MORTADELLA AND MOZZARELLA BAGUETTE

Steps:
- Cut the baguette in half horizontally. Spread the pesto evenly on the insides of both sides of the baguette. Fold the mortadella to fit the baguette and shingle it along the bottom half. Tear the mozzarella slices into pieces on top of the mortadella. Season evenly with the salt and sprinkle with the capers. Close the sandwich with the top half of the baguette and cut into 4 or 6 pieces.
GRILLED MORTADELLA AND MUENSTER MONSTER SUB

- Preheat a grill to medium high. Make the olive aioli: Mix the mayonnaise, olives, mustard, garlic and honey in a bowl. Taste and add salt if necessary. Make a small cut on the edge of each slice of mortadella to prevent it from curling as it cooks. Grill the mortadella until marked, then flip, top with a slice of cheese and grill until the cheese melts, 1 to 2 more minutes. (You can also cook the mortadella in a large nonstick skillet over medium-high heat, about 3 minutes per side.)
- Sandwich build: Split the baguette in half lengthwise and toast lightly on the grill. Schmear the olive aioli on the baguette top. Layer the cheese-topped mortadella on the baguette bottom. Top with the tomatoes, lettuce and the baguette top. Cut into individual sandwiches. Photograph by Kang Kim

- Slice the roll in half horizontally. Spread the Jalapeno Honey Mustard on the lid only. Layer on the mortadella, muenster, peppers and lettuce. Close the lid and slice into halves or quarters, depending on who's hungry.
- In a small bowl, combine the mustard, honey and jalapenos. Use right away or store for up to a week in the fridge.
MORTADELLA BITES

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Unfold the sheet of puff pastry and roll into an 11-inch square. Using a pizza wheel or sharp knife, slice the dough into 1/2-inch-thick strips. Wrap each baton of mortadella in one strip of puff pastry, overlapping the dough slightly with each wrap-around to create a spiral appearance in the dough while leaving the mortadella ends exposed.
- Place the rolls on the prepared baking sheet, spaced 1 inch apart. Brush each roll with egg and top with a good pinch of Gruyere. Bake until golden brown and puffed, 25 minutes.
- Serve warm, with mustard if desired.
ITALIAN SUB "BOIL"

- Position a rack in the center of the oven and preheat to low broil.
- Halve the rolls lengthwise, then slice on the bias into triangular nacho chip shapes. Generously coat the pieces with olive oil and season with salt. Place on 2 rimmed baking sheet in a single layer and broil until just golden brown, 4 to 5 minutes. They should still have give and a chew. Set aside.
- Set a medium skillet over medium heat and add the pancetta. When the pancetta starts to sizzle, stir every minute or so, until golden brown, about 10 minutes. Drain on a paper towel-lined plate. Cool to room temperature.
- Cover the surface of a table or long wooden cutting board with parchment paper or butcher paper. First, spread a layer of the shaved iceberg on the paper. Next, layer on the golden-brown nacho chip-sized oily pieces of sub rolls. Then, add the mortadella, capicola (AKA gabagool) chiffonade and Genoa salami, ribboned around, making sure everything has some height. Next, add the pancetta followed by the Asiago cheese and mozzarella. Add the tomatoes followed by the giardiniera. Finally, using a squeeze bottle, douse it in the vinaigrette. Serve with chips on the side if you like.
- Ring the bell and beckon the kids. Don't forget your sub bib either.

- Prep your veg! Cut 1 head of iceberg lettuce in half through the core. Peel off flimsy outer layers. Reserve one half for another use (perhaps this Iceberg Salad with Italian Dressing?). Cut remaining half in half again through the core (so you have two quarters), then thinly slice crosswise to create shreds. Peel ½ small red onion and cut in half through the root. - Drain and finely chop 1 cup jarred mixed giardiniera. Aim for the veg to be the size of peas—you don't want huge pieces that will get in the way of your sandwich experience. Transfer to a small bowl. Stir in ⅔ cup mayonnaise; taste and season with salt.
- Slightly overlap 2 sheets of parchment paper to create 1 larger sheet. Cut 16x4" loaf sesame bread in half lengthwise with a serrated knife and place on parchment. You will build the sandwich on parchment for easy wrapping and cutting.
