8 cups low-salt chicken broth
Freshly ground black pepper
Two 9-ounce packages refrigerated cheese tortellini
2 tablespoons chopped fresh Italian parsley leaves
Parmesan Crisps, recipe follows
1/2 cup grated Parmesan

Steps:

  • Pour the broth into a heavy large saucepan. Cover and bring to a boil over high heat. Season the broth with pepper, to taste. Add the tortellini. Simmer over medium heat until al dente, about 7 minutes.
  • Ladle the broth and tortellini into soup bowls. Top with parsley and Parmesan Crisps and serve.
  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.

2 cups all-purpose flour, plus more for dusting
2 large eggs
3 tablespoons extra-virgin olive oil
10 ounces mixed wild mushrooms
2 tablespoons extra-virgin olive oil
Kosher salt
3/4 cup fresh ricotta cheese
1/3 cup chopped fresh chives
1/3 cup chopped fresh parsley
1/4 cup grated parmesan cheese
1 large egg yolk
Pinch of freshly grated nutmeg
3/4 cup dried porcini mushrooms (about 3/4 ounce), rinsed
1 onion, quartered
1 carrot, roughly chopped
2 stalks celery, roughly chopped
1 large piece parmesan cheese rind
5 sprigs parsley, plus chopped leaves for topping
3 sprigs thyme
1 teaspoon black peppercorns
Kosher salt
1 wide strip of lemon zest
Chopped fresh chives, for topping

Steps:

  • Make the pasta dough: Pulse the flour once or twice in a food processor. Add the eggs and olive oil and pulse untilthe dough gathers around the blade, 40 to 60 seconds. Turn the dough out onto the counter and knead a few times, then shape it into a smooth ball. Wrap the dough in plastic wrap and let rest at room temperature, 30 minutes. (The dough can be made a day ahead and refrigerated; bring it to room temperature before rolling.)
  • Prepare the filling: Remove the mushroom stems and set aside for the broth; finely chop the caps. Heat the olive oil in a large skillet over medium heat. Add the chopped mushroom caps and season lightly with salt; cook until they release their liquid, about 2 minutes. Increase the heat to medium high and cook until the pan is dry and the mushrooms are golden brown, about 3 minutes. Transfer to a bowl and let cool completely, then stir in the ricotta, chives, parsley, parmesan, egg yolk and nutmeg.
  • Make the broth: Combine the reserved mushroom stems in a large Dutch oven with the porcini, onion, carrot, celery, parmesan rind, parsley and thyme sprigs, peppercorns, 1 teaspoon salt and the lemon zest. Add 10 cups cold water and bring to a boil, then reduce the heat to low and simmer until the broth is dark and reduced by half, about 1 1/2 hours. Strain through a fine-mesh sieve into a clean pot and season with salt; set aside.
  • Meanwhile, fill and shape the pasta: Cut the dough into 4 pieces. Working with 1 piece at a time (and keeping the other pieces wrapped), flatten and shape the dough into a 3-inch square with your hands. Dust a clean work surface with flour; using a floured rolling pin, roll out the dough into a 10-inch square, about 1/8 inch thick. Trim the edges so they are straight, then cut the dough into sixteen 2-to-2 1/2-inch squares. Place a heaping teaspoonful of filling in the center of each square. With damp fingers, lightly moisten the edges of the dough; fold the square diagonally to form a triangle, pressing out any air pockets around the filling. Bring the 2 opposite points of the triangle together around your finger to form a ring; lightly moisten and pinch the points together to seal. Transfer to a well-floured baking sheet as you go. Repeat to form the remaining tortelloni.
  • Bring a large pot of salted water to a boil. Bring the prepared mushroom broth to a simmer. Add the tortelloni to the boiling water. After they float to the top, cook until al dente, 3 to 4 more minutes. Divide the mushroom broth among 6 bowls. Drain the tortelloni in a colander, then divide among the bowls. Top with chopped chives and parsley.

4 cups loosely packed baby spinach leaves (3 ounces), cut into 1/2-inch-wide strips

Steps:

  • Cut rind off cheese. Combine rind, stock, garlic, parsley, and oil in a 3-quart pot, then simmer gently, partially covered, 30 minutes. Discard parsley and rind and season broth with salt.
  • Add tortellini and simmer, partially covered, until al dente, about 10 minutes. Add spinach and simmer, uncovered, 1 minute. Divide among 4 soup plates, then shave cheese over soup to taste.

1 carrot, peeled and chopped
1 celery stalk, chopped
1 head garlic, halved across the equator
1 onion, halved
4 sprigs fresh oregano
2 sprigs fresh thyme
1 bay leaf
1 teaspoon salt, plus for pasta water
1 pound spinach pasta tortellini (spinach pasta filled with cheese)
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • To a large saucepan, combine the Parmesan rinds, carrots, celery, garlic, onions, oregano, thyme, bay leaf and salt. Add 8 cups water and bring to a simmer over medium heat. Simmer the broth for 1 hour 15 minutes, adjusting the heat to maintain a simmer and stirring occasionally to prevent sticking. Strain into a clean saucepan and keep warm over low heat.
  • Meanwhile, bring a large pot of well-salted water to a boil. Add the tortellini and cook for 2 minutes less than the package instructions, about 4 minutes. Drain well, then add the tortellini to the broth to finish cooking. Stir in the parsley and serve.

2 leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed
2 carrots, halved lengthwise and thinly sliced
2 small celery stalks, thinly sliced
4 cloves garlic, smashed
4 cups low-sodium chicken broth
1 small piece parmesan rind
2 wide strips lemon zest (removed with a vegetable peeler)
1 12-ounce bone-in smoked pork chop, diced (bone reserved)
1 9-ounce package refrigerated cheese or meat tortellini
1 small head escarole, chopped
Freshly ground pepper

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the leeks, carrots, celery and garlic and cook, stirring occasionally, until the leeks wilt, about 5 minutes. Add 2 cups water, the chicken broth, parmesan rind, lemon zest and pork bone. Bring to a simmer and cook until the vegetables are almost tender, about 15 minutes.
  • Remove the parmesan rind, lemon zest and pork bone from the pot with a slotted spoon. Bring the broth to a boil over medium heat. Add the tortellini, escarole and diced pork; season with pepper. Cook until the tortellini and escarole are tender, 4 to 5 minutes.

  • For the tortellini with Parmigiano broth recipe, chop the celery, carrot and half shallot. Cut the chicken breast and veal brisket into small pieces, and cut the rabbit legs into pieces, leaving the bones. Brown the rabbit and the veal in a saucepan with a little oil; then add the pancetta and the chicken. Sear everything for 5 minutes, then season with a bay leaf and add a glass of Marsala.
  • Season with salt and 2 juniper berries, then a knob of butter and the chopped celery, carrot and shallot. Moisten with a ladle of broth and cook covered for 25-30 minutes. Make a dough by mixing the farro flour, eggs, egg yolk and a pinch of nutmeg; let the dough rest in a bowl covered with plastic wrap. Put the Parmigiano cheese, both the cheese and the rind, in a saucepan, cover with the broth and simmer for 15 minutes.
  • Remove the meat from the rabbit legs and pass them in the meat grinder twice together with the veal, chicken and the Parmigiano cheese taken from the broth. Roll out the dough into very thin sheets (1/10 inch) and cut it into 1-inch squares. Place small nut-size clumps in the center of the squares and close them into triangles, forming tortellini by joining the two tips. Moisten your finger with water to make it easier.
  • Cook the tortellini in boiling salted water, drain and serve with the broth. Tip: For a vegetable broth that is a bit sweeter, to be finished with the Parmigiano, boil 14 ounces of unpeeled pumpkin or butternut squash cut into pieces, 7 ounces of peeled celery root cut into pieces, 2 cabbage leaves, 2 bay leaves, 1 unpeeled apple cut in half and a pinch of salt in 3 quarts of water for 2 hours. Turn off the heat and strain.
