Steps:
- Combine white sugar, milk, and butter in a large saucepan; bring to boil for 1 minute.
- Remove saucepan from heat and add peanut butter, oats, cocoa, vanilla, and raisins.
- Stir well. Drop by teaspoon onto waxed paper. Let sit one hour.

FUDGE COOKIES
These are a chocolate gooey inside rolled in powder sugar. Very easy to put together. I put the dough in the fridge over night. Then bake the next day!!

Steps:
- Stir cocoa into butter, cool slightly.
- Stir in 1/2 cup flour, sugar, eggs, vanilla, baking soda and salt.
- Sir in remaining flour.
- Cover and refrigerate until firm, about 3 hours or over night.
- Heat oven to 300 degrees. Grease cookie sheets.
- Shape dough into 1-inch balls, roll in powderedsugar. place balls 2-inches apart on cookie sheet.
- Bake 10-12 minutes until tops have crackled appearance and are set.
- remove from cookie sheet and let cool.

FUDGE COOKIES
This is one of the few recipes of my mom's that I have in her own handwriting. My husband was scarfing these one Christmas at my parents's house, so she sent home the recipe. She states this makes 5 dozen cookies, but she made them bigger, so got about 30.

Steps:
- Melt chocolate and butter in a saucepan.
- Remove from heat.
- Add milk and mix well.
- Add flour and salt and mix well.
- Add nuts, remaining chips,and vanilla.
- Drop by 2 tsps or whatever size you want,on greased cookie sheets.
- Bake at 325* for about 12 minutes.
FUDGE COOKIE DELIGHTS
I found these at the Saco Cocoa website, and made them for my last Christmas cookie platter. They were excellent! The time does not include chilling time.

Steps:
- In large mixing bowl cream together the butter, sugar, egg, cocoa, water, almond filling and vanilla.
- In small mixing bowl stir together the flour, Buttermilk Blend, baking soda and salt.
- Slowly add to creamed mixture, beating until well-blended.
- Dough will be sticky.
- Cover and chill at least one hour.
- Roll dough into one-inch balls.
- Roll balls in powdered sugar.
- Preheat oven to 400°F.
- Place the balls 2 inches apart on ungreased cookie sheet.
- Bake 8 to 10 minutes.
- Remove immediately onto cooling rack.
- If desired, sprinkle with additional powdered sugar then let cool completely.

- Let cookie dough stand at room temperature for 5-10 minutes to soften. Press into an ungreased 13x9-in. baking pan. Bake at 350° until golden brown, 14-16 minutes. Cool on a wire rack. , In a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in 1-3/4 cups whipped topping. Spread over crust. , In a large bowl, whisk milk and pudding mixes for 2 minutes. Spread over cream cheese layer. Top with remaining whipped topping. - Grease 8 inch pan.
- Bring to rolling boil: sugar, milk, butter, and salt- stirring constantly.
- Boil 6 minutes, stirring occasionally.
- Remove from heat and stir in till well blended: marshmallow, nuts, and vanilla.
- Blend 2 cups of hot mixture and semi-sweet chips. Stir until smooth. Pour into pan.
- Add milk chocolate chips to remaining hot mixture. Stir until blended and spread evenly over first layer.
- Chill about 4 hours.
