GERMAN MEATBALLS WITH GINGERSNAP GRAVY



German Meatballs with Gingersnap Gravy image

This recipe was one of my mother's favorites, and now my family enjoys it as well. The beauty of this recipe is that the meatballs need not be browned. The gingersnaps are what gives the gravy its rich taste. I have, at times, substituted fresh ground turkey for the beef, and it works just as well.

1 large egg, beaten
3/4 cup soft bread crumbs
1-3/4 cups water, divided
1/4 cup chopped onion
1/2 teaspoon salt
Dash pepper
1 pound lean ground beef (90% lean)
2 beef bouillon cubes
1/3 cup packed brown sugar
1/4 cup raisins
2-1/2 teaspoons lemon juice
1/2 cup coarsely crushed gingersnaps (about 10 cookies)
Cooked noodles

Steps:

  • Combine the egg, bread crumbs, 1/4 cup water, onion, salt and pepper; crumble beef over mixture and mix well. Shape into 2-1/2-in. balls., In a large skillet, bring remaining water to a boil. Add bouillon, brown sugar, raisins, lemon juice and gingersnaps. Stir until thoroughly combined. Add meatballs to skillet. Simmer, uncovered, for 20 minutes or until meat is no longer pink. Stir occasionally. Serve with noodles.

1 pound ground beef
¼ cup rolled oats
1 egg, lightly beaten
1 clove garlic, minced
½ teaspoon allspice
½ teaspoon ground ginger
½ teaspoon Worcestershire sauce
½ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons butter
1 tablespoon butter
1 tablespoon all-purpose flour
1 teaspoon all-purpose flour
1 cup water
1 teaspoon beef base (such as Better Than Bouillon®)
½ teaspoon steak sauce
½ cup plain Greek yogurt

Steps:

  • Mix beef, oats, egg, garlic, allspice, ginger, Worcestershire sauce, salt, and black pepper together in a medium-sized bowl. Use your hands to combine mixture until consistent in appearance, about 1 minutes. Roll 2 tablespoons of the meat mixture into a ball; repeat to make about 17 meatballs.
  • Heat a large skillet over medium-high heat. Add tablespoons butter and allow to melt. Add meatballs to the hot skillet and brown, 4 to 6 minutes. Reduce heat to medium, turn meatballs over, and cook 3 minutes more. Transfer meatballs to the slow cooker, reserving grease in the skillet.
  • Return skillet to medium-high heat. Add 1 tablespoon butter and flour and whisk to combine, about 30 seconds. Gradually whisk in water, beef base, and steak sauce, scraping and breaking up any browned bits from the bottom of the skillet. Bring mixture to a boil, whisking until sauce thickens, about 1 minute. Pour sauce into slow cooker with meatballs.
  • Cover slow cooker and cook on High for 2 hours or on Low for 4 to 5 hours.
  • Remove 1/4 cup liquid from the slow cooker and transfer to a bowl. Slowly add yogurt to prevent curdling. Add tempered yogurt to the slow cooker. Season with additional salt and pepper as desired.

Crumble meat over mixture and mix well., Shape into 1-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, at 350° for 20-25 minutes or until no longer pink. 3/4 cup seasoned bread crumbs
1 medium onion, chopped
2 large eggs, lightly beaten

  • In a large bowl, combine the first 6 ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. meatballs (about 36). In a large skillet over medium heat, brown meatballs in batches. Using a slotted spoon, remove to paper towels to drain, reserving drippings in pan., For gravy, stir flour into drippings; cook over medium-high heat until light brown (do not burn). Gradually whisk in milk until smooth. Stir in the consomme, Worcestershire sauce, pepper and salt. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened., Reduce heat to medium-low; return meatballs to pan. Cook, uncovered, 15-20 minutes longer or until meatballs are cooked through, stirring occasionally., Meanwhile, cook noodles according to package directions. Drain; toss with butter. Serve with meatball mixture; sprinkle with parsley.

The unusual and very tasty sauce for these meatballs contains crushed gingersnaps. This is a scaled down adaptation of a recipe that I found in one of my Taste Of Home magazines. I think it is good served with macaroni and cheese and a crisp salad.

2 eggs
1 onion, chopped
3/4 cup seasoned bread crumbs
1/2 teaspoon salt
1 lb ground chuck
vegetable oil
1 3/4 cups tomato juice
1/2 cup brown sugar
5 gingersnaps, finely crushed
1/8 cup white vinegar
1/2 teaspoon onion salt

Steps:

  • Combine the first five ingredients.
  • Shape into meatballs any size you choose.
  • Brown the meatballs in a little vegetable oil.
  • Transfer to a baking dish.
  • Combine the rest of the ingredients for the sauce.
  • Bring to a boil in a sauce pan.
  • Pour the sauce over the meatballs and bake@ 350 for 40-45 minutes.

1 1/4 cups gingersnaps, crushed
1/2 cup milk
1 egg, slightly beaten
1 lb lean ground beef
1/2 lb ground lean pork
1/4 cup onion, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon allspice
1/4 cup butter
1/4 cup flour
1 1/2 cups beef broth
1 teaspoon garlic, crushed
1 teaspoon thyme
1 bay leaf
salt and pepper
parsley

Steps:

  • Crush gingersnaps, approximately 20, 2 inch cookies, to make 1 1/4 cups.
  • In large bowl, combine crushed gingersnaps with milk and egg.
  • Add ground beef, pork, onion, salt, pepper and allspice. Mix well to combine.
  • Refrigerate, covered for one hour.
  • With moistened hands, shape mixture into meatballs, 1 1/2 inches in diameter.
  • Preheat oven to 325.
  • In hot butter in large skillet saute meatballs, just enough at one time to cover bottom of skillet, until browned all over. (I have elimanated this step to bake in hot oven until browned).
  • Remove to a 2 quart greased (pam) oven proof casserole dish as they brown. Pour off drippings to measure 1/4 cup, adding more butter if necessary.
  • Add drippings back to skillet heat and add flour stirring to make a smooth mixture.
  • Gradually stir in beef broth and bring mixture to boil, stirring constantly.
  • Add garlic, thyme and bay leaf, salt and pepper to taste simmer for 5 minutes for flavors to mingle.
  • Pour over meatballs and bake covered one hour.
  • Garnish with parsley and serve with noodles.

SWEDISH MEATBALLS

1/2 cup crushed rusks or white bread (bread crumbs)
3/4 cup cream
1 cup ground beef
1/2 cup ground veal
1/2 cup ground pork, preferably with fat (may be substituted for more beef)
1/2 finely chopped onion
Butter for frying
1 egg
Salt
White pepper
Soy sauce, optional

Steps:

  • Soak the bread (bread crumbs) in the cream. Mix the ground meat and add the cream and bread mixture. Brown the finely chopped onion in a little butter. Mix the onion with an egg and add it to the meat mixture. Work the mixture until smooth. Add some more water to give a smooth consistency, season with pepper and salt as you go.
  • Roll the meat into balls. The simplest method is to shape them using the wet palm of your hand and a couple of tablespoons, alternately standing them in a glass of hot water.
  • Melt rather large quantity of butter and put 10 to 20 meatballs at a time, depending on their size. Let them brown, and shake the pan now and again so that they roll around, removing each one when they are ready.
  • If the meatballs are to be served with gravy or sauce, proceed as follows:
  • Rinse the frying pan with water after each frying and add new butter. When all the meatballs are ready, sprinkle a little flour in the pan, pour in the gravy (i.e. butter from the frying and water used to rinse the pan) and stir until the sauce is even. Flavor with a little white pepper, salt and perhaps some Soy Sauce. Let the meatballs bubble gently for a few minutes in the sauce, over low heat. If a creamy sauce is desired, pour cream into the pan after the last frying.
  • Serve the meatballs with potatoes, lingonberries, salt or pickled cucumber and gravy.

My grandmother's mother and father were both off the boat from Sweden in the late 1800's. This is my grandmother's recipe from her mother, so if your looking for a REAL Swedish Meatball recipe, here it is, straight from the home land! I had this recipe many times growning up, as my mom loved to cook it for us... This is GREAT served over cooked buttered noodles, as a main dish with veggies, or over potatoes. I LOVE IT both ways!

1 lb lean hamburger
1/2 cup dried breadcrumbs (about 4 slices of toasted bread put in the blender, or you can use the crumbs in a can)
1 egg
2/3 cup milk
2 tablespoons onions, grated
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg

Steps:

  • Mix hamburger and bread crumbs.
  • Beat egg in milk, and then add to meat mixture.
  • Add onion, salt, pepper, and nutmeg, and mix well. Form into 1" balls.
  • Put about 1/4 cup of oil in a frying pan. Put on high to heat, then turn down to med. heat, and put in meatballs.
  • Cook on all sides, browning until they are almost burned, but please don't burn them, just brown them well.
  • When done take out meatballs, and put in a dish.
  • To Make Gravy:.
  • Put 2 cups water in the frying pan, along with the juices. Let come to a boil.
  • Meanwhile, in a cup put in 3 T. cornstarch, and fill the rest with COLD water, and mix.
  • Add to the frying pan juices to thicken into a gravy, adding a little at a time, until you get desired thickness.
  • When gravy is on the thick side, add meatballs.
  • Let cook on med. heat for 15-20 minutes.

This is one of my husband's favorites. I created it using several other Swedish meatball recipes that didn't quite make the grade.

1 egg
1/4 cup milk
1 lb ground beef
1/4 cup dry cream of wheat
1/4 cup minced onion
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (12 fluid ounce) can evaporated milk
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350ºF (175ºC).
  • In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
  • Bake at 350ºF (175ºC) for about 20 minutes.
  • Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
  • Bake uncovered at 350ºF (175ºC) for another 40 minutes. Sprinkle with parsley with parsley before serving.

Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

2 slices day-old white bread, crumbled
½ cup heavy cream
1 teaspoon butter
1 small onion, minced
⅔ pound ground beef
⅓ pound finely ground pork
1 egg
1 tablespoon brown sugar
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
⅛ teaspoon ground ginger
1 tablespoon butter
¼ cup chicken broth
3 tablespoons all-purpose flour, or as needed
2 cups beef broth, or as needed
½ (8 ounce) container sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
  • Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
  • Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
  • To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.
