Another recipe from Diane Mott Davidson's Goldy Bear character. Like pecan pie, only easier to pick up. Yum!!

1/2 cup unsalted butter
1/2 cup dark brown sugar
1 cup all-purpose flour
1 -2 cup pecan halves
2 eggs
1 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
additional flour (see below)
1 cup chocolate chips

Steps:

  • Preheat oven to 375.
  • In a food processor, combine the first three ingredients with a metal blade until coarse crumbs are formed. (can also bedone with 2 knives or a pastry cutter).
  • Pat as a crust into a buttered 9x13 pan.
  • Bake for 10 minutes, then cool completely.
  • Spread pecans over cooled crust.
  • Beat eggs with brown sugar until thick.
  • Add vanilla.
  • Put salt and baking power in the bottom of a 1/4 cup measure, then fill the rest of the measure with flour.
  • Stir this into egg mixture.
  • Pour this mixture over the pecans and crust.
  • Sprinkle chips over the mixture.
  • Bake at 375 for 20 minutes or until center is set.
  • Let cool before cutting.

1 cup unsalted butter (softened)
3 ounces cream cheese (softened)
1/2 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
36 strawberries, small (hulled and halved)

Steps:

  • Set over to 350°F
  • In mixing bowl, beat the butter with cream cheese until well blended.
  • Beat in the sugar and vanilla, then stir in the flour until well mixed.
  • Using a 1/2-tablespoon measure, shape the mixture into small balls and place 2 inches apart on ungreased cookie sheets.
  • Make a small indentation in the top of each cookie with your thumb.
  • Carefully place a strawberry half, cut side down, in each indentation.
  • Bake for 12 to 18 minutes, or until very lightly browned.
  • Cool on racks.

1/2 cup vegetable shortening
1/2 cup unsalted butter
2 cups dark brown sugar, firmly packed
2 large eggs
1/2 cup buttermilk
2 teaspoons vanilla
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup sweetened flaked coconut
1 cup macadamia nuts, coarsely chopped
1 1/2 cups raisins
3 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • In large bowl beat the shortening, butter and brown sugar together until smooth.
  • Beat in the eggs and then stir in the buttermilk and vanilla. Blend the flour, baking soda and salt together in a small bowl; stir flour mixture into the butter mixture until incorporated. Stir in the coconut, nuts, raisins and chocolate chips.
  • Drop by level half tablespoons onto greased cookie sheets. Bake for 7-10 minutes, until the cookies are puffed and slightly brown.
  • Cool an a rack. These cookies keep well in an airtight tin.

1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter
1 cup raisins
1 tablespoon caraway seed
1 large egg
1 1/4 cups buttermilk
1/4 cup sour cream

Steps:

  • Set oven to 350°F
  • Butter a 9-inch round cake pan.
  • Sift together the dry ingredients.
  • Using a food processor with the steel blade or a pastry cutter, cut the butter into the flour mixture until it resembles small peas.
  • Blend in the raisins and caraway seeds.
  • Beat the egg, buttermilk, and sour cream together until blended.
  • Stir the egg mixture into the dry mixture just until blended.

2 1/4 cups oats, old fashioned
12 ounces almond brickle chips
1 2/3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup brown sugar
3/4 cup sugar
1 cup butter (sweet)
2 large eggs
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 375.
  • In a small bowl, mix the oats with the brickle chips.
  • Sift the flour, baking soda, baking powder, and salt together.
  • In a food processor, mix the sugars until blended, then gradually add the butter.
  • Continue to process until creamy and smooth.
  • Add the eggs and vanilla and process until blended.
  • Add the flour mixture and process just until combined.
  • Pour this mixture over the oats and brickle chips and stir until well combined.
  • Using a 1/8 cup measure, scoop out dough and place 3" apart on ungreased cookied sheets.
  • Bake 12 to 15 minutes, or until golden.

1 cup unsalted butter
3 1/2 ounces best quality unsweetened chocolate
3 tablespoons european style unsweetened cocoa powder
1 1/2 cups all-purpose flour (high altitude, add 2 tbsp)
1/2 teaspoon baking powder
1 teaspoon salt
4 eggs
2 cups sugar
1 teaspoon vanilla extract
1 cup good quality chocolate chips

Steps:

  • preheat oven to 350 degrees (high altitude 375).
  • Melt butter with unsweetened chocolate in a double boiler.
  • Set aside to cool.
  • Sift together cocoa, flour, baking powder and salt.
  • Beat eggs until creamy, and slowly add the sugar, beating constantly.
  • Add vanilla and cooled chocolate/butter mixture.
  • Stir in dry ingredients until just combined.
  • Spread batter in buttered 9x13 pan.
  • Sprinkle chocolate chips over surface.
  • Bake for 30-35 minutes or until center is set.
  • Let cool before cutting.

SKIERS SWISS CEREAL (RAINY DAY BREAKFAST)

I found this in a Diane Mott Davidson mystery book. It is SO easy and flavorful, put it together the night before then cook it on the stove top in the morning. Never a big fan of porridge or oatmeal, this one changed my mind. I use all sorts of different fruit depending on mood and what is at hand. Apples, blueberries, or banana along with the mentioned dried cherries work perfectly. As do raisins and nuts. The sitting overnight lets the fruit flavor permeate the oats and milk and you end up with ambrosia. hmm coconut would be good to try it with as well. lemon or lime zest? the combinations to taste are endless. *runs for my pantry*

1 teaspoon orange zest, very finely chopped
1/2 teaspoon cinnamon
2 tablespoons dried tart cherries
2 cups skim milk, i use half and half

Steps:

  • The night before, combine the oats, zest, cinnamon, and cherries in a glass bowl. Stir well, then stir in the milk. Cover with plastic wrap and refrigerate.
  • In the morning, place the mixture in a medium-sized saucepan and bring it to a simmer.
  • Lower the heat and cook, stirring frequently, for 4 to 6 minutes, or until the oats are tender and the mixture is thick.
  • Serve immediately, either as it is or with brown sugar or granulated sugar, and cream, butter, or milk.
