1 (1 pound) loaf day old French bread
2 tablespoons garlic powder
2 tablespoons dried basil
½ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut bread into small cubes and place onto a shallow baking pan or cookie sheet.
  • Drizzle oil over the bread to lightly cover and sprinkle with garlic powder and basil.
  • Bake at 400 degrees F (200 degrees C) for 5 to 10 minutes or until lightly brown and toasted.

1/2 loaf day-old bread
3 tablespoons extra-virgin olive oil
2 garlic cloves, crushed
1/4 teaspoon coarse salt

Steps:

  • To make the croutons, cut the bread into 3/4-inch cubes. Heat a large skillet over high heat and add the olive oil, swirling to coat the bottom of the pan. Add the garlic and cook until it sizzles, about 50 seconds. Add the bread and cook, stirring, until golden brown, about 2 minutes. Discard the garlic. Sprinkle the croutons with the salt and serve over the lentil vegetable soup.

4 tablespoons butter
1 clove garlic, minced
3 (3/4 inch thick) slices French bread, cut into cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saute pan, melt butter over medium heat. Stir in garlic; cook and stir for 1 minute. Add bread cubes, and toss to coat. Spread on a baking sheet.
  • Bake for 15 minutes, or until crisp and dry. Check frequently to prevent burning. Cool.

Lemon Fennel Soup With Garlic Croutons image

2 tablespoons butter
3 shallots, chopped finely
2 large fennel bulbs, sliced thinly, save the feathery fennel tops to use as garnish
salt
black pepper, freshly ground
2 cups vegetable stock or 2 cups chicken stock
2 cups milk
2 slices fresh white bread, crusts removed
1 garlic clove, finely chopped
1 lemon, juice and zest of
1 tablespoon fresh parsley, chopped

Steps:

  • Melt half the butter in a saucepan and sauté the shallots until translucent.
  • Add the fennel.
  • Season with salt and pepper to your taste. Cover the pan and sweat the fennel for 10 minutes, until softened.
  • Add the stock and bring to a boil.
  • Simmer for 20 minutes.
  • Remove from heat and carefully puree the soup in a food processor or with a hand-held blender.
  • Return to the saucepan, and thin with milk to the desired consistency, I use about 1 1/2 cups, use more if you like it thinner. Heat through.
  • Meanwhile, cut the bread into 1/2 inch cubes.
  • Melt the remaining butter in a frying pan, and sauté the bread cubes with the garlic and lemon zest, until golden and toasted.
  • Remove the soup from the heat.
  • Stir in the lemon juice, and adjust the seasoning, if necessary.
  • Divide the soup between individual bowls.
  • Garnish with the croutons and chopped parsley.

1 (4 lb) roasting chickens
1 large yellow onion, sliced
olive oil
salt
fresh ground black pepper
2 lemons, quartered
2 tablespoons unsalted butter, melted
6 cups bread cubes, 3/4 inch (1 baguette or round boule)

Steps:

  • Remove the giblets from the chicken and wash it inside and out.
  • Remove any excess fat and pinfeathers.
  • Toss the onion with a little olive oil in a small roasting pan.
  • Place the chicken on top and sprinkle with the salt and pepper inside.
  • Place the lemons inside the chicken.
  • Pat the outside of the chicken dry with paper towel, brush with the melted butter, and sprinkle with more salt and pepper.
  • tie the legs together with kitchen string, and tuck the wing tips under the body of the chicken.
  • Roast for 1 1/4 to 1 1/2 hours, or until the juices run clear when you cut between the leg and the thigh.
  • cover with foil and allow to sit at room temperature for 15 minutes (the onions may burn, but the flavor is good).
  • meanwhile, heat a large saute pan with 2 TBs of olive oil until very hot.
  • Lower the heat to medium low and saute the bread cubes, tossing frequently, until nicely browned, 8 to 10 minutes.
  • Add more olive oil as needed, and sprinkle with 1/2 tsp salt and 1/4 tsp pepper.
  • Place the croutons on a serving platter.
  • Slice the chicken and place it, with all the pan juices, over the croutons.
  • Sprinkle with salt and serve warm.

1/4 cup extra-virgin olive oil
2 tablespoons grated Parmesan cheese
2 tablespoons fresh lemon juice
2 teaspoons minced garlic
1 1/2 teaspoons minced anchovy fillets
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
For salad:
2 1 1/2- to 2-pound whole live lobsters
2 large hearts of romaine, cut lengthwise in half
2 cups coarsely grated peeled celery root or parsnips
1/4 cup coarsely grated Parmesan cheese

  • For dressing:
  • Puree all ingredients in blender. (Can be made 1 day ahead. Chill.)
  • For salad:
  • Cook lobsters in large pot of boiling salted water until just cooked through, about 12 minutes. Using tongs, transfer lobsters to large bowl; cool. Working over bowl, remove meat from tails and claws; reserve 1/4 cup lobster juices from bowl. Cut tail meat in half lengthwise. Whisk reserved juices into dressing; season with salt and pepper.
  • Arrange half of 1 romaine heart on each of 4 plates. Toss celery root with enough dressing to coat; mound on lettuce. Top with lobster meat; drizzle with dressing. Garnish each salad with grated Parmesan cheese and 3 croutons.

Nine 1/2-in/12-mm slices of a large baguette or 12 slices of a thin baguette
2 tbsp extra-virgin olive oil
1 1/4 tsp crushed garlic
Pinch of salt

Steps:

  • Position a rack in the lower third of the oven and preheat it to 350°F/180°C/gas 4.
  • Toast the baguette slices very lightly in a traditional toaster or toaster oven. Allow to cool. Mix the oil, garlic, and salt together in a small bowl. With a pastry brush, brush both sides of the toast with this mixture, and then cut the slices into 1/2-in/12-mm cubes. Transfer the cubes to a rimmed baking sheet and bake until they are golden brown and crispy, 10 to 15 minutes, turning once. Allow to cool completely before using. Store any leftovers in an airtight container for up to 5 days.
