GINGER LEMONADE
What a great twist on lemonade. Freeze some of this into ice cubes to use in the drinks, so it won't be diluted!

- In an 8-quart saucepan combine sugar, water and ginger root. Heat to boiling, stirring occasionally. Remove from heat.
- Stir in lemon juice. Cool 15 minutes. Remove ginger. Refrigerate lemonade at least 1 hour, or until chilled.
- Serve over ice, and garnish with lemon slices.

- Cut the lemon in half. Squeeze the juice from one half and slice the rest. Divide the lemon juice and slices between 2 mugs, along with the sliced ginger.
- Fill the mugs with boiling water and leave to steep for 3 mins or until cool enough to sip. Sweeten with honey if you like.

Steps:
- In a small saucepan, bring the water to a boil over high heat. Remove the pan from the heat and add the tea bags. Stir and allow the mixture to cool to room temperature, about 20 minutes. Remove the tea bags and discard. Add the Ginger Simple Syrup, lemon juice, and sparkling water.
- Put the ice in a large pitcher. Pour the lemonade mixture over the ice. Garnish with lemon slices and serve.
- To make Ginger Simple Syrup:.
- In a small saucepan, over medium heat, combine the sugar, water and ginger. Bring to a boil, reduce the heat, and simmer stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
- Yield: 1 1/3cups.
GINGER LEMONADE

- Combine the sugar, ginger and lemon peel in a small saucepot. Pour enough water to cover the mixture, about 1 cup. Bring the mixture to a boil and simmer, about 5 minutes. Remove the saucepot from the heat and let sit at least 15 minutes up to a few hours.
- Pour the lemon juice in a pitcher. Add 3 cups water and the sugar mixture and mix to combine. Serve the lemonade over ice.

- Heat the sugar and 1 cup water in a small pot until the sugar has dissolved and the liquid just comes to a boil. Turn off the heat and add the ginger. - Prepare the ginger 'tea' base. Do this by cleaning the ginger knobs and chopping into 1-2" pieces.
- Add the ginger to a pan with the filtered water and bring to a boil, then reduce the heat and simmer for around five minutes. * (* For a more concentrated flavor, you can use crushed or grated ginger).
- When ready, leave the ginger water to cool completely before moving on to the next step. When it is lukewarm, add the sweetener of your choice and mix well. - Prepare the lemon juice by juicing the lemons. You can use a juicer for this, if you have one, or do this manually. This helps to get out as much of the lemon juice as possible AND makes the process faster.
