Creamy Goat Cheese and Honey image

Creamy goat cheese is lightly dusted with pecans, honey, and rosemary. These are so delicious, light, and refreshing, they could be served as appetizers or an interesting dessert. They are always a hit! Spread them on your favorite crostini, bagel chips, or melba toasts.

4 ounces fresh goat cheese
2 ounces finely chopped pecans
2 tablespoons honey
1 teaspoon ground cinnamon
2 sprigs fresh rosemary, minced

Steps:

  • Divide the goat cheese into 12 equal portions. Roll each portion into a ball. Combine the crushed pecans and cinnamon in a bowl. Roll each goat cheese ball in the pecan mixture until covered. Gently pat the balls into patties; transfer to a serving plate. Drizzle honey over the patties and sprinkle rosemary on top. Serve immediately.

Here's what you need: puff pastry, large goat cheese log, maple syrup, honey crystal, pecan, egg, water, turbinado sugar

1 package puff pastry, thawed
1 large goat cheese log, softened
¼ cup maple syrup
honey crystal, optional
pecan, or walnut, in pieces
1 egg
1 tablespoon water
turbinado sugar, for topping

Steps:

  • Remove 1 sheet of puff pastry from the package from the freezer and goat cheese log from the refrigerator. Allow to thaw for 25 minutes.
  • Preheat your oven to 400°F. Line your baking sheet with parchment paper. Set aside.
  • Unwrap pastry dough, place between two sheets of parchment paper and roll with a rolling pin until it is a 12" by 12" square.
  • Lather on goat cheese as you see above, then drizzle your honey, sprinkle on your crystals, and finish with your pecans or walnut pieces.
  • Cut into 8 1" strips, then, fold each strip in half, stretch it out slightly then twist to make your sticks.
  • Repeat 7 more times.
  • Combine your egg and water to make a wash. Using a brush, lightly coat the pastry dough then sprinkle over with the turbinado sugar.
  • Bake for 20 minutes.
  • Remove from the oven, allow to set for 3 minutes.
  • Serve warm.

1/4 cup drained and chopped cherry peppers in brine, plus 1 teaspoon of brine
2 teaspoons honey
1/4 cup goat cheese

Steps:

  • Cook the latkes according to package instructions.
  • In a small bowl, whisk together the chopped cherry peppers, brine and honey. Spread a dollop of goat cheese on each latke. Top each with a spoonful of the cherry pepper mixture. Serve immediately.
