GINGER PORK CHOPS
A pleasant combination of honey, soy sauce and ginger glazes these tender pork chops and makes them seem special. Serve with buttered green beans and instant mashed potatoes as shown in the photo above right. Or complete the meal with peas and scalloped potatoes from a boxed mix.

- Broil pork chops 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving., Meanwhile, in a small saucepan, combine cornstarch and soy sauce until smooth. stir in the honey, garlic and ginger. Bring to a boil; cook and stir for 1 minute or until thickened. Drizzle over the pork chops. Sprinkle with green onion.

PORK CHOPS WITH GINGER SAUCE
Pork chops are an easy way to get dinner on the table in a hurry and a great chance to let your inner saucier run wild. The secret? A two-step pan roast and an even easier pan sauce that can be different every time you make it.

- Preheat your oven to 350F (175C).
- Preheat a large saucepan over medium-high heat. Splash in some oil and toss some butter in the center of the oil. Season the pork chops with salt and pepper. When the butter starts to brown, lay in the pork chops. Sear until lightly and evenly browned and delicious looking then flip to cook the other side on low. Reduce your heat to its lowest possible setting, place a lid on the saucepan and allow the chops to finish cooking in your improvised oven. This will take about 5 minutes or so. Rest the chops on a plate covered loosely with foil. Toss it in the warm oven. Close the door, turn off the heat and make the sauce.
- Turn the pan heat to high. Pour in the orange juice and spoon in the marmalade. Stir the sauce as it boils and scours the pan of all the browned flavour bits, the concentrated pan juices. The sauce thickens as it reduces. This makes for less sauce but bigger flavor. When the sauce thickens to a smooth consistency, finish by stirring in the soy sauce, ginger, green onions and vinegar. Serve up the warm chops with the sauce, share and enjoy!
- Freestyle Twist: These simple chops can be dressed up by simply twisting the sauce in a variety of ways. Try white wine and mustard, red wine and raspberry jelly or for some zing, apple juice and horseradish.

- In a blender, combine the soy sauce, green pepper, brown sugar, onion, ginger and garlic; cover and process until smooth. Set aside 2 tablespoons for sauce. Pour the remaining marinade into a large resealable plastic bag or shallow glass container. Add pork chops and turn to coat. Seal or cover and refrigerate for 8 hours or overnight; drain and discard marinade. , Grill chops, covered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving., In a saucepan, combine the sugar, cornstarch, water and reserved soy sauce mixture; stir until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chops.

Steps:
- Melt butter in a nonstick skillet.
- Lightly dust chops with flour.
- Saute chops over medium high heat 3-4 minutes per side or until browned.
- Remove chops to a serving plate and keep warm.
- Add broth to skillet, bring to a boil, stirring to scrape up any browned bits.
- Add ginger and cook 2 minutes.
- Add mustards, scallions, salt and pepper and stir to combine.

PAN-SEARED PORK CHOPS WITH SWEET MUSTARD SAUCE
Steps:
- Mix together the salt, ginger, pepper, mustard and 1 teaspoon sugar in a small bowl. Sprinkle the pork chops with the spice mix. Rub on both sides.
- Heat the butter and oil in large, heavy-bottomed skillet over medium-high heat. Once the butter has melted, add the pork chops. Cook on one side until deep brown on the bottom, 4 to 5 minutes. Flip and cook until the internal temperature reaches 140 degrees F, another 3 to 4 minutes. Remove the pork chops to a plate to rest.
- Meanwhile, pour the ginger beer into a small skillet and bring to a simmer over medium heat. Stir in the mustard and the remaining 3 tablespoons sugar and let reduce until it is thickened and combined, about 5 minutes. Pour the sauce over the pork chops, then sprinkle with the parsley and serve!

- Heat the oil in a large oven proof skillet over medium high heat. Pat the pork chops dry with paper towels and season with salt and pepper. Sear the pork chops for about 4 minutes on each side until nicely browned. Remove the pork shops to a plate.
- Return the pan to the heat and add the onions. Sauté for about 4 minutes until golden brown and tender. Add the wine, and scrape the bottom of the pan to loosen any little browned bits on the bottom. Add the broth and bring to a simmer. - Remove the pork chops to individual plates or a serving plate and place the skillet back on the stove over medium high heat. Stir in the cream and bring to a simmer again. Pour the sauce over the pork shops and sprinkle the top with parsley, if desired.
