GARDEN HERB BRAID

My family loves this bread, and I've made it for church dinners, too. In the summer, I like to use fresh herbs from my mom's garden. You can vary the herbs and substitute your favorites. -Martha Smith Orient, Ohio

Yield 1 loaf. (16 slices).

Number Of Ingredients 16

4 to 4-1/2 cups all-purpose flour
3 tablespoons sugar
2 packages (1/4 ounce each) quick-rise yeast
1-1/2 teaspoons salt
3/4 teaspoon each dried marjoram, thyme, parsley flakes, basil and oregano
3/4 teaspoon dried rosemary, crushed
3/4 teaspoon rubbed sage
3/4 cup milk
1/2 cup water
1/4 cup butter, cubed
1 egg
TOPPING:
1 tablespoon butter, melted
1/8 teaspoon each dried marjoram, thyme, parsley flakes, basil and oregano
1/8 teaspoon dried rosemary, crushed
1/8 teaspoon rubbed sage

Steps:

  • In a large bowl, combine 1-1/2 cups flour, sugar, yeast, salt and herbs. In a saucepan, heat the milk, water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes. , Divide dough into thirds. Shape each portion into a 15-in. rope. Place ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Cover; let rise until doubled, about 20 minutes., Bake 375° for 25-30 minutes or until golden brown. Brush with melted butter. Combine herbs; sprinkle over bread. Remove from pan to a wire rack to cool.

Number Of Ingredients 8

4 cups all-purpose flour
1 1/4-ounce packet instant yeast (2 1/4 teaspoons)
7 tablespoons extra-virgin olive oil, plus more for your hands
1 tablespoon honey
1 tablespoon kosher salt
Cooking spray
Assorted sliced vegetables and fresh herbs, for topping
Flaky salt, for sprinkling

Steps:

  • Combine 1 1/2 cups flour with 1 cup room-temperature water and 1/4 teaspoon yeast in a medium bowl. Stir to make a shaggy dough, making sure there are no dry pockets of flour or yeast. Cover with plastic wrap and let rise at room temperature until there are large air bubbles on the surface and the dough has risen, about 4 hours.
  • Combine 3/4 cup warm water with 3 tablespoons olive oil and the honey in a liquid measuring cup; stir to dissolve the honey. Combine the remaining 2 1/2 cups flour, 2 teaspoons yeast and the kosher salt in a large bowl; stir to combine and make a well in the center. Pour the honey mixture into the well. Add the risen dough mixture and stir until combined. It will be very stretchy, but continue stirring until a shaggy dough forms, making sure there are no dry pockets of flour or yeast. Cover with plastic wrap and let rise at room temperature until more than doubled in size and there are air bubbles on the surface, 1 to 2 hours.
  • Coat a rimmed baking sheet with cooking spray, then pour 3 tablespoons olive oil in the middle. Oil your hands, then run your hands down the inside of the bowl and remove the dough (it will deflate). Transfer the dough to the baking sheet and turn to coat in the oil. Shape the dough into a 12-inch-long oval, gently tucking the edges under if the dough spreads too much. Cover with plastic wrap and let rise at room temperature until doubled in size and there are air bubbles on the surface, 30 minutes to 1 hour.
  • Preheat the oven to 425˚ F. Uncover the dough, then press with your fingertips to create dimples in the surface. Top with vegetables and herbs in a garden pattern.
  • Drizzle the dough and vegetables with the remaining 1 tablespoon olive oil and gently rub it into the vegetables, pressing them into the dough. Sprinkle with flaky salt. Bake until the bottom of the focaccia has browned, the top is golden and the vegetables are tender, 25 to 30 minutes. Let cool at least 15 minutes on the baking sheet.

4 ¼ cups all-purpose flour ({I used half whole wheat flour})
3 tbsp white sugar
¾ cup warm milk
1 ½ TBSP instant yeast
1 ½ tsp salt
1 tsp dried marjoram
1 tsp dried thyme
1 tsp dried rosemary
1 tsp onion powder
½ cup water
¼ cup butter +2tbsp, melted
1 large egg

Steps:

  • In a small bowl, combine the warm milk and sugar.
  • Then, add in the yeast and let it sit for 5 minutes until the mixture is bubbly and frothy.
  • Next, in a large bowl, combine the salt, all the seasonings, ¼ cup of melted butter, and the water. Stir to combine.
  • Then, add the milk/yeast mixture to the bowl of seasonings.
  • Proceed to mix in the flour 1 cup at a time and mix together well.
  • After that, add in the egg and then mix until the dough pulls away from the sides of the bowl.
  • Now it is time to knead the dough. You can do this using a mixer on medium speed for 7 minutes or by hand until the dough is elastic and smooth.
  • Then, cover and let the dough rest in a warm area for 10 minutes.
  • Next, divide the dough into 3 equal sized portions.
  • Then, roll each piece out into a 30inch long rope and then braid the ropes together.
  • Pinch together the ends of the braided dough to seal them together.
  • Place the bread loaf on a greased baking sheet and cover. Let rest until doubled in size, about 20-40minutes.
  • Remove the top rack from the oven and then bake the bread at 375 F degrees for about 30-35 minutes.
  • During the last 15 minutes of baking, cover the bread with foil to prevent browning.
  • When the bread is finished baking, melt the remaining butter and then brush it over the top of the loaf.
  • Sprinkle with any additional herbs if desired.
  • Then, remove from the baking sheet and let the bread cool on a wire rack. Slice, serve and enjoy!

1 cup warm whole milk (70° to 80°)
1 large egg, room temperature
2 tablespoons butter, softened

1 1/4 cups water
2 tablespoons butter
3 cups white bread flour
2 tablespoons dry milk

HERB GARLIC BREAD

6 large garlic cloves, chopped
1/4 cup flat-leaf parsley
1 tablespoon fresh chopped basil leaves
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil
1 large baguette

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the garlic, parsley, basil, salt and pepper in the bowl of a food processor fitted with the steel blade and process until finely minced. Heat the olive oil in a medium saute pan over medium heat. Add the garlic and parsley mixture and cook for 1 minute, until the garlic is tender but not browned. Remove from the heat and set aside.
  • Slice the baguette lengthwise down the center, but not all the way through, and spoon the garlic mixture into the bread. Place the bread on a sheet pan and bake for 8 minutes. Slice diagonally and serve warm.

Pour over the dry ingredients. Add egg and blend well. Beat on medium speed for 3 minutes. Add enough remaining flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes. Punch dough down. Divide into three equal portions. Shape each into a 28-in. rope. Braid ropes; pinch ends to seal. Tie braid into a knot. Place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 30-35 minutes or until golden brown; cover with foil during the last 15 minutes to prevent overbrowning. Melt remaining butter; brush over bread. Sprinkle with additional herbs if desired. Remove from pan and cool on a wire rack.

8 cups (3/4-inch diced) bread cubes, such as a country boule, crusts removed
4 tablespoons (1/2 stick) unsalted butter
3 ounces pancetta, 1/2-inch diced
2 cups chopped yellow onion (2 onions)
1 1/2 cups chopped celery (2 large stalks)
1 Granny Smith apple, peeled and chopped
1/2 cup medium or dry sherry
2 tablespoons minced fresh rosemary leaves
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh parsley leaves
5 extra-large eggs
2 cups heavy cream
1 cup chicken stock, preferably homemade
2 cups freshly grated Gruyere cheese, lightly packed (8 ounces)

Steps:

  • Preheat the oven to 350 degrees F. Spread the bread cubes in a single layer on a sheet pan and bake for 20 minutes, until lightly browned. Set aside.
  • Meanwhile, heat the butter in a large (12-inch) saute pan over medium-low heat. Add the pancetta, raise the heat to medium, and cook for 5 minutes, until starting to brown. Stir in the onion, celery, and apple and cook over medium heat for 8 to 10 minutes, stirring occasionally, until the vegetables are tender. Stir in the sherry, rosemary, 1 tablespoon salt, and 1 1/2 teaspoons pepper and cook for 5 minutes, until most of the liquid is gone. Off the heat, stir in the parsley.
  • Meanwhile, beat the eggs, cream, chicken stock and 1 1/2 cups of the cheese together in a very large mixing bowl. Add the bread cubes first and then the vegetable mixture, stirring well to combine. Set aside at room temperature for 30 minutes to allow the bread to soak. Stir well and pour into a 2 1/2- to 3-cup gratin dish (13 x 9 x 2 inches). Sprinkle with the remaining 1/2 cup of Gruyere and bake for 45 to 50 minutes, until the top is browned and the custard is set. (Insert a knife in the middle to check.) Serve hot or warm.

1 teaspoon salt

1 (.25 ounce) package active dry yeast
1 ¼ cups warm water
2 tablespoons shortening
3 teaspoons dried parsley
½ teaspoon dried rosemary
¼ teaspoon dried thyme
1 teaspoon margarine, melted

Steps:

  • Combine 2 cups flour, salt, sugar, and yeast in a large bowl. Stir in the water, shortening, parsley, rosemary, and thyme. Use an electric mixer to beat on low speed for 1 minute, scraping bowl frequently. Turn mixer to medium, and beat for an additional 1 minute, scraping bowl frequently. Stir in remaining 1 cup flour; mix until smooth. Scrape batter from sides of bowl. Cover, and let rise in warm place for 35 to 40 minutes.
  • Grease a 9x5 loaf pan. Stir down batter by beating about 25 strokes. Scrape batter into greased pan; pat down with floured hands. Cover pan. Let dough rise in warm place until doubled, about 30 minutes. Do not allow dough to over-rise.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven until the loaf sounds hollow when tapped on the bottom, 40 to 45 minutes. Brush top with margarine. Remove from pan, and cool on wire rack.

1 to 2 garlic cloves, minced
2 teaspoons dried parsley flakes

Steps:
