"MY SISTER and I loved this salad because we thought it tasted like a dessert. We ate a lot of Jell-O when we were growing up, but this was our favorite gelatin dish. I always make this salad for picnics. I provides a fruit and a vegetable, and bright color as well."

Number Of Ingredients 7

1 package (3 ounces) orange gelatin
1 cup boiling water
1 can (8 ounces) crushed pineapple
1 tablespoon lemon juice
Cold water
1/4 teaspoon salt, optional
3/4 cup finely shredded carrots

Steps:

  • In a bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice. Add lemon juice and enough cold water to pineapple juice to make 1 cup; add salt if desired. Stir into gelatin. Chill until slightly set. Stir in pineapple and carrots. Pour into an oiled 4-cup mold; cover and chill until firm. Unmold.

1 (10 ounce) can cheddar cheese soup
1/2 cup mayonnaise
1 teaspoon onion juice
1 teaspoon Tabasco sauce
1 tablespoon dry vermouth

Steps:

  • Mix all ingredients well in a quart jar.
  • Refrigerate until ready to serve.

This was given to me by my friend Sheila. Great recipe for a meatless Monday or if you're a vegetarian. This is one recipe you need to try. Also this recipeis such a versatile. Add shredded chicken more vegetables, like broccoli, pinto beans, kidney beans or black beans would be great. A good base recipe to make your own. Hope you enjoy!!

Number Of Ingredients 14

1 tablespoon butter or 1 tablespoon margarine
1 tablespoon oil
1/2 cup chopped onion
1/2 cup grated carrot
1 minced garlic clove
1 teaspoon oregano (optional)
3 tablespoons all-purpose flour
1 (15 ounce) can vegetables or 1 (15 ounce) can beef broth
1 cup chopped tomato
8 -10 soft tortillas
1/2 lb monterey jack cheese
1/2 lb cheddar cheese
2 chopped green onions
pepper

Steps:

  • Preheat oven to 375.
  • Divide the cheese and green onions into 8-10 portions, reserving some to put on top.
  • Melt butter and oil in a large skillet. Sauté onion, carrots and garlic until soft. Stir in the flour, pepper and oregano.
  • Cook for 1-2 minutes.
  • Gradually stir in the broth, being careful to whisk out any lumps of flour.
  • Add tomatoes.
  • Heat to boiling, reduce to simmer.
  • Cover and cook 20-30 minutes.
  • Soften tortillas one at a time in the sauce.
  • Place some of the cheeses and green onions in the center and roll.
  • Place seam side down on a lightly buttered baking dish.
  • Cover with remaining sauce, cheese and green onions.
  • Cover and bake for 20 minutes.

1 package (16 ounces) frozen French-style green beans, cooked and drained or 1 can (14-1/2 ounces) French-style green beans, drained
1/2 cup sliced celery
1/2 cup sliced unpeeled cucumber
4 radishes, sliced
4 medium tomatoes, cut into wedges
Lettuce leaves
DRESSING:
1 hard-boiled large egg, chopped
1 tablespoon dried minced onion
1/4 cup vinegar
1/2 cup vegetable oil
1/2 teaspoon salt
1/8 teaspoon curry powder

Steps:

  • In a bowl, lightly toss green beans with celery, cucumber and radishes. Chill. , Arrange tomatoes on a lettuce-lined platter. Fill center with vegetables. Combine dressing ingredients; just before serving, pour over salad.
