Stir-Fried Bok Choy with Ginger and Garlic image

1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon minced fresh ginger
8 cups chopped fresh bok choy
2 tablespoons reduced-sodium soy sauce
Salt and ground black pepper

Steps:

  • Heat oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add bok choy and soy sauce cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper.

Number Of Ingredients 8

2 tablespoons neutral cooking oil, like canola
2 garlic cloves, peeled and minced
1 ½-inch piece ginger root, peeled and minced
¼ teaspoon red-pepper flakes, or to taste
4 bunches of baby bok choy, approximately 1½ pounds, cleaned, with the ends trimmed
1 tablespoon soy sauce
1 tablespoon chicken stock or water
Toasted sesame oil for drizzling

Steps:

  • In a large sauté pan with a lid, heat oil over medium-high heat until it starts to shimmer. Add garlic, ginger and red-pepper flakes and cook, stirring constantly, until fragrant, about 45 seconds.
  • Add bok choy and stir carefully to cover with oil, then cook for approximately 2 minutes. Add soy sauce, stock or water, then cover pan and cook for approximately 2 minutes more, until steam begins to escape from beneath the lid of the pan.
  • Uncover and continue to cook until liquid is close to evaporated and stalks are soft to the touch, approximately 3 minutes more.
  • Remove to a warmed platter and drizzle with sesame oil.

2 bunches of organic bok choy {or 3-4 bunches organic baby bok choy}, cut into 2" sections separate whites from leafy ends
1 TB organic coconut oil
1-inch length of organic ginger, grated or diced fine
2 organic garlic cloves, pressed or minced
Himalayan sea salt
Coconut aminos, optional addition

Steps:

  • Heat a skillet with coconut oil over medium heat. Add the firm white pieces of bok choy and sauté 2-3 minutes. Add the green pieces, ginger, garlic, and season with sea salt. Continue sautéing until the garlic is fragrant and the bok choy is vibrant in color. Remove from heat and serve immediately with coconut aminos on the table as an optional addition.
