Apple Bundt Cake With Caramel Glaze image

A wonderful very moist apple Bundt cake with a delicious caramel glaze. This cake can be completely baked and glazed a day ahead, just cover with a cake dome and let stand at room temperature.

3 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 lb apple, peeled, cored and chopped into about 1/3-inch cubes (can use more apples if desired)
1 teaspoon salt
1 1/4 cups brown sugar
1 1/2 cups vegetable oil
1 cup white sugar
3 large eggs
3 teaspoons vanilla
1 cup chopped pecans
1/2 cup butter (no subs!)
1 cup brown sugar
1/4 cup half-and-half cream
1 teaspoon vanilla

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Grease a 12-cup bundt pan.
  • In a bowl, sift flour, cinnamon, baking soda, baking powder and salt.
  • Sprinkle 3 tablespoons of the flour mixture into the Bundt pan and tilt pan to coat.
  • In another bowl, place the chopped apples and 2 tablespoons of the flour mixture; toss to coat.
  • In another bowl combine 1-1/4 cups brown sugar, 1 cup white sugar, vegetable oil, eggs and vanilla; beat with an electric mixture until combined and thick (about 4 minutes).
  • Gradually beat in the remaining flour mixture until combined.
  • Fold in the chopped apple mixture and pecans into the batter.
  • Transfer to prepared bundt pan.
  • Bake for about 1 hour or until the cake tests done.
  • Transfer the cake to a rack then prepare the caramel glaze.
  • To make the glaze: melt butter in a small heavy-bottomed saucepan.
  • Whisk in 1 cup brown sugar then the half and half or cream.
  • Continue whisking until the glaze is smooth and comes to a boil.
  • Add in 1 teaspoon vanilla, and remove from heat.
  • Spoon about 1/4 cup of the hot glaze over the warm cake that is still in the pan.
  • Let the cake sit for 15-20 minutes to absorb the glaze.
  • Turn the cake onto a platter, then pour the remaining glaze over the cake.
  • Let stand until cool (at least 1 hour) before slicing.

For Apple Bundt Cake:
3 cups spoon and leveled all purpose flour
1 tsp Baking Soda
3 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp salt
1¼ cups or vegetable oil canola
½ cup or sour cream, room temperature plain yogurt
1¼ cups or dark brown, packed light sugar
½ cup granulated sugar
3 room temperature large eggs
1 tbsp pure vanilla extract
3 (about 3 cups), peeled, chopped into small chunks medium apples
For Brown Sugar Glaze:
1 cup or dark brown, packed light sugar
¼ cup unsalted butter
½ cup heavy cream
½ cup sifted Confectioner's Sugar

Steps:

  • Preheat the oven to 325 degrees F. Spray a 10 to 12 cup bundt pan with nonstick spray. Set aside.
  • Whisk the flour, baking soda, cinnamon, nutmeg, and salt together in a large bowl until combined. Set aside.
  • In a medium bowl, whisk the oil, yogurt, brown sugar, granulated sugar, eggs, and vanilla together until combined and creamy.
  • Pour the wet ingredients into the dry ingredients and slowly whisk until no large lumps remain. Avoid over-mixing. Carefully fold in the apple chunks.
  • Spoon or pour the thick batter into the prepared bundt pan.
  • Bake for 55 to 75 minutes or until a toothpick inserted in the cake comes out clean.
  • Allow the cake to cool in the pan set on a wire rack, then invert onto a serving plate once cooled.
  • Brown Sugar Glaze:
  • Combine the brown sugar, butter, and heavy cream in a medium saucepan over medium heat. Bring to a boil, stirring the mixture often.
  • Without stirring, allow to boil for 1 minute then turn the heat down to low and allow to simmer for 1 minute. Remove from heat and whisk in the sifted confectioners' sugar.
  • Allow the glaze to cool and slightly thicken for at least 5 minutes.
  • Spoon the glaze over the cake right before serving. Enjoy!

1 (15.25 ounce) package white cake mix
1 cup apple cider
4 eggs
½ cup butter, melted
1 (4 ounce) package instant vanilla pudding mix
1 cup confectioners' sugar
¾ cup apple cider

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with cooking spray.
  • Combine cake mix, 1 cup apple cider, eggs, butter, and vanilla pudding mix in a large bowl; mix until smooth. Pour batter into the tube pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes.
  • Stir confectioners' sugar and 3/4 cup apple cider together in a small bowl to make the glaze.
  • Pour glaze over the cake and let soak into the cake and down the sides of the pan, about 30 minutes. Invert onto a plate and cool completely, about 30 minutes.

  • Preheat oven to 350°F. Coat a nonstick 12-cup Bundt pan with cooking spray. (Alternatively, brush with melted butter, add 2 Tbsp. flour, rotate to evenly coat, and tap out excess.)
  • Make cake: Sift together flour, baking powder, cinnamon and salt in a medium bowl. In a large bowl, with an electric mixer on medium-high speed, beat butter and sugar until light, about 5 minutes. Reduce speed to medium and beat in eggs, 1 at a time, mixing well after each addition and scraping down sides of bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in 3 batches, alternating with milk. Fold in grated apples. Transfer to prepared pan.
  • Bake until a toothpick inserted into center of cake comes out clean, about 1 hour 10 minutes. Let cool in pan on a wire rack for about 10 minutes, then unmold onto rack set over a clean, rimmed baking sheet.
  • Make glaze: Combine brown sugar, butter, vanilla, cream and salt in a heavy saucepan. Stir over medium heat until smooth. Increase heat to high and bring to a boil. Remove from heat and stir until syrupy.
