Tastes like rice pudding with apple pie filling added. For extra decadence, serve with caramel sauce on top!

2 tablespoons butter
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground nutmeg
2 apples - peeled, cored, and finely chopped
1 ½ cups water
¾ cup uncooked short-grain white rice
2 cups milk
⅛ cup brown sugar
1 egg, beaten
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Melt butter in a small skillet over medium heat. Mix in brown sugar, cinnamon, salt, and nutmeg. Add apples; cook and stir until apples have softened, about 10 minutes. Set aside.
  • Bring water and rice to a boil in a medium saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20 minutes.
  • Stir 1 1/2 cups milk into rice mixture; cook until hot, 2 to 3 minutes. Add brown sugar and stir until well combined. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in cooked apples, remaining 1/2 cup milk, and beaten egg. Cook, stirring constantly, until heated through, about 2 minutes. Remove from heat and stir in butter and vanilla extract. Serve warm.

THIS WONDERFUL old recipe was a treat during the Depression. We didn't have dairy topping in those days, so we enjoyed it with real, heavy cream. Mother served this as a special treat for our family. 1 cup cooked long grain rice
1 can (8 ounces) crushed pineapple, drained
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/4 teaspoon vanilla extract
Maraschino cherries and fresh mint, optional

Steps:

  • In a small bowl, combine the rice and pineapple; set aside. In a small bowl, beat cream, sugar and vanilla until soft peaks form. Fold into rice mixture. Cover and chill until serving. Garnish with cherries and mint if desired.

EARL GREY TEA RICE

1 cup Japanese rice
3 teaspoons Earl Grey tea, ground in a blender or spice grinder until it is a powder
1 teaspoon salt
Fresh ground pepper

Steps:

  • Rinse the rice under running water until the water runs clear. Then put it in a small pot with one cup of water and let it soak for thirty minutes. Stir the rice well and turn on the flame to high. let the rice come to a boil and then stir well again turn flame down to the lowest flame possible cover the pot with a tight fitting lid and let cook for 11 minutes. Then move the rice off the heat and let sit, still covered, for five more minutes. Let the rice cool for 10 minutes then stir in the Earl Grey tea, and the salt and pepper. Taste and adjust the seasoning.

2 to 3 sprigs fresh mint
3 cups strong brewed mint tea
Simple Syrup, recipe follows
Fresh lemon juice
2 cups sugar
1 cup water

Steps:

  • Let the mint steep in the brewed tea for 30 minutes. Add the sugar syrup to make it very sweet. Add lemon juice to bring back the tea flavor and to reduce the sweetness. Freeze in an ice cream machine according to manufacturer's instructions.
  • In a saucepan, combine sugar and water. Bring to a boil and simmer until sugar is dissolved, but no color is reached. Remove from the heat and let cool.
