White Bean Soup for a Crowd image

This hearty, easy soup is a filling and economical solution to feeding a crowd for supper. Serve it with a salad and cornbread or crusty whole grain bread for a delicious meal.

2 pounds dry great Northern beans
6 tablespoons olive oil
3 medium onions, finely chopped
3 carrots, finely chopped
1 pound cooked ham, finely diced
6 medium tomatoes, peeled and finely chopped
3 large cloves garlic, finely chopped
¾ cup chopped fresh parsley
4 teaspoons chopped fresh thyme
1 teaspoon celery salt
salt and freshly ground black pepper to taste

Steps:

  • Sort and wash beans according to package directions. Place in a 3 1/2-quart or larger slow cooker. Fill the cooker with water to capacity. Soak without turning on the cooker, 8 hours to overnight.
  • Drain excess water and refill cooker with fresh water. Turn cooker to Low and cook until beans are soft, about 8 hours.
  • Heat oil in a large soup pot over medium-low heat. Add onions and carrots; cook, stirring occasionally, until onions are soft and carrots begin to soften, about 5 minutes. Add ham, tomatoes, and garlic and let simmer for another 5 minutes.
  • Puree about 2/3 of the cooked beans in small batches in a blender or food processor, using the bean broth to help puree and adding extra water if needed. Add puree and remaining whole beans to the soup pot; add enough water to bring soup to desired thickness. Stir in parsley, thyme, celery salt, salt, and pepper. Simmer slowly, stirring occasionally, until soup is hot and all vegetables are soft, about 20 minutes.

If you ever thought that beans are boring, this creamy flavor-packed white bean soup will blow your mind! This is a simple, vegan and budget-friendly recipe that tastes and smells amazing. Added bonus? It will be on the table in 25 minutes!

2 cans (28oz - 800 grams) cannellini beans or white beans, drained
1 medium-size onion, diced
1 celery stalk, diced
1 large carrot, diced
1-2 garlic cloves, diced or pressed
1 cup (7 oz - 200 grams), frozen spinach * ((optional))
2 medium-size potatoes, peeled and cut into chunks
1 Tbsp olive oil, plus more for serving
1 Tbsp tomato paste
1/3 cup (80 ml) white wine ()
1 sprig rosemary (or 1 Tbsp of chopped fresh leaves/1/2 tsp of dried)
2 cups (500 ml) vegetable broth or hot water ()
1/2 tsp paprika ((optional))
1/2 tsp fine salt, plus more to taste
1/8 tsp black pepper, plus more to taste

Steps:

  • Warm the olive oil in a large pot over medium heat. Once the oil is shimmering, add the diced onion, carrot, and celery. Cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
  • Add the garlic, beans, tomato paste, potatoes, rosemary (whole sprig, chopped, or dried, whatever it's easier for you) and paprika (if you use it). Cook stirring frequently, about 1 minute.
  • Add the wine, stir well and let it simmer until it has evaporated, cooking for another minute.
  • Then add the frozen spinach, the vegetable broth and a good pinch of salt and pepper. Raise the heat and bring the mixture to a boil, then cover the pot, reduce heat and cook gently for 15 minutes.
  • When the potatoes are soft and the soup is thick and creamy, remove the pot from heat, then remove the sprig rosemary*. Taste and season with salt and pepper. (I usually add a pinch of salt at the beginning + 1/2 tsp later. You might need more salt, depending on your vegetable broth and on your personal preferences.)*
  • Divide into bowls, drizzle with olive oil or extra virgin olive oil, and more freshly ground black pepper if you like. Serve with crusty whole grain bread and, if you don't keep it vegan, add freshly grated parmesan cheese for extra flavor. Enjoy!

1 Tbsp olive oil ((if oil-free, sub twice the amount of water))
1 small white, yellow, or sweet onion, diced ((1 small onion yields ~1 ½ cups or 200 g))
4 cloves garlic, minced ((4 cloves garlic yield ~2 Tbsp or 18 g))
2 medium carrots, peeled and diced ((2 carrots yield ~3/4 cup or 100 g))
2 stalks celery, diced ((2 stalks yield ~1 cup or 100 g))
1 ¾ - 2 tsp sea salt
1/4 tsp black pepper
1 tsp dried thyme ((or 1 Tbsp fresh thyme))
2 medium potatoes, cut into 1/2-inch pieces ((we used Yukon gold // 2 potatoes yield ~3/4 lb or 380 g))
2 (15-oz.) cans white beans, drained and rinsed
5 cups water
2-3 cups finely chopped kale ((optional))
1 (13.5-oz.) can light coconut milk
1-2 Tbsp lemon juice
Fresh parsley
Whole grain (or gluten-free bread)

Steps:

  • In a large pot or Dutch oven, heat the oil over medium-low heat. Once hot, add the onion and cook until translucent - about 2 minutes. Add the garlic, carrots, celery, salt, and pepper and cook until softened and fragrant, stirring occasionally - about 4-5 minutes.
  • Add the thyme and stir for one minute. Then add the potatoes, beans, and water and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the potatoes are fork-tender and the flavors have melded.
  • Stir in the kale (optional), then cover and simmer until tender - about 5 minutes. Finally, add the coconut milk and lemon juice and heat through - about 2 minutes. Taste and adjust, adding more salt for balance or more lemon juice for brightness. Optionally, garnish with fresh parsley and serve warm with toasted bread of choice.
  • This soup is even better on the second day! Leftovers keep for 3-4 days in the refrigerator or in the freezer for up to 1 month.

2 (15 1/2 ounce) cans white cannellini beans
1 head spinach or 1 head just about any green but escarole is traditional in italian white bean soup
1 (32 ounce) container chicken bone broth (Pacific foods)
4 -5 garlic cloves
2 sprigs fresh thyme, if you like it
1 pinch cayenne or 1 pinch seeds
1/4 cup fresh basil leaf, if you like it
1/4 cup flat leaf parsley, chopped
3 -4 ripe tomatoes, chopped
1 large onion, diced
1 carrot, diced
1 teaspoon black pepper
1 small zucchini or 1 small yellow squash
1 roasted red pepper, if you prefer
3 ounces finely chopped pancetta or 3 ounces unsmoked bacon
1 tablesppom extra virgin olive oil
parmesan cheese
salt...add after only after you add parmesan cheese
2 -3 tablespoons beef gelatin mixed in warm water

Steps:

  • Heat oil in pan, if using pancetta or bacon add to pan now, add onion and cook till transclucent and fat is rendered from bacon/pancetta, add the garlic and cook for 1 minute, add the carrots, thyme, cayenne seeds and cook for about 2 minutes minutes, then add the chopped Escarole till wilted and.
  • add the broth and beans and tomatoes, if using pepperoni instead of bacon or pancetta, add that now. Simmer for 15 minutes, add the zuchini or squash, red pepper and cook till soft. When done stir in parsely and basil leaves and parmesan cheese -- add salt if needed at this point.
  • Puree the soup if you are on 1st stage of soft foods. Eat it like it is after that stage. It is filled with fiber, protein, good carbs, good fat and phytonutrients. The bone broth is a good gut healer. Since it has gelatin in it, it will thicken when cooled but is easily heated back to soupy consistency. This was my go to recipe for gastric sleeve patients, they seem to tolerate it very well.
