With a little practice and a little added flavor, a humble chicken breast can be anything you want.

Chicken breasts
Shredded coconut
Coconut milk
Ginger

Steps:

  • In a dry skillet, toast .25 cup shredded coconut.
  • Put the chicken, .5 cup coconut milk, .5 cup water and 1 tablespoon freshly grated ginger in another pan.
  • When the liquid boils, lower heat to a simmer; cover and cook chicken for 10 to 15 minutes or until tender and just cooked through.
  • Transfer chicken to a plate and keep warm. Turn heat to high and boil the mixture until it is reduced to your liking.
  • Lower heat and return the chicken to the pan to reheat and coat with sauce.
  • Garnish: The toasted coconut.

Chicken breast chunks are marinated in ginger and lime, stir fried with sesame oil and honey, then served with coconut rice. A simple recipe with not too many ingredients, but the taste is an eye-opener!

1 ½ pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
2 limes, zested and juiced
2 tablespoons grated fresh ginger root
1 ¾ cups coconut milk
½ teaspoon white sugar
1 cup jasmine rice
1 tablespoon sesame oil
1 tablespoon honey
¼ cup sweetened flaked coconut

Steps:

  • In a glass bowl, mix chicken breast cubes with lime juice, lime zest, and grated ginger. Let marinate for about 20 minutes.
  • In a medium saucepan, combine the coconut milk and sugar over medium-high heat. Bring to a simmer. Stir in the jasmine rice, reduce heat to low, and cook tightly covered for about 20 minutes or until liquid is absorbed. Remove from the heat and fluff rice with a fork; cover, and keep warm.
  • In a large skillet or wok, heat the sesame oil over medium-high heat. Add chicken and marinade. Stir fry until the chicken is nicely browned, about 3 minutes. Drizzle the honey onto the chicken and continue to stir-fry for another minute or so, being careful not to let the honey burn. Remove from the heat and sprinkle with coconut.
  • Serve hot with the coconut rice on the side.

6 chicken thighs
4 garlic cloves
1/2 tablespoon ground ginger
2 tablespoons soy sauce
3 tablespoons Tabasco sauce (optional)
1 red pepper
2 carrots
3 celery ribs
1 onion
1 (15 ounce) can coconut milk (regular, not the diet stuff)
1 tablespoon chicken bouillon
1 tablespoon cumin
1/2 tablespoon sesame oil
2 tablespoons Worcestershire sauce
2 teaspoons five-spice powder
1/4 cup raw peanuts (or at leasted unsalted)

Steps:

  • Directions.
  • 1Brown chicken with garlic,with garlic cut in large pieces(about 3 slices in a clove)or simply toss chicken in frozen with chopped cloves.
  • 2Toss in all the vegetables, and chicken.
  • 3Mix together coconut milk, and cumin.
  • 4Toss everything, including coconut mix, in crock pot.
  • 5Cook time is based on how you like your meat. If you like to chew your meat, then 9 hours on low if the chicken is frozen.5hours on low if the chicken was browned first.
  • 6If you like to have your meat the fall off the bone, (assuming that your chicken has bones, the best way to cook this dish is the have bones in your chicken, cause it keeps in the flavour), 10-12 hours on low if the chicken is frozen. 7 hours if the chicken was browned first.
  • 7And just eat with rice, has to be rice, can't be anything except for rice. RICE! Plain white rice!

Chicken, eggplant, tomatoes, and red onion all get marinated in the same richly spiced coconut milk, then divided onto skewers by ingredient to ensure each is grilled to the optimal doneness-no overcooking the chicken because you're waiting for the onions to cook.

4 garlic cloves, finely grated
1 (3") piece ginger, finely grated
1 (14-ounce) can coconut milk
3 teaspoons finely grated lime zest
2 tablespoons fresh lime juice
2 tablespoons tomato paste
3 teaspoons kosher salt
1 1/2 teaspoons ground turmeric
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cardamom
2 pounds boneless skinless chicken thighs, trimmed, cut into 1 1/2" cubes
1 medium eggplant, cut into 1 1/2" cubes
1 small red onion, cut into 2" pieces
1 pint cherry tomatoes
Canola or vegetable oil (for grill)
Naan or flatbread, cilantro, lime wedges, and plain yogurt (for serving)
Special Equipment
14 (8-12-inch-long) metal or bamboo skewers soaked in water at least 1 hour

Steps:

  • Whisk garlic, ginger, coconut milk, lime zest and juice, tomato paste, salt, turmeric, cayenne, and cardamom in a large bowl. Transfer half of marinade to another large bowl. Add chicken to 1 bowl of marinade; toss to coat. Add eggplant, onion, and tomatoes to the other bowl; toss to coat. Cover and chill at least 1 hour.
  • Thread each ingredient onto its own set of skewers: divide chicken among 6 skewers, tomatoes among 4, eggplant among 3, and onion on 1.
  • Prepare a grill or grill pan for high heat; generously oil grates. Grill skewers, turning often, until well charred and cooked through, about 5 minutes for tomatoes, 10 minutes for chicken, and 15 minutes for eggplant and onion.
  • Just before serving, toast naan on grill until warmed through, about 2 minutes. Top grilled chicken and vegetables with cilantro and serve with naan, lime wedges, and yogurt alongside.
  • Do Ahead
  • Ingredients can be marinated 1 day ahead; cover and chill. Skewers can be assembled 1 day ahead; cover and chill.

COCONUT GINGER LIME CHICKEN

An offspring of the recent RSC #9, this recipe was inspired by some leftover light coconut milk. Despite it's odd origins this chicken is light, easy and delicious. You could give it a more Thai feel with the addition of nam pla or a more Caribbean flair by replacing the cayenne with a small amount of finely diced scotch bonnet peppers. While I prepared this on my George Foreman, certain it would work equally well on an outdoor grill. (As per WW Recipe Builder, 3 pts per serving.)

cooking spray
2 teaspoons gingerroot, finely grated
2 teaspoons lime zest
1/4 cup lime juice (about 2 limes)
2 tablespoons light coconut milk
1 teaspoon brown sugar
1/2 teaspoon canola oil
1 pinch cayenne pepper (to taste)

Steps:

  • Place all ingredients for the marinade in a non-reactive container or resealable bag.
  • Add the chicken cutlets and marinate for 2 to 4 hours.
  • Remove chicken from marinade loosely shaking off bits. Cook on indoor grill for 5 minutes until juices from chicken run clear.
