FAVORITE OLD FASHIONED GINGERBREAD
This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

GINGERBREAD
This classic Gingerbread Loaf recipe has been around for generations! Passed down from one baker to the next, it's become a Christmas favorite in our home! Soft, flavorful and oh so tasty, this traditional gingerbread is a winner!

Steps:
- Preheat oven to 350*F.
- Prepare a bread pan by lining with parchment paper and spraying with cooking spray. This will ensure bread slips right out of your pan with zero sticking.
- Blend sugar and butter together until fluffy.
- Add egg and molasses and beat well, scraping sides as needed.
- Add baking soda, cinnamon, ginger, cloves and salt. Mix well.
- Add flour in 1/2 cup at at time and mixing between each addition.
- While mixing, SLOWLY add water to thin batter out. Now is the time to add the apple sauce if you wish, though I didn't need it.
- If adding the crystallized ginger, add now.
- Pour mixture into prepared bread pan and bake for 55 minutes. Remove from oven and add create a tent over bread to prevent from edges getting to dark.
- Place bread back in oven and bake for 15 - 20 more minutes.
- Remove from oven when a toothpick inserted into the middle of bread comes out clean.

- Cream Fat, add sugar, add milk and well beaten eggs.
- Add 3 cups flour mixed and sifted with dry ingredients, then more flour to make dough just stiff enough to roll.
- With knife, toss about 1/3 of the dough on lightly floured board, knead slightly to make smooth.
- Roll thickness to about 1/2 inch.
- Use floured spatula freely to prevent dough from sticking to board.
- Cut with floured doghnut cutter.
- Fry in deep fat about 2 minutes, they should come quickly to the top.
- Brown on one side then brown on the other side. Turn but once.
- Drain over fat and then on absorbent paper.
- When partly cooled sprinkle with powdered sugar.

POVERTY PIE - 1940'S
From a feature in our State paper with recipes through the ages. The recipe states 1 quantity of shortcrust pastry (frozen or homemade - let time and economy decide), I've estimated this to 3 or 4 sheets, sheets are about 22cm to 23cm square. Cooking and prep times are also estimated.

- To make filling.
- In a large saucepan bring stock, water, onion and bouquet garni to the boil and then turn down heat and add rabbit and gently simmer, covered for 45 minutes.
- Remove rabbit and cool and then pull meat from the bones and cut into bite sized chunks.
- Meanwhile return liquid to heat and boil briskly to reduce to 1 1/2 cups, this usually takes 5 to 10 minutes.
- In a saucepan melt butter and then add leak, mushroom and celery and sweat until soft and then add flour and cook for a further minutes and then gradually add warm stock, stirring well until sauce boils and thickens and then stir in cream and check for seasoning, fold rabbit through the sauce and allow to cool slightly.
- To make the pies.
- Roll out the shortcrust pastry and line small pie tins, filled with meat mixture and then cover with puff pastry. sealing edges with egg wash.
- Cut a slit in the middle of the pastry top to let steam escape and brush the pies with egg wash and put into the oven for 15 minutes at 220C and then turn down to 200C for a further 10 minutes.
