GOLDEN GRANITA FRUIT BALLS
This is from Arnott's, a tasty little snack or lunchbox treat. Uses Fruit medley which is a mixture of dried apple, apricot, sultanas & raisins.

Steps:
- In a bowl, combine biscuits, fruit, desiccated coconut and rice bubbles.
- In a saucepan add condensed milk, butter and golden syrup and heat over medium heat for a couple of minutes, stirring constantlly, until butter melts then cook, stirring, for a further 3 minutes. Pour onto dry ingredients and stir until combined. Let cool slightly.
- When mixture cools, roll spoonfuls into balls and toss in shredded coconut until coated. Place onto a tray and refrigerate for 30 minutes or until firm.

RUBY GRAPEFRUIT GRANITA
A granita can be made from any kind of fruit juice of your liking and makes a refreshing dessert in any season. Including a bit of grapefruit pulp here makes this rendition burst with bright flavor.

- Halve the grapefruits crosswise, and squeeze juice into a large wide bowl, allowing any pulp to fall in. Use a teaspoon to pluck out any seed or pith in the bowl.
- Whisk in sugar until completely dissolved. Pour mixture into a low baking dish to a depth of 1/2-inch. (A 9-by-13-inch baking dish will work.) Place the dish in the freezer for at least 4 hours or overnight, until frozen solid. The frozen mixture will look like packed snow.
- Use a fork to smash the frozen mixture into rough chunks and transfer to 6 serving glasses. Place glasses in the freezer until serving time. If desired, add 1/2 teaspoon orange flower water per glass.
RAW VEGAN CHOCOLATE FRUIT BALLS
My mom and I make these raw fruit balls all the time and they are absolutely delicious. We use raw almonds, cashews and macadamias as our nutty blend. But you could use any nuts that tickle your festive fancy. Just know that each nut mix will yield a treat of a different personality. Roll out these vegan treats. They make great snacks in school or work lunch boxes; great power snacks for a long work out; or a great little bite to put beside a cup of herbal tea. These will last in a sealed glass container in the fridge for weeks. But they never do!

Steps:
- Mix the coconut and cinnamon in a small bowl and set aside for rolling.
- Put all other ingredients in a food processor, and slowly add in the orange juice if it doesn't bind together completely.
- Roll into small balls and coat with the coconut mixture.
- Store in a sealed glass container in the fridge.
FRUIT BALL
I tried this recipe at a party once and loved it. It is a very sweet "dip" but very addictive. I usually serve it with Wheat Thins. Although this is very quick and easy to make, it needs time to chill.

- In medium bowl, mix cream cheese, fruit cocktail and instant pudding.
- Add 1/4 cup almonds, if desired.
- Mix very well.
- Shape into one large ball or two smaller bolls and roll in remaining almonds.
- Chill to set.
- Serve with crackers.
COCONUT FRUIT BALLS
Healthy little treats for people with sweet tooths. I've made these during the holiday season to bring to functions and was enjoyed by all. I'm really finicky on getting all the dried fruit the same size so it took me a little longer then 20 mins to put this recipe together.

Steps:
- Finely chopped sultanas, dates and apricots and place them in a mixing bowl. Mix well.
- Add cinnamon and mix well.
- Add enough condensed milk (roughly a tablespoon) to make it sticky so the fruit sticks together more easily.
- Place a teaspoon of mixture in palm of hand and mould/squish/squeezing mixture into a small ball.
- Place desiccated coconut on plate and roll balls in desiccated coconut, coating the whole ball.
- Store in refrigerator until your ready to use.
- Enjoy.

- Add the 1/4 cup sweetened condensed milk; process until combined.

- Place additional coconut or finely chopped pecans in a shallow bowl.
