8 ounces monterey jack cheese, coarsely grated
8 ounces muenster cheese, coarsely grated
2 tablespoons cornstarch
1 cup dry white wine
2 teaspoons minced garlic
1 tablespoon kirsch
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon freshly ground nutmeg
tiny new potatoes, parboiled
lightly steamed broccoli floret
lightly steamed cauliflower floret
lightly steamed asparagus
button mushroom, wiped clean and stems removed
cubed smoked ham
cooked sliced sausage
long thick pretzel stick
lightly toasted cubes French bread

Steps:

  • In a bowl or large plastic bag, combine the cheeses and toss with the cornstarch to coat. Set aside until ready to use.
  • In a fondue pot or large heavy saucepan, bring the wine and garlic to a simmer over medium-low heat.
  • Add the cheese, a bit at a time, stirring well to prevent from clumping, and cook until melted.
  • Add the kirsch, salt, pepper and nutmeg; stir well, and cook, stirring until the mixture is smooth, about 3 to 5 minutes.
  • Adjust the seasonings to taste.
  • Set the pot over a candle or canned heat and serve hot with assorted dipping items.

1 lb swiss cheese, grated
1/2 lb gruyere cheese, grated
3 tablespoons all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon white pepper
1 1/4 cups dry white wine (about)
3 garlic cloves, minced
1 lb crusty French bread or 1 lb sourdough bread, cut into 1 1/2 inch cubes

Steps:

  • Combine both cheeses, flour, nutmeg, and white pepper in large bowl; toss to coat.
  • Bring 1 cup wine and garlic to simmer in a heavy large saucepan over low heat.
  • Add cheese mixture by handfuls, whisking until melted and smooth after each addition.
  • Mix in more wine by tablespoonfuls to reach desired consistency.
  • Transfer to fondue pot.
  • Set fondue over candle or canned heat.
  • Serve fondue with bread.

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Steps:

  • In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
  • Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
  • Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

1 garlic clove, crushed
2/3 cup dry white wine
Juice of half a lemon
8 ounces Gruyere cheese, shredded
2 teaspoons cornstarch
1 tablespoon Kirsch
Freshly ground pepper and grated nutmeg
For Dipping:
1 cup cubed French bread
1/2 cup broccoli florets, blanched until tender and cooled
12 cherry tomatoes
1/2 cup quartered artichoke hearts

Steps:

  • Rub inside of flameproof earthenware fondue pot or 2-quart saucepan with garlic clove. Add wine and lemon juice and heat over low heat, just until gently bubbling. Gradually add cheese, stirring constantly until smoothly melted. Meanwhile, whisk cornstarch with Kirsch and seasonings until blended to a smooth paste, stir it into cheese and cook 3 minutes more. Adjust seasonings to taste. Decoratively arrange bread and vegetables on a large platter or divide among 4 plates. Traditionally, fondue is served at table in a fondue pot set over an alcohol burner or small candle. Use long forks to spear bread or vegetable of choice and dip into cheese.

Every year during New Years, you can see me at home of with a few friends. A few warm snacks is great to have on hand. Dust off that Fondue pot, cut up some snacks and dip away!

2 Tbsp olive oil
2 clove garlic, minced or zested
3 box (8oz) cream cheese or 2 pkg cream cheese and 8oz sour cream)
1 1/4 c whipping cream (heavy cream)
1 Tbsp dried basil
1 tsp chili powder (less if you do not like spicy foods)
1 tsp dried oregano
salt and pepper to taste

Steps:

  • 1. In a medium pot over medium heat, heat the oil and saute the garlic being careful to not burn garlic or it will be bitter. Gradually add the rest of the ingredients, except for the items you wish to use for dippers. Once all the ingredients are melted and well mixed, transfer the mixture into your cheese fondue pot.
  • 2. Light the fondue burner and adjust the heat to maintain the cheese fondue warm but not too hot. Arrange a tray with fondue skewers and items for dipping.
  • 3. Note: If your mixture is too thick, add more light cream (or alcohol of your choice). If the mixture is too runny, add cheese.
  • 4. Tip: If you are preparing this dip ahead of time, make sure to have more cream handy to soften the dip when you serve it.
  • 5. Suggestions for dipping: Pieces of Italian Bread, pretzel sticks, cooked shrimp, cooked ham, mushrooms and steamed broccoli, Boiled potatoes cubed into bite size and assortment of vegetables.

6 cloves garlic (unpeeled)
2 small shallots (unpeeled)
1/2 lb finely grated gruyere cheese (about 4 cups)
1 tablespoon all-purpose flour
3/4 cup dry white wine
1 tablespoon lemon juice
1 package chevre cheese, cubed
1 baguette, cut into 4 cm chunks (about 8 cups)

Steps:

  • Wrap unpeeled garlic cloves and shallots tightly in piece of heavy duty foil.
  • Bake at 350 F for about 45 minutes or until garlic is soft.
  • Remove and discard garlic and shallot skins; chop very fine.
  • Put gruyere cheese in medium bowl and sprinkle with flour; toss.
  • Set aside.
  • In medium-size, heavy bottomed saucepan, combine wine, lemon juice, garlic and shallots.
  • Place over medium heat and bring to a simmer.
  • Reduce heat to low and gradually add gruyere and chevre cheeses, stirring constantly until cheeses are completely melted.
  • Transfer to fondue pot and set over fondue warmer.
  • Serve immediately.
  • To serve, place bread cubes in basket.
  • Spear bread chunk with fondue fork and dip into cheese; remove from fondue fork to small plate and eat with regular fork.

3 garlic cloves, diced
2/3 cup dry white wine
4 cups Fontina cheese, shredded
1 1/2 cups gruyere cheese, shredded
2 teaspoons cornstarch
2 cups finely chopped spinach leaves
1/4 cup heavy cream
salt & freshly ground black pepper
1 tablespoon minced fresh chives
chilled cooked shrimp (optional)
steamed asparagus spear (optional)
zucchini, cut into matchsticks (optional)
white mushroom (optional)
cherry tomatoes (optional)
stuffed pasta, cooked (optional)
bread cubes (optional)
crackers (optional) or breadstick (optional)

Steps:

  • In a heavy saucepan, melt the butter over medium-low heat. Add the garlic and sauté for 2 to 3 minutes, until it becomes golden brown around the edges. Be careful not to overcook the garlic, or it will become bitter. Add the wine.
  • In a bowl, toss the cheeses with the cornstarch to coast. Add the cheese to the pan, 1 cup at a time, stirring frequently, until the cheese melts before adding the next cup. Add the spinach and the cream. Stir until the mixture becomes creamy and smooth. Season with salt and pepper.
  • Transfer the mixture to a fondue pot over low heat, or pour into a warmed ceramic ramekin. Sprinkle with minced chives. Serve immediately with your choice of dippers.
