MURRAY'S FRENCH TOAST

This is my (Bird's) favorite French toast recipe. Growing up with 4 siblings, my dad would make sugar-butter when there was no syrup in the house (hence 'Murray's', named after my dad). Some folks like it on pancakes, but for me, it's on French toast all the way! I even have a 'pattern' to how I eat it. I haven't tried it using Splenda yet, so I guess I need to soon, but then, this is not a 'diet-conscience' recipe. When we were real broke, and there was no money even for dog food, my dad would leave some egg mixture in the bowl, break up some bread in it, and the dog (and cats) ate too (we were always bringing home strays). :) My dad was the master of inginuity, making sure we all had full bellies!

Number Of Ingredients 7

6 tablespoons butter, room temperature
6 tablespoons sugar
4 eggs
1/4 cup 2% low-fat milk
8 slices white bread
butter (for pan)
ground cinnamon

Steps:

  • SUGARBUTTER: Using the tines of a fork, mix butter and sugar in a small bowl. Do not beat (you should feel the granules of sugar in the butter). Set aside.
  • Beat eggs and milk in a bowl large enough to fit a slice of bread. Heat a small pat of butter in a large pan or griddle over medium heat.
  • When butter is melted in pan, dip 1 slice of bread into the egg mixture, flip over, then hold it over the bowl for a second or so to let excess egg drip off. Place into pan and sprinkle with a light dusting of cinnamon. Repeat with other slices (so as to fit on griddle or in pan, may need to do in batches).
  • Cook for 3-5 minutes until golden brown. Flip toast and cook remaining side to golden (sprinkle with more cinnamon if desired).
  • Place one toast each onto individual plates. Spread sugar-butter over one side (like buttering toast). Place another slice on top and repeat. Continue until you reach the desired stack amount and serve. I love to eat the crust off first, then dive into the center of soft french toast smothered in sugar-butter to divulge into at the end. A mouth-watering experience!

Four 2 1/2-inch-thick slices country bread, such as filone
9 large eggs
1 quart heavy cream
1 cup granulated sugar, plus more for sprinkling
1/4 cup brandy
1 teaspoon kosher salt
4 tablespoons (2 ounces) unsalted butter
All-purpose flour, for dusting
Confectioners' sugar, for serving (optional)
Pure maple syrup, warmed, for serving

Steps:

  • Place the bread in a 2-quart baking dish. Whisk the eggs in a large bowl until combined. Add the cream, granulated sugar, brandy and salt and whisk to combine.
  • Pour the custard over the bread slices and let sit at room temperature for 30 minutes. Flip the bread over, cover with plastic wrap and refrigerate for 24 hours.
  • Position an oven rack in the middle of the oven and preheat to 350 degrees F.
  • Melt the butter in a large ovenproof saute pan over medium-high heat. Lightly sprinkle one side of each slice of the soaked bread with some flour and some granulated sugar. Place the soaked bread floured-side down in the pan and cook until caramelized, about 5 minutes. Flip the bread over, sprinkle the other side with flour and granulated sugar and transfer the pan to the oven.
  • Bake until the toast is cooked through, caramelized on top and custardy in the middle, 18 to 24 minutes.
  • Sprinkle with confectioners' sugar if using and serve immediately with maple syrup.

This is how my grandma taught me to make french toast growing up. It's a quick, simple recipe that uses ingredients most people have on hand.

5 eggs
1 cup milk
1 pinch salt (optional)
1 tablespoon sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
butter
8 slices white bread

Steps:

  • Break eggs into a pie plate and lighty beat.
  • Stir in milk, salt, sugar, cinnamon, and vanilla.
  • Heat skillet over med/high heat.
  • Grease skillet with butter, lightly covering the bottom.
  • Place one piece of bread in the egg mixture.
  • Quickly flip so that both sides are coated, making sure not to soak up too much.
  • Cook in skillet until each side is light to medium brown.
  • Repeat steps as you make room in the skillet.
  • You may need to grease the skillet again between batches.
  • Serve warm with syrup and powdered sugar if desired.

6 slices day-old Texas toast
4 large eggs
1 cup 2% milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 to 1/2 teaspoon ground cinnamon
1 cup crushed cornflakes, optional
Confectioners' sugar, optional
Maple syrup

Steps:

  • Cut each piece of bread into thirds; place in an ungreased 13x9-in. dish. In a large bowl, whisk the eggs, milk, sugar, vanilla and cinnamon. Pour over bread; soak for 2 minutes, turning once. If desired, coat bread with cornflake crumbs on all sides. , Place in a greased 15x10x1-in. baking pan. Freeze until firm, about 45 minutes. Transfer to an airtight freezer container and store in the freezer., To use frozen French toast sticks: Place desired number on a greased baking sheet. Bake at 425° for 8 minutes. Turn; bake 10-12 minutes longer or until golden brown. Sprinkle with confectioners' sugar if desired. Serve with syrup.

FRENCH TOAST



French Toast image

Crackling around the edges and crisp on the outsides with pudding-soft centers, these thin slices of French toast taste like bread pudding, and feel especially like dessert if you smother them with maple syrup, jam or other sweet toppings. The key is to fully soak the bread, then cook the slices gently, so the insides cook through without the outsides burning. If the bread starts to brown too quickly, turn down the heat. You can double, triple or quadruple the amounts below to make enough for friends. Serve them in batches straight from the pan, or keep warm in a 200-degree oven on a plate or baking sheet.

Steps:

  • In a bowl or shallow dish that will fit the bread, beat the egg, milk and a pinch of salt with a fork until very smooth and bubbly on top.
  • Add both bread slices (it's OK to stack them if they don't quite fit) and soak them, turning a few times, until the mixture is fully absorbed.
  • Set a large nonstick skillet over medium heat. Add the butter and swirl it around the pan until it melts. The soaked bread will be really soft, so carefully pick up each slice by sliding your whole hand under it, then setting it in the pan. Cook until the bottoms are golden brown, about 3 minutes. Flip the slices, reduce the heat to medium-low and cook until the other sides are brown, 2 to 3 minutes.
  • Enjoy hot, with more butter spread over the slices and with your favorite toppings.
