Number Of Ingredients 14

3 tablespoons butter, softened
1/4 cup packed brown sugar
4 teaspoons sugar
1 large egg
1/3 cup sour cream
3 tablespoons 2% milk
2/3 cup all-purpose flour
1/2 cup graham cracker crumbs
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
1/3 cup milk chocolate chips
6 tablespoons marshmallow creme

Steps:

  • In a small bowl, cream butter and sugars until light and fluffy. Beat in the egg, then the sour cream and milk. Combine the flour, graham cracker crumbs, salt, baking powder, cinnamon and baking soda; beat into creamed until moistened. Fold in chocolate chips., Coat six muffin cups with cooking spray; fill one-fourth full with batter. Spoon 1 tablespoon marshmallow creme into each muffin cup. Top with remaining batter. , Bake at 400° for 14-16 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

S'mores in a Cup image

I wanted s'mores one evening and I didn't want to build a fire. This is one of my now favorite recipes. It takes a little more time but it's not messy and great for little kids. Don't have to worry about cleaning their hands, might have to clean around their mouth though, if you have one of those children that could make a mess out of absolutely nothing. I was one of those children and still am today.

2 (14.4 ounce) packages graham crackers (such as Honey Maid®), crushed
¾ cup butter, melted
6 (1.5 ounce) bars milk chocolate candy bar (such as Hershey's®), broken into squares
126 miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 42 miniature muffin tins with paper liners.
  • Mix graham cracker crumbs with butter in a bowl until evenly combined. Spoon graham cracker mixture into the prepared muffin cups, pressing into the bottom and up the sides creating a crust.
  • Place 1 chocolate square onto each crust and top each with 3 miniature marshmallows.
  • Bake in the preheated oven until marshmallows are puffy and chocolate is melted, about 6 minutes.

Number Of Ingredients 10

1-1/2 cups all-purpose flour
1/2 cup graham cracker crumbs (about 8 squares)
1/4 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1-1/2 cups buttermilk
1/4 cup canola oil
3/4 cup semisweet chocolate chips
1-1/4 cups miniature marshmallows, divided

Steps:

  • In a large bowl, combine the dry ingredients. Combine egg, buttermilk and oil; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips and 1 cup marshmallows., Fill greased jumbo muffin cups three-fourths full. Sprinkle with remaining marshmallows. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

2 cups graham cracker crumbs
1/3 cup sugar
1/3 cup miniature semisweet chocolate chips
2 teaspoons baking powder
3/4 cup milk
1 egg
24 milk chocolate kisses, unwrapped
2 cups mini marshmallows

Steps:

  • Preheat oven to 350°F Line 24 mini (1 3/4-inch) muffin cups with foil baking cups.
  • Combine graham cracker crumbs, sugar, chocolate chips and baking powder in medium bowl. Whisk milk and egg in small bowl; stir into crumb mixture until well blended. Spoon batter into prepared muffin cups, filling about 1/2 full. Press chocolate kiss into center of each cup. Press 4 marshmallows into top of each muffin around chocolate kiss.
  • Bake 10 to 12 minutes or until marshmallows are lightly browned. Cool muffins in pans on wire racks for 10 minutes. Remove to racks; cool completely.

1 cup milk chocolate chips
1 cup all-purpose flour
1 1/2 cups graham cracker crumbs (from about 15 whole crackers)
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1 stick unsalted butter, melted
1/2 cup whole milk
1 teaspoon pure vanilla extract
2 large eggs
3/4 cup marshmallow cream

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Toss the chocolate chips with 2 teaspoons flour in a small bowl; set aside.
  • Whisk the remaining flour, the graham cracker crumbs, baking powder and salt in a large bowl. Whisk the sugar, melted butter, milk, vanilla and eggs in a medium bowl until smooth; stir into the flour mixture until just combined. Stir in the chocolate chip mixture.
  • Divide the batter among the muffin cups, filling them three-quarters of the way. Tap the bottom of the pan lightly on the counter to smooth out the batter. Bake until the muffins are lightly browned and a toothpick inserted into the center comes out clean, 20 to 25 minutes. Let the muffins cool 5 minutes in the pan, then remove to a rack to cool completely.
  • Top each muffin with 1 tablespoon marshmallow cream. Let set 10 minutes.
