The Biggest Fattest Fluffiest Popover Recipe is SO easy! Just a few pantry staples and a really great pan turn out the biggest, fattest, fluffiest popovers ever!

Number Of Ingredients 5

4 large eggs
1 1/2 cups milk
3/4 teaspoon salt
1 1/2 cups all purpose flour
3 tablespoons melted butter

Steps:

  • Warm the eggs by placing them UN-CRACKED in a medium bowl and cover with hot water (as hot as your tap will go). Let them sit for 10 minutes.
  • Preheat the oven to 450°F and move the oven rack to a low position (to prepare for huge popovers!). Grease the popover pan thoroughly inside each cup as well as around the top edges.
  • With your whisk, beat together the eggs, milk and salt until they are combined. The yolks should be completely blended in.
  • Add the flour and whisk until the mixture is frothy and all large lumps are gone. Then quickly stir in the melted butter.
  • Divide the batter between the prepared popover cups. They should be about 3/4 of the way full.
  • Bake the popovers for 20 minutes and then reduce the heat to 350°F. Bake for another 10 or 15 minutes. The popovers will be very golden brown.
  • My preference is to serve immediately and enjoy them warm!

This recipe for giant cheese popovers is from chef Laurent Tourondel's cookbook, "Bistro Laurent Tourondel: New American Bistro Cooking."

Number Of Ingredients 6

4 cups all-purpose flour
1 tablespoon plus 2 teaspoons coarse salt
4 cups milk
8 large eggs
Nonstick cooking spray
10 ounces freshly grated Gruyere cheese

Steps:

  • Place a popover pan with 12 cups in the oven and preheat to 350 degrees.
  • Sift together flour and salt onto a piece of parchment paper; set aside.
  • In a small saucepan, heat milk over medium heat until small bubbles form around the edges of the pan. Whisk eggs in the bowl of an electric mixer fitted with the whisk attachment. Slowly add heated milk to eggs, whisking constantly. Gradually whisk in flour mixture.
  • Remove heated popover pan from oven; spray each cup with nonstick cooking spray and place on a baking sheet. Fill each cup with batter so it is level to the top; top with cheese.
  • Bake 15 minutes. Rotate pan 180 degrees; continue baking until golden brown, about 35 minutes more.
  • Invert pan and remove popovers. Serve immediately. Popovers may also be made 2 hours in advance. Cool on a wire rack and reheat in an oven heated to 450 degrees just before serving.

I discovered this recipe in Lee Lee's Recipe Box. The description to the recipe reads as follows: "These Giant-Size Popovers are made in individual containers to allow lots of room for rising. They can be filled with creamed ham, chicken, or seafood and served as a main dish, or they can be served piping hot with plenty of butter." Be sure when you make these to spread the custard cups out. These babies puff up pretty big ; ) I hope you will enjoy them!

4 eggs
1 cup milk
1 tablespoon butter, melted
1 cup flour
1 teaspoon sugar
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F.
  • Beat eggs in a medium sized bowl until light and fluffy.
  • Add milk and 1 TBSP butter, mixing well.
  • Combine dry ingredients; add to egg mixture, and beat until smooth.
  • Butter 6 custard cups generously.
  • Set the cups in a jellyroll pan, and place in a 400 F degree oven 5 minutes before filling.
  • Remove from oven.
  • Spoon batter evenly into the cups.
  • Bake at 400 F for 25 minutes; reduce the temperature to 350 F and bake an additional 20-25 minutes.
  • Turn off heat, and allow to stand 5 - 10 minutes.
  • (They should be extra large, empty crusty shells.).
  • Serve hot with butter, jam or jelly.

1 Tbsp unsalted butter, melted and cooled
2 large eggs
1 c whole milk
1 1/2 tsp kosher salt
1 c all purpose flour
soft butter for greasing pans

Steps:

  • 1. Preheat the oven to 400°F. Grease 6 wells of a large popover pan with soft butter and a pastry brush.
  • 2. Use a large mixing bowl and a wire whisk. Beat the eggs, milk, and salt together. Mix in the flour until completely smooth. Continue mixing for a few minutes to develop the gluten. Add the melted butter after the gluten is developed so the fat will not interfere with the gluten development.
  • 3. Fill the prepared cups only a scant half-full. Bake for 40 minutes on the center rack. The popovers will dry and become rigid.
  • 4. Turn off the oven, open the door, and with a sharp knife, quickly make a 1" slit in the side of each popover to release the steam. Close the oven door and let them sit for 10-15 minutes. During this period, the interior of the popovers should become dry and sturdy.
  • 5. Lift the popovers from the pan immediately after removing the pan from the oven by grasping the tops with an oven mitt or glove.
  • 6. Serve plain, or with butter and jam. Best served hot, straight from the oven. ***They can also be cut open and filled with sweetened berries and topped with whipped cream for a shortcake-type dessert.***

1 tablespoon butter
1/2 cup finely minced onion
1/2 lb fresh domestic mushroom, stemmed and thinly sliced
1/4 lb fresh shiitake mushroom, stemmed and minced
1 large garlic clove, minced
3/4 teaspoon salt
2 tablespoons dry sherry
3 large eggs
1 cup milk
1 cup unbleached white flour

Steps:

  • Preheat oven to 375'F.
  • Melt the butter in a 10" ovenproof skillet. Add the onion and saute over medium heat for 5 minutes.
  • Stir in the mushrooms, garlic and salt, and saute for another 5 minutes. Add the sherry and cook, uncovered for 10 minutes longer.
  • Meanwhile, place the eggs, milk and flour in a blender, and whip them into a smooth batter. Pour this over the mushroom mixture in the skillet, and transfer the pan to the center of the oven.
  • Bake for 25-30 minutes, or until set. Cut into wedges and serve hot or warm.
  • Serve popover with a green salad or some fresh fruit for a refreshingly uncomplicated meal.

1/2 cup milk, room temperature
1 egg, room temperature
1/2 cup all-purpose flour
1/4 teaspoon salt

Steps:

  • In a bowl, beat all ingredients just until smooth. Pour into four greased muffin cups. Fill the remaining muffin cups two thirds full with water. , Bake at 450° for 15 minutes. Reduce heat to 350° (do not open door). Bake 20 minutes longer or until deep golden brown (do not underbake).
