, pepper, and italian seasoning blend.
- Create a breading station using one hand for wet and another for dry ingredients. Dip each Zucchini Strip in the egg mixture and cover with the dry mixture. Shake off excess.
- Heat Butter and Olive Oil in a large skillet over medium high heat. Fry the breaded zucchini in the pan. Cook on each side for approximately 2 minutes or until browned and crispy on each side. You may need to do this in batches depending on size of pan.
- Serve family style with the dipping sauce.

- Combine egg and water in a shallow dish.
- Combine breadcrumbs, basil and garlic powder in another shallow dish.
- Dip zucchini slices first into egg mixture, then in crumb mixture to coat evenly.
- Let set on cooling rack.
- Heat oil in a large nonstick skillet over medium heat.
- Fry zucchini in hot oil for 3 minutes or until lightly browned.
- Turn zucchini over and cook for 3 minutes or until tender and lightly browned.
- (Or deep fry 3 minutes in vegetable or canola oil.) Serve immediately.

FRIED ZUCCHINI BATTER
Recipe from box of Argo Cornstarch in the early 80's. This batter is light and tasty. Posting recipe as request from one of my sons. This batter is great for zucchini, but can be used on any thing you would like to fry up! Many reviews complain of the lack of seasoning. I have taken the garlic powder up to 1 tsp. and it helps, a dash of hot sauce works well too. If you must, sprinkle lightly with additional salt immediately after removing from the frying oil. Another tip - I prefer the thinner batter for a lighter and crunchier coating on the veggies (the thicker batter just seems to be too doughy for our tastes).
