Steps:
- Gather the ingredients.
- Prepare the fresh ginger by peeling it and slicing it thinly to maximize the surface area. This will help you make a very flavorful ginger tea.
- In a 1 1/4-quart pot, add the water and ginger, and bring to a boil for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger.
- Remove it from the heat, strain, and add the lime juice and honey to taste. Enjoy your ginger tea.

HOT SPICED TEA FOR THE HOLIDAYS
This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

SPICY GINGER TEA
This one is an original recipe. If you like spicy teas, you'll like this one. The ginger makes it feel like a kick in the mouth! It's also good for upset or queasy stomach due to the soothing effects of the ginger. Anyway, this recipe is best hot and absolutely terrible chilled. I learned that the hard way... Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

SPICY GINGER TEA WITH LEMONGRASS
Great if you feel a cold or the flu coming on. You can serve Hot or Chill and pour into a tall glass This spicy tea is a great way to begin or end any meal or to enjoy between meals. Given ginger's renowned antinausea and anti-inflammatory properties, the tea is especially comforting when you're traveling by boat, car or airplane. I've also made it without adding the tea.

- Combine the ginger slices and water in a saucepan over high heat. If you’re adding a cinnamon stick, fresh turmeric, or fresh mint, add it now. Bring the mixture to a simmer, then reduce the heat as necessary to maintain a gentle simmer for 5 minutes (for extra-strong ginger flavor, simmer for up to 10 minutes).
- Remove the pot from the heat. Carefully pour the mixture through a mesh sieve into a heat-safe liquid measuring cup, or directly into a mug.
- If desired, serve with a lemon round and/or a drizzle of honey or maple syrup, to taste. Serve hot.
