Oatmeal Crisp Peaches image

Inspired by classic streusel topped baked apples, this recipe swaps the apples for ripe juicy peaches and is a great make-ahead recipe. Simply prep the peaches, make the crisp topping and assemble. Refrigerate and bake just before you're ready to serve.

1 stick unsalted butter, melted, plus more for the pan
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup finely chopped pecans
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
6 peaches (about 1 1/2 pounds), halved and pitted
Ice cream, for serving
Dulce de leche, for serving

Steps:

  • Preheat the oven to 400˚ F. Butter a 9-by-13-inch baking dish. Stir together the oats, flour, pecans, brown sugar, cinnamon and salt in a large bowl. Stir in the melted butter until the mixture resembles a coarse crumble.
  • Gently press the oat mixture onto the cut sides of each peach.
  • Arrange the peaches in the baking dish. Bake until tender and the topping is golden brown, about 25 minutes. Let cool 15 minutes. Serve with ice cream and a drizzle of dulce de leche.

1 cup quick-cooking oatmeal
3/4 cup pecan halves
1 cup whole wheat flour
1/4 cup cornstarch
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/3 cup light brown sugar
1 teaspoon pure vanilla extract
1 large egg

Steps:

  • Grind the oatmeal and pecan pieces in a food processor until they resemble cornmeal--reasonably fine but with some texture. Whisk the whole wheat flour, cornstarch, ginger, salt and baking soda together in a medium bowl. Whisk in the oat/nut mixture.
  • In another medium bowl, beat the butter with an electric mixer until smooth and light, about 1 minute. Gradually add the granulated and light brown sugar; continue beating until evenly combined, about 3 minutes more. Add the vanilla and the egg.
  • Mix in the dry ingredients to make a textured dough. Line a 1 1/2-quart loaf pan or 3 mini loaf pans with plastic wrap and pack dough into the bottom half of the pan. Press to level off the dough. Lay a piece of plastic wrap on top and refrigerate until completely firm, about 2 hours.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone mats.
  • Remove dough from the pan and unwrap. Slice dough in half lengthwise if using a large pan. Slice each log crosswise into 1/4-inch thick cookies. Place the cookies about a 1-inch apart on the prepared pans. Bake until golden brown, 15 to 18 minutes. Transfer cookies to a rack to cool and crisp.

1/2 package (17.3 oz.) Pepperidge Farm® Puff Pastry Sheets (1 sheet)
1/2 cup packed brown sugar
2 tablespoons butter OR margarine, melted
1/3 cup chopped pecans
Confectioners' sugar

Steps:

  • THAW pastry sheet at room temperature 40 min. Preheat oven to 400 degrees F. Mix brown sugar, butter and pecans.
  • UNFOLD pastry on lightly floured surface. Roll into 15"x 12" rectangle. Cut into 20 (3") squares. Press squares into bottoms of 3" muffin-pan cups. Place 1 heaping tsp. pecan mixture in center of each.
  • BAKE 12 minutes or until golden. Remove from pans. Let cool. Sprinkle with confectioners' sugar. Makes 20 pastries.

Crisco® Butter No-Stick Cooking Spray
1 (18.25 oz.) pkg. Pillsbury® Reduced Sugar Yellow Cake
1/3 stick Crisco® Butter Shortening Sticks or 1/3 cup Crisco® Butter Shortening
1/4 cup cold water
1 large egg
2/3 cup chopped pecans
2 tbsps. sugar
1/4 cup finely chopped pecans
1 large egg white, beaten

Steps:

  • HEAT oven to 375 degrees F. Spray cookie sheets with no-stick cooking spray.
  • COMBINE cake mix and shortening in a medium bowl with an electric mixer at medium speed until coarse meal forms. Add water, egg and 2/3 cup pecans, mixing on low until dough comes together.
  • SHAPE dough into forty-two 1-inch balls. Place 2 inches apart on prepared cookie sheets. Spray bottom of a cup with no-stick cooking spray. Flatten dough to 2-inches in diameter, spraying cup as needed.
  • COMBINE sugar and finely chopped nuts in a small bowl. Brush unbaked cookies with egg white. Sprinkle with sugar-pecan mixture.
  • BAKE 6 to 8 minutes or until edges are light golden brown. Cool 1 minute. Remove to cooling rack.

3/4 cup butter, melted
1 cup brown sugar
1 large egg, beaten (or two medium, just whip with a fork)
4 tablespoons molasses (that's 1/4 cup)
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
2 1/4 cups flour (not sifted)
1/2 cup white sugar (in a small bowl for later)

Steps:

  • Do not preheat oven yet, dough must chill before baking.
  • Melt butter and mix in sugar.
  • Let mixture cool.
  • Add egg (s).
  • Add soda, molasses, salt and ginger.
  • Stir thoroughly.
  • Add flour and mix inches.
  • Chill the dough for at least 1 hour (overnight is even better).
  • Once dough has chilled, preheat oven to 375 degrees, rack in middle position.
  • Roll dough into walnut-sized balls,.
  • Roll dough in white sugar (just dump them in the bowl with the sugar and shake the bowl to gently coat them.).
  • Place cookie balls on greased cookie sheets, 12 to a standard sheet.
  • Flatten them with a spatula.
  • Bake at 375 degrees for 10-12 minutes or until nicely browned.
  • Cool on cookie sheets for no more than 1 minute.
  • Remove to wire rack to finish cooling. (If you leave these on the cookie sheets for too long, they will stick.

½ cup all-purpose flour
½ cup dark brown sugar
½ cup walnuts, pecans or slivered almonds, coarsely chopped OR 1/2 cup of old-fashioned oatmeal
5 tablespoons melted (not hot) butter
6 cups jarred or canned pears, packed in light syrup, cut into
¼ cup sugar
¼ teaspoon ground ginger
⅛ teaspoon ground cloves
1 tablespoon cornstarch

Steps:

  • Adjust oven rack to center position and heat oven to 375 degrees. Mix gingersnap crumbs, flour, brown sugar, nuts (or oatmeal) and butter in a medium bowl; set aside. Place pears in a medium bowl.
  • Bring 1 cup of the pear syrup, 1/4 cup sugar, ginger and cloves to boil in a small saucepan. Whisk cornstarch into remaining 2 Tbs. pear juice, then whisk it into boiling syrup; continue to simmer until thick, less than a minute. Pour over pears, toss to coat and turn into a 9-inch square baking pan.
  • Sprinkle crumble clusters over pears. Bake until topping is golden and pears are bubbly, 25 to 30 minutes. Cool until warm and serve.
