1 pounds dried cannellini or Great Northern beans, picked over and rinsed
2 pints grape tomatoes (about 1 pound)
1 small onion, finely chopped
1 celery rib, thinly sliced
3 garlic cloves, minced
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter, divided
3 thyme sprigs
1 teaspoon sugar
1/2 cup grated Parmigiano-Reggiano
Accompaniment: crusty bread

Steps:

  • Soak beans in water to cover by 2 inches overnight (8 hours) or quick-soak (see cooks' note, below), then drain.
  • Cover beans with water by 2 inches in a 5-to 6-quart pot. Bring to a boil, then reduce heat and briskly simmer, uncovered, stirring occasionally and skimming foam, until beans are very tender, 40 to 50 minutes. Reserve 2 cups cooking water, then drain beans.
  • Halve 1 cup tomatoes lengthwise and set aside. Pulse remaining tomatoes in a food processor until almost smooth.
  • Preheat oven to 450°F with rack in middle.
  • Cook onion, celery, and garlic in oil and 1 tablespoon butter with 1/4 teaspoon each of salt and pepper in a 12-inch heavy skillet, stirring occasionally, until softened, about 5 minutes. Add tomato purée, thyme, sugar, 3/4 teaspoon salt, and reserved 2 cups bean-cooking water and simmer, stirring occasionally, until liquid is slightly thickened, about 10 minutes. Whisk in remaining tablespoon butter, then stir in beans.
  • Transfer to a 3-quart shallow baking dish. Sprinkle evenly with cheese, then scatter tomato halves over top. Bake, covered tightly with foil, until liquid is reduced and beans are saucy but not soupy, 25 to 30 minutes. Let stand, covered, 10 minutes before serving (beans will continue to absorb liquid).

½ large yellow onion, diced
1 cup mushroom, diced
½ cup sun-dried tomato, drained
3 cloves garlic, minced
15 oz white bean, or cannellini beans, 2 cans, rinsed and drained
15 oz fire-roasted tomato, 1 can
15 oz artichoke heart, 1 can, drained
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon dried oregano
1 teaspoon dried thyme
salt, to taste
pepper, to taste
fresh basil, thinly sliced, for garnish

Steps:

  • In a large skillet over medium heat, add the olive oil, onion, and mushrooms. Cook 5 minutes, or until the onion begins to turn translucent.
  • Add the sun-dried tomatoes and garlic. Stir and cook for another 3 minutes, or until fragrant.
  • Add the white beans, fire-roasted tomatoes, artichoke hearts, balsamic vinegar, honey, oregano, thyme, salt, and pepper. Stir to combine. Cover and reduce the heat to low. Let cook for 10 minutes, stirring occasionally.
  • Garnish with fresh basil and serve.

This hearty, flexible stew comes together with pantry ingredients and delivers layers of flavors. Cherry tomatoes, roasted in a generous glug of olive oil to amplify their sweetness, lend a welcome brightness to this otherwise rich dish. Onion, garlic and red-pepper flakes form the backbone of this dish, to which white beans and broth are added, then simmered until thick. While this stew is lovely on its own, you could also add wilt-able greens such as kale, escarole or Swiss chard at the end, and toasted bread crumbs on top. The dish is vegan as written, but should you choose to top your bowl with a showering of grated pecorino or Parmesan, it would most likely work well in your favor.

1/2 cup roughly chopped Italian parsley leaves and tender stems
2 teaspoons lemon zest (from 1 large lemon)
2 (10-ounce) containers cherry or grape tomatoes
1/4 cup olive oil, plus 2 tablespoons and more for drizzling (optional)
1 tablespoon fresh thyme leaves
Kosher salt and black pepper
1 medium yellow onion, thinly sliced
3 large garlic cloves, thinly sliced
1/2 teaspoon red-pepper flakes
2 (15-ounce) cans white beans (such as butter or cannellini), rinsed
1 1/2 cups vegetable or chicken broth, or water
Flaky salt, for serving (optional)
Toasted bread, for serving

Steps:

  • Heat the oven to 425 degrees. In a small bowl, gently toss together the parsley and lemon zest with your hands until well combined; set aside.
  • In a large baking dish or on a sheet pan, toss the tomatoes with 1/4 cup oil and thyme; season well with salt and pepper. Roast tomatoes until they have collapsed and begin to turn golden around the edges, 20 to 25 minutes.
  • When the tomatoes are almost done roasting, heat 2 tablespoons oil in a large (12-inch), deep skillet or Dutch oven over medium. Add the onion, garlic and red-pepper flakes and cook until the onion is softened and the garlic is fragrant, 4 to 5 minutes. Stir in the rinsed beans and broth and bring to a simmer. With the back of a spoon or spatula, gently smash about ½ cup of the beans so they slightly thicken the broth. If you want a thicker stew, crush some more of the beans. Season with salt and pepper.
  • When the tomatoes are finished roasting, add them directly to the stew along with any juices that have been released. Simmer for 5 to 10 minutes more so the flavors become friendly; season to taste with salt.
  • Ladle into shallow bowls. Top each serving with some of the lemon-parsley mixture and drizzle with some more olive oil, and season with flaky salt, if you like. Serve with toasted bread.

1 pound broccolini or broccoli rabe, trimmed
Kosher salt
2 tablespoons unsalted butter
1 teaspoon finely grated lemon zest

4 (6-ounce) black bass or trout fillets or skinless cod or haddock fillets
1 cup all-purpose flour
Kosher salt, freshly ground pepper
6 tablespoons unsalted butter, room temperature, divided Maître d'Hôtel Butter , Nasturtium Butter , and Chile-Cilantro Butter

Steps:

  • Broccolini:
  • Cook broccolini in a pot of boiling salted water just until tender, about 3 minutes. Drain and transfer to a bowl of ice water; let cool. Drain and pat dry with paper towels.
  • Heat butter in a medium skillet over medium until foaming. Add broccolini, lemon zest, and red pepper flakes; season with salt and pepper. Cook, tossing, just until broccolini is warmed through and coated in butter.
  • Fish and Assembly:
  • Heat a grill pan over medium-high until hot but not smoking. Pat black bass fillets dry; this will help keep the fish from sticking to the pan while cooking. Place flour on a plate and season generously with salt and pepper (you are not seasoning the fish itself). Working one at a time, dredge fillets in flour, shaking off excess. Spread butter over flesh side of fillets as if buttering a slice of bread.
  • Add fillets, flesh side down, to pan; they should sizzle upon contact. Cook just until grill marks appear and butter is browned, about 1 minute. Turn and cook, pressing gently so entire skin side is in contact with the pan's ridges, until skin is browned and crisp and fillets are cooked through, about 4 minutes longer.
  • Serve black bass fillets with broccolini and flavored butters, which will soften on contact with the warm fish.

Fish:
4 whole black bass 1.25 lb each, gutted, scaled and scored (red or yellowtail snapper as substitutes)
1/8 c olive oil
1/8 c canola oil
sea salt
black pepper
Ragu:
2 c cannellini beans
4 large artichoke hearts thinkly sliced and sprinkled with lemon juice
24 medium vine ripe tomatoes
2 c baby arugula leaves
12 basil leaves
1 c fish stock (substitute chicken broth)
6 oz olive oil
salt
pepper
Garnish:
1/4 c flat Italian leaves
1 tsp lemon juice
1 tsp crushed red pepper
1/4 c olive oil
salt and pepper

Steps:

  • For Ragu: Split the tomatoes, set on baking sheet, and sprinkle with 2 oz olive oil, salt and pepper. Place in a 300 oven for two hours. Set aside to cool. Do beforehand. In a medium saucepan bring the stock and cooked beans to a simmer over low-medium heat. Dice the tomatoes and add. Simmer until most of the liquid is gone. Gently stir in the sliced artichokes. Remove from heat and set aside. For dressing: Combine the parsley, lemon juice, olive oil, and red pepper in a small bowl. Mix together with a fork, add salt and pepper to taste. For fish: Score the fish by slicing diagonal lines in a crisscross pattern on boh sides of the fish. This allows the fish to cook more efficiently and makes it easier to eat, allowing you to pull nice diamond shape pieces of fish from the skeleton. Combine olive and canola oil, and brush onto fish. Season well with salt and pepper. Place fish on smoking hot grill or roat in 500 oven for about 15 minutes in a nonstick roasting pan. Do not touch for four to five minutes. Turn the fish over and repeat the process again. If you can see the flesh close to the bone is still opaque, you can finish in a 450 preheated oven. Finish the ragu by adding the arugula, basil, and olive oil. Season with salt and pepper to taste. Divide the ragu among the four plates, in a strip down the middle. Using a large spatula, place the fish on top of each ragu. Dress each fish equally with the lemon and olive oil dressing. Garnish with lemon wedges. Serve immediately.
