Steps:
- In a spice grinder, pulse sesame seeds 1 or 2 times so that the seeds are partially ground, leaving some whole, taking care they grind quickly.
- Place seeds in a cast iron pan (or sauté pan) on low heat, stirring every minute or so until they become fragrant and lightly toasted, 7-8 minutes.
- Stack, fold and cut nori into small strips then cut into small pieces, or you can also crumble with your hands.
- Add to sesame seeds in a small bowl, along with salt and sugar.
- Add any additional ingredients ( see ideas and get creative!)
- Store in an air tight container for up to 6 months.

FURIKAKE SHRIMP
Steps:
- Butterfly the shrimp with the shells on. Lay parchment paper or foil on a baking sheet (helps with clean up!) and place shrimp, shell side down. Smother with mayonnaise then sprinkle with furikake nori. Broil until shrimp is cooked, 4-7 minutes, depending on the size of the shrimp. Transfer to a serving platter and ENJOY!!!

- Heat oil in a large skillet over medium high heat. Add onions, and saute, stirring often until just tender about 2-3 minutes. Add brussel sprouts, turn heat down to medium, and saute until just tender, about 5 minutes, stirring often. You want them to be wilted, not overly cooked. Season with salt and pepper.
- Make a well in the middle of the pan, and add prawns, and a little drizzle of sesame oil, and continue stirring the shrimp until cook through, about 3-4 minutes. Stir everything together, season with Furikake spice blend, taste, adjust salt if necessary. I usually add a generous pinch more. Divide in bowls and sprinkle with a little more Furikake, and chili flakes (or siracha sauce) and chop sticks.
- To make Furikake Seasoning -mix all ingredients together in a medium bowl. Store in airtight container.
