GENERAL TSO'S TOFU

1 (16 ounce) box firm tofu
1 egg
3/4 cup cornstarch
vegetable oil (for frying)
3 chopped green onions
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
2 tablespoons soy sauce
4 tablespoons sugar
red pepper flakes
1 tablespoon sherry wine (optional)
1 tablespoon white vinegar
steamed broccoli

Steps:

  • Drain, dry and cut tofu into one inch chunks-You can freeze the tofu the night before to get a more"chicken-like" texture, if desired.
  • Mix egg with 3 Tbs of water.
  • Dip tofu in mixture.
  • Sprinkle cornstarch over tofu to completely cover.
  • Heat oil in pan and fry tofu pieces until golden brown and set aside.
  • Drain oil.
  • Heat 3 Tbs vegetable oil in pan on medium heat and add onions, ginger and garlic, cook for about two minutes (be careful not to burn garlic).
  • Add vegetable stock, soy sauce, sugar, red pepper flakes and vinegar.
  • Mix 2 Tbs of water and 1 Tbs cornstarch and pour into mixture, stirring well.
  • Add fried tofu and coat evenly.
  • Serve immediately with steamed broccoli over your choice of rice.

This soup is tasty, delicious, easy to make and full of vegetables! This is a very simple Korean soup eaten with rice and other side dishes. Includes tofu, green squash, mushrooms and onions. True Korean recipe! Garnish with sliced green onions.

3 ½ cups water
3 tablespoons denjang (Korean bean curd paste)
1 tablespoon garlic paste
½ tablespoon dashi granules
½ tablespoon gochujang (Korean hot pepper paste)
1 zucchini, cubed
1 potato, peeled and cubed
¼ pound fresh mushrooms, quartered
1 onion, chopped
1 (12 ounce) package soft tofu, sliced

Steps:

  • In a large saucepan over medium heat, combine water, denjang, garlic paste, dashi and gochujang. Bring to a boil and let boil 2 minutes. Stir in zucchini, potato, mushrooms and onions and let boil 5 to 7 minutes more. Stir in tofu and cook until tofu has expanded and vegetables are tender.

  • Using your EZ Tofu Press, press your tofu for at least 10 minutes. Turning the knobs tighter every few minutes.
  • In a small bowl mix together cornstarch, hoisin sauce, coconut aminos, brown sugar, rice wine vinegar, sesame seed oil and lime juice. Whisk together to blend.
  • Pour mixture into a small sauce pan. Continue to stir over low heat until sauce thickens then remove from heat. *Sauce will thicken quickly at the end, be sure to remove quickly when it starts to thicken.*
  • In a frying pan over medium heat, add 1 T oil. While oil is warming up, cut tofu into cubes. Fry tofu over medium heat until crispy.

  • Wrap tofu in a clean, absorbent towel and set something heavy on top to absorb excess moisture, such as a cast iron skillet (or use a tofu press). Let rest for about 10 minutes.
  • While tofu is pressing, prepare stir-fry sauce by combining sesame oil, cornstarch, minced garlic, minced ginger, rice vinegar, maple syrup, tamari or soy sauce, and water in a small mixing bowl and whisk thoroughly to combine. Taste and adjust seasonings as needed (I left mine as is).
