GARLIC PARMESAN CHICKEN
Buttery, baked chicken with a garlic parmesan breading. A simple butter mixture bakes into the garlic parmesan chicken to keep it tender.

Steps:
- The chicken breasts we used were large (3 chicken breasts = 2 1/3 pounds). If the chicken breasts you are using are also large cut them in half to get 6 pieces.
- Place the chicken breasts in a zippered bag. Use the side of a meat tenderizer to pound the chicken breasts to 1/2" thickness throughout so they cook evenly.
- Preheat the oven to 350 degrees. Place 1/4 cup butter in a 9x13 pan and place it in the oven for the butter to melt while the oven heats.
- In a bowl, mix the breadcrumbs, cheese, parsley, salt and pepper. Place milk in another shallow bowl.
- Dip chicken in milk, then roll it in the crumb mixture.
- Place chicken in the baking dish with the melted butter.
- Combine the butter, garlic and lemon juice and drizzle over the chicken, then sprinkle on the paprika.
- Cover the pan loosely with foil and bake for 20 minutes.
- Uncover the pan, turn the chicken and bake uncovered for an additional 15 minutes. The baking time will depend on the thickness of the chicken, so be sure to check it to make sure it is thoroughly cooked. The internal temperature should be 165 degrees Fahrenheit.

I found this on "Six Sisters' Stuff" blog and it was noted that this is a variation on the same dish that is served at Longhorn Steak House. Grilling the chicken gives it extra flavor. *Total time includes 3 hours marinating time*

- Combine ingredients for marinade and pour over chicken. Let marinate in refrigerator for 2-3 hours or overnight.
- Remove from marinade and discard leftover marinade.
- Grill 12-15 minutes, until chicken is done.
- While the chicken is cooking, prepare the ranch spread and Parmesan crumb topping.
- For the ranch spread, mix 1/4 cup of grated Parmesan and 1/4 cup ranch dressing. Set aside.
- For Parmesan crumb topping, mix bread crumbs, garlic salt, shredded Parmesan and butter. The crumbs should be evenly moistened.
- Position rack in center of oven. Preheat broiler.
- Transfer cooked chicken to oven-safe casserole dish.
- Spread 2 tablespoons ranch spread on each breast.
- Top with shredded provolone.
- Top provolone with Parmesan crumb topping.
- Place chicken under broiler and cook until cheese melts and crumb topping begins to turn light brown. Serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

- Adjust oven rack to upper-middle position and heat oven to 425°.
- Combine breadcrumbs, Parmesan, garlic, oil, salt, and pepper to taste in bowl.
- Pat chicken dry with paper towels and transfer to 13"x 9" baking dish which has been sprayed with Pam.
- Combine basil and mayonnaise in small bowl and spread mixture evenly over chicken.
- Sprinkle breadcrumb mixture over mayonnaise, pressing lightly to adhere.
- Bake until crumbs are golden brown and thermometer inserted in thickest part of chicken registers 160 degrees, about 18 to 22 minutes.
