GLAZED LEMON CURD-FILLED COFFEE CAKE



Glazed Lemon Curd-Filled Coffee Cake image

A lip-smacking layer of lemon curd lies in the center of this crumb-topped coffee cake with a lemon glaze.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup lemon curd
3/4 cup confectioners' sugar
1 tablespoon lemon juice

Steps:

  • Put the flour, brown sugar, cinnamon and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the lemon curd on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.
  • When the cake is cool, whisk together the confectioners' sugar and lemon juice in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

1 ¾ cups white sugar
1 cup butter, softened
4 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 ½ teaspoons baking powder
1 (12 ounce) can cherry pie filling
½ cup powdered sugar
¼ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10x14-inch jelly roll pan.
  • Mix sugar, butter, eggs, and vanilla extract together in a large mixing bowl. Combine flour and baking powder in another bowl. Add to sugar mixture and mix until well blended.
  • Pour 3/4 of the batter into the prepared pan. Spoon cherry pie filling over the batter. Spoon remaining batter on top of pie filling (it won't cover it all).
  • Bake in the preheated oven until golden and a toothpick inserted into the center comes out mostly clean, 25 to 30 minutes.
  • Combine powdered sugar and milk in a bowl for frosting. Drizzle on top of coffee cake. Let cool slightly before cutting and serving.

1/2 cup Post Grape-Nuts cereal
1/2 cup sugar
2 teaspoons instant coffee
1 3/4 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup sour cream
1/2 cup butter, softened
2 large eggs
1/2 teaspoon vanilla
2 tablespoons cold brewed coffee
1 1/2 cups powdered sugar

Steps:

  • Mix cereal with 1/2 cup sugar, the instant coffee and cinnamon.set aside.
  • Mix flour with 1 cup sugar, baking soda, baking powder and salt in large mixer bowl.
  • Add sour cream, butter, eggs, and vanilla.
  • Blend at low speed of electric mixer, then beat 1 minute at medium speed.
  • Spread one third of the batter in a greased 8-inch square baking pan.
  • Sprinkle with half of the cereal mixture.
  • Repeat layers and top with remaining batter.
  • Bake at 350° for 45-50 minutes, or until cake tester comes out clean.
  • Cool in pan. Spread with easy coffee glaze.
  • To prepare glaze:.
  • Gradually blend 2 tablespoons cooled brewed coffee into 1 1/2 cups powdered sugar till smooth.
  • Makes enough to glaze top of 8 to 9-inch square or 10-inch tube pan.

This is very light and refreshing, this cake doubles the flavor and fragrance of fresh oranges. This is a recipe from Marywood in Grand Rapids, Michigan and Sister Paula.

1 pkg active dry yeast
1/4 c warm water
1/2 c warm milk
1/2 c fresh orange juice
1/2 c granulated sugar
1/2 c ricotta cheese
1 Tbsp grated orange zest
1/2 tsp salt
1 large egg, lightly beaten
3 1/2 to 4 c all purpose flour
glaze: 1 lg. egg, lightly beaten
icing: 1 cup powdered sugar
1 to 2 tablespoons fresh orange juice

Steps:

  • 1. In large bowl dissolve yeast in warm water. Let stand until foamy, 5 to 10 minutes. Stir the next 7 ingredients into the yeast mixture. --- Using a heavy-duty mixer with paddle and set on low speed, beat 2 cups of the flour into the yeast mixture until a wet dough forms. Beat in the remaining flour, 1/2 cup at a time, until a stiff dough forms.
  • 2. Place dough on a lightly floured surface and knead until smooth and elastic- about 5 to 10 minute, adding more flour as needed to prevent sticking. Place dough in a large greased bowl, turning to coat. Cover loosely with a damp cloth and let rise in a warm place until doubled, about 1 1/2 hours.
  • 3. Grease a 10-inch springform pan. Punch down the dough. Place on the floured surface again and knead for 1 to 2 minutes. Divide dough into 3 equal pieces. Roll each piece into a 20 inch long rope. Braid the ropes together.
  • 4. Coil braided dough in the pan; tuck ends under. Cover loosely with the damp cloth and let rise for 30 minutes ,but not doubled. Preheat oven to 425^.Brush the dough with the glaze of beaten egg. Bake until cake is golden brown , about 25-30 minutes. Turn the cake out onto a wire rack to cool slightly.
  • 5. Combine the icing ingredients together until smooth. Spread over warm cake. Serve warm of cold..Delicious.

Steps:

  • In a medium bowl, beat the first five ingredients together with an electric mixer until well combined. If the glaze starts to form peaks, add a little more milk. Set aside in a cool place.
  • In another bowl, mix together the flour, baking powder, and salt; set aside.
  • In a separate bowl, cream together the butter and sour cream until fluffy; add the sugar. Add eggs one at a time, then the vanilla. Gently fold in the flour mixture a little at a time until it is well combined.
  • Spread the batter into a 9x13-inch baking pan that has been lined with aluminum foil and liberally sprayed with cooking spray.
  • In a small bowl, mix the brown sugar, pecans, and cinnamon, cutting in the melted butter until the mixture is crumbly. Reserve.
  • Bake the cake in a preheated 350-degree oven for 20 minutes and apply half the glaze, followed by the pecan mixture. Bake for another 15-20 minutes or until a toothpick comes out clean.
  • Allow to cool in the pan for 10 minutes, then lift the foil out of the pan and place the cake on a wire rack. Remove the foil.
  • After 15 minutes, or just before serving, liberally drizzle with remaining glaze. Decorate with pecan halves if desired.
